We watched the lone young man as he poured batter onto the round griddle to just the perfect thinness; as he expertly flipped it; as he loaded on plenty of apple compote, plenty of walnuts, and gently squeezed caramel sauce. Then he folded it into a neat rectangle, scooped it into an exactly the same size pan, flipped the whole thing over onto another griddle and left it to heat while he made a crêpe for the person behind us. At exactly the right moment (was he watching the clock? or maybe he's just THAT good!), he flipped it over, slid the crêpe onto a plate, artistically drizzled more caramel sauce on top and then gently shook some powdered sugar over it.
