When you grill it don't move it around let it cook a bit unevenly so you get like a radiation of cooked edges maybe less done inside. You don't want it as if you've boiled the meat. Three - if you're just gonna pop the meat on the tortilla and sprinkle a few onions there and call it a day that's really not a street taco. Do some research into you know how to jazz it up bit cilantro you've got that covered but you can do at least one or two more secret ingredients to make this kick. Hope that helps.
