Chimayo has a special place in my memories because 5 years ago I was proposed to right after eating here. We came back this visit to celebrate. A beautiful fountain right outside the entrance can provide great entertainment for children while waiting for food. :) As with all of Park City, prices are steep. It's easily the most expensive Mexican restaurant I go to. Most entrees are in the $50- $60 price range. Despite the steep prices, Chimayo is a great place to eat. The service is great and the food is quality. The wagyu beef fajitas were easily the best fajitas I've had in my life. Freshly made tortillas with beef cooked perfectly on top of a delicious bed of melty cheese and veggies. The sauce on top was umami central. This was a special menu item, and I highly recommend ordering it!! The scallops were cooked perfectly, the beet salad was refreshing with lovely sugared pecans, and the potato served with the wagyu sirloin was also the best potato I've eaten in my life. The skin was crisp and salted, so I happily ate the whole thing. The bathroom is downstairs and is clean and decorated. It really depends on what scale you use to evaluate high end restaurants when comparing reviews. That is why Chimayo, and all the high end places on Main must be compared to each other, not what you can get near you if you live in or near major cities. For instance, in San Diego area, this place is a 3 star driven primarily for price to food quality and wine list. It is 4 in Park City because they get a lot right, like service and presentation of dishes. The watermelon salad came with sour cucumbers so I manned up and sent it back. It took a while, but apparently the chef agreed and sent out a plate of cucumbers. The fact that I was already 3/4 done the salad, with a pile of cucumbers on the side of my plate, seemed not to matter. The surf and turf came with underwhelming shrimp on top. The potatoes on the side were a little greasy. The elk was very good as was the potato augratin side. Without that dish, this place rates a 3. read more

Tyler was our waiter? Taylor? He was great. I had one of their spicy margaritas upgraded to mescal. Excellent. My wife had the pomegranate margarita, which she liked, but was too sweet for my taste. Came in a strangely tall glass. We split a beet salad for a starter. They served it on separate plates, and the portions were huge. Very tasty. I splurged and got the elk London broil. I was really balking at the $65 price tag, and frankly there wasn't a whole lot of meat there, but it was delicious in every way and, when combined with sides, was quite filling. Our group went for an early dinner (5pm) a couple weeks ago on a Friday. There was no wait, but it is also a less busy time in Park City. As time went on the restaurant filled up. Our waiter was knowledgeable and was well mannered. The restaurant is two levels - street level and a basement. The food was good, but overpriced in my opinion. It's southwestern food with a unique twist. We had the Queso Fundido as an appetizer. It was good, but the cheese was so stringy. I think we were supposed to stir it more (maybe?), but no one told us that. For dinner I had the Ahi Tuna Taco - which was a huge single taco. I did take some of the filling out to eat on its own since the taco was so big to pick up. It was yummy and the sauce was good. Still think it is over priced. Had such a great meal last night at Chimayo This is not your ordinary Mexican restaurant and that is a very good things. They start you off with a delicious bread basket that includes a cilantro creama sauce that was good enough to make you want to lick the bowl. One taste and i knew we were in for a great meal. Got the el trio for an appetizer, the hummus, guacamole and salsa were all outstanding. Next came the corn soup and let me tell you....this was one of the best bowls of soup I've ever had. It was smooth and silky almost velvety if that makes sense. It had such a depth of roasted sweet corn flavor and a nice subtle crunch from the tortilla chip garnish that was on top. We also tried the elk skewers, this is my first time trying elk and I will says it's interesting. Not sure I'm in love with the type of meat elk is more of a chew to it than I prefer. Food (1.5/2): Had ceviche, duck enchilada, elk london broil, and crown roast spare ribs. The ceviche was great, as well as their complimentary bread. Wasn't quite sure if it was because we were hungry waiting or genuinely good. The duck enchilada was amazingly soft and creative--duck with the fried leg and "burrito". Definitely unique and tasty. Likewise, the elk's flavor came out and vegetables complemented the flavor incredibly well without hints of "gamey-ness". Disappointingly, crown ribs were alright. It was melt-in-your-mouth tender but the flavor was rather standard: sweet, with a hint of tanginess. Service/wait-time/cleanliness (1.5/2): Service in general was amazing. Server was very friendly, attentive, and active in ensuring our satisfaction. Wait time however was incredibly slow (had to wait ~45 min for