Been coming to Costa Vida for a little bit under a year. I was reading the other reviews about this location and it blew my mind about what people thought, numerous one star reviews involving terrible customer service in a rude environment. Every time I come into the restaurant, it's extremely busy, but everybody that's working is working extremely efficient and doesn't have attitude at all. I get the chicken nachos or a chicken burrito and it has exquisite amount of taste and flavor and I only pay $10 for a massive portion compare to $10 for a tiny portion at chipotle would definitely recommend this place. I have come here for years, and have always loved it. However, I visited on 5/20/25 and they have shrunk their portions on both the salad and the large queso (maybe other items too, these are just the things I ordered this visit). I am not talking about lighter scoops of ingredients, I am talking the actual containers are smaller and we received significantly less food. They have a choice of beans and toppings. The sauces are good, and the cake is VERY good. The steak was tender and flavorful. Now the bad: I usually have a chicken quesadilla at places that don't have street tacos or chicken mole. It's a difficult thing to mess up. But Costa Vida gave me the skimpiest amount of chicken I have *ever* seen. I ordered the grilled chicken. (They also have raspberry chipotle chicken.) It was pathetic. Barely ANY chicken at all. This was disappointing. There wasn't a lot of cheese, either. The pico de gallo was good, but the guacamole was also a tiny, skimpy, ridiculously small portion. Literally two small bites. In contrast, the chicken quesadilla at Cafe Rio is STUFFED with chicken and cheese. The chicken there is shredded and really delicious. We went to Costa Vida because it's closer to the house. BF was fine with his burrito, but I basically had a tortilla for dinner. I can only finish half a quesadilla at Café Rio. I finished this one, because there was so little filling. Sad. I ordered the nacho supreme a kids meal with a horchata, the enchiladas and a smothered burrito. Very disappointed in the service on this one. They forgot half of my stuff as it was being delivered to a hotel where I am staying. My wife used to be an employee at this restaurant when it first started in Utah and they had a little higher standards. It seems like those standards have fail just a little bit as the company gets older. Most the time the restaurants are usually nice and clean. The delivery service doordash they use the gentleman could not speak English and had no way of understanding or helping me with my problem. Every time I use a doordash service I end up having issues. I went to Costa Vida on Tuesday 8/13/24. There were 2 other people in line in front of me. The guy preparing the food was chatting with us and joking around with us. This is what is missing in most places. This man was happy we were there. Then I got to the register to check out. The guy there couldn't have been more than 20, But he was smiling and friendly too! My meal was around $10.50. Where can you eat for $10.50? It was fresh, and it was good. I love their sweet pork and queso, it's consistently delicious. I have been coming to Costa Vida since it opened up when I was a little girl! This place is so delicious. I always get the sweet pork because thats all that matters here, it's marinated over night and is the best food you will ever put in your mouth, trust me. The workers are always really nice especially the gentlemen at the front of the line when you start to order, they are pretty fun too. Sometimes the line gets long but thats the price you gotta pay for some yummy sweet pork. Only downside to this establishment is that it IS CLOSED ON SUNDAYS. I work about 5 minutes up the road on Lincoln Ave. So when my coworkers came back to work from lunch one day raving about this Mexican place I knew I had to try it. Needless to say I was not disappointed at all! Let's start out by talking about their chips and queso. Can you say delicious? I can say I've literally licked the styrofoam to go carrier clean. It's that good!! They make all their tortillas right there. Next I've had the shredded beef burrito smothered with sweet green chili and sour cream. The sweet green chilli is excellent. I've had both pinto and refried beans in the burrito. The refried bean have just a little bit of spice to them. The quesadilla wasn't as good as the burrito in my opinion. My coworkers are big fans of the salads. Don't forget to grab a Costa Card! You get points back on each purchase that equals cash. It's similar to a rewards gift card. I have no idea what took me so long to try this place, but I am going back - like tomorrow! I have been on a salad for lunch kick. Well after awhile you just can't eat one more chicken caesar salad. So after a run to the outlets in Castle Rock I stopped off at this place before heading to the office. The parking lot (which it shares with other restaurants + a near by Super Target) was packed. Still I got a not too far off spot and headed in. The place is big and has lots of tables for sitting. It is set up like any fast burrito place (e.g. Chipotle, Qdoba...). I ordered the sweet pork salad. They put a fresh tortilla lining the bottom of the tin and then pile on beans, rice (which I omitted), meat, lettuce, cheese and pico. Plus guacamole and tomatillo ranch if you would like (dressing on the side). Can I just say it is one of my new favorite salads? I mean the pork is so yummy out of this world wow I tell you if you eat piggy you must try Costa Vida's! The salad was big and satisfying. The ingredients tasted fresh and the flavors melded together well, all for $7 and some change - Perfect. And friendly smiling faces serving up the goodness too. Always nice :) I only hesitate with giving it that last star since I have only had a salad. Not impressed with service or food today. Went because friend likes it and she ordered our food to go. It was busy. My order was a grilled chicken baja bowl. My entree didn't have any lettuce or pico de gallo sauce, isn't much rice, not sure if there is any cheese because it is a big mess. Friend was rushed through the ordering process and they didn't give her a receipt. Just because they are business doesn't mean they should rush the customer and not prepare the food correctly. Terrible customer service! We live nearby and have given this costa Vida location many chances and each time the customer service is bad. The smaller woman working the cashier is rude , disrespectful and overcharges for every little thing. I have had to pay extra for dressing (for my salad because the small container isn't quite enough, so I ask for a large), salsa, etc. The man working the line asked what I wanted on my salad and didn't listen, so the gal at the end had to reopen the salad to add on cilantro, cojita, and Fresca. She was rude and disgusted I asked for these ingredients. My husband won't go back to this location and I am not too far behind him. Food is always good. Had one of the rudest servers today and after 5 years of coming here with servers knowing the name of myself and my family. The server, Spencer, was one of the rudest employees I've met. Never had an experience like this but she put barely one scoop of sweet pork for each quesadilla. When I asked for a little more she gave attitude to my girlfriend and I. Love the business, love the food, but my god employees like this ruin companies.