the entrees). Ceviche was quick but this is likely because it requires little-to-no-cooking. I'd give a bit of the benefit of the doubt due to crowd and possibly long cooking preparation. Our server was very on top of it by updating us on how long the food will arrive (granted it kept getting delayed). Place is kept well-cleaned, though a bit too noisy--it does add character though. Price (0.5/1): For the portion and price, it was quite worth it. However, I think it's a tad bit overpriced on some of the dishes. Elk was worth it; ribs was worth it. Chimayo is a beautiful dinning experience in downtown park city, Utah! Fantastic food and drink options across the board there is clearly something for everyone to experience here showing they have been around since the 90's for a good reason. Now, while I thought our server was good and the ambience was top-notch I did feel the place is a little cramped and maybe not the best restraunt in terms of value. Overall I did very much enjoy my experience and definitely recommend going here! Drinks: First the drink list is spectacular! they have a great Malbec and a killer modern-styled Rioja Reserva for reds with St.Suprey being a stellar Sauvignon Blanc option along with the Albariño for whites. The cocktails are well themed and the house margarita is clearly great! But what stole the show for us was the liquid desserts.... My gosh that Chimayo Coffee is ridiculously good, once I order one the whole table got one it was so delicious. Food: Surprisingly one of my favorite dishes was the soup of the night; Chicken Tortilla Soup. The soup was so creamy making it really stand out being possibly the best tasting I've ever had, it's absolutely not your average version so I highly recommend trying it, because this soup is truly on another level. Secondly, the waiter had told me the ribs have been on the menu since 1996 and I see why because they absolutely stole the show as the best Entrée. It was so much food and the whole presentation just makes your eyes open wide haha, I didn't expect it. That chipotle glaze is so great and I only wish the hominy Salpićon had that glaze all over it. Admittedly my Buffalo was served a little rare but had so much flavor and the Cumin-chili pepper sauce is ludicrously good, I wish I could take it home personally. Also the sautéed Green beans were fantastic with the mushrooms, very well done. I think the weakest dishes to me were the steak dishes... (Wagu surf & Turf / Blacked Wagu Sirloin) this did surprise me as the Wagu while perfectly cooked and both accompanied by wonderful sauces just felt overpriced being not as tender or flavorful compared to other steaks I've had at Twisted fern and Blind Dog ect... the sides are great and they clearly are well put together entrées but ultimately there are better options here other than steak. Dessert: The dessert wine list is also amazing and really appreciated that they offer the vintage port options with the Vieira de Sousa 2017 (top vintage 98pts) being delightful and went incredibly good with the flan. I loved their take on the flan, while admittedly being more of a traditionalist I was impressed as the fig worked surprisingly well with the orange Carmel. I did wish there was a little less orange so the flan could shine more but was very happy I ordered it because it disappeared quite quickly! Overall Very Solid restaurant I understand the high ratings just don't go here for a steak... get something unique, see what they specialize in and you'll leave understanding why they have been around awhile as well as the high praise reviews. We put our name on the waitlist for a 2-3 hour wait where the latest we would be sat was 8:30pm, sure no problem. We don't hear anything at 8:30 so we walk back over to see how much longer it would be, the hostess was extremely opinionated and told us that "most people make a reservation for the time they want to eat". Obviously, we just wanted to dine here and were even willing to wait. She then told us we could "make a reservation" for 9:15.... It was now 8:45, so we decided to do that. We went to grab a drink at Alpine Distillery, and then got a call at 8:59 that our table was ready and she would hold it for a minute.. after some discussion with coworkers she said she could hold it for 5-10 minutes and we asked if they could just honor the 9:15 reservation, she said sure. Anyways, on to the food. Everything was absolutely horrible. 3/4 of us didn't eat more than 1/3 of our entrees. We took it home because we don't like food waste. I don't remember a single notable dish that we ordered and we all collectively lied to the server about how everything tasted because it was 10:20pm and none of it was particularly her fault because at this point our time was money and it's time to just move on. We tipped her generously and went off on our ways. How is this a highly recommended place in Park City? The entire experience was so sad except the wine, and that has nothing to even do with the actual restaurant except the fact that they had to stock it and open it.
