Definitely not impressed. Food did not look fresh and would've preferred to dine in at Chipotle. My rating for this so this called Mexican grill would be a solid one ... wont be coming back! read more

I went there specifically for their Chile Relleno Burrito, which sounded delicious. Unfortunately they were out of chile rellenos, black beans and fully half of their soda offerings. Fool me once... read more

Chipotle style fast food. I wish it was not a local restaurant only... This is the best food in the category. Go here every time I pass through the mountaints. I recommend to try any variety of fish. 5/5. read more

This place has pretty damn good fish tacos.... people who work there are really friendly.. plus it's a FUN atmosphere... usually have good music on .... unfortunately every time I've been there I have had only the same thing..... read more

We were hoping for relatively authentic Mexican, but didn't find it here. The food wasn't bad, per se, just weird. The cheese dip for chips tasted like my mom's cream of broccoli soup. Again - not bad, just weird. I went for the steak burrito - totally flavorless. I drowned it in salt and hot sauce to make it worth eating. The fish tacos were average. The beer was cheap (yes - $1.50!), though it seems their practice not to fill it to the top. The dudes working the counter were nice guys, but didn't seem too concerned about keeping the front of the house tidy - there were only two of them. We'll try Jalisco next time - seems more authentic from the outside. read more

I love the food. The burritos and fish tacos are some of the best in the county and beyond. The restaurant is about as clean as you would expect when only two people are working a Sunday afternoon lunch rush. And $1.50 for guac is quite a mark up for just a spoonful. Oh and THE STAFF WAS RUDE AND DISRESPECTFUL. When my party walked in they huffed and puffed and slammed things around. "its gonna be a second" says one of the cooks. After waiting for 10 or so minutes I got a "what do you want". So I ordered and watched him slam the ingredients around and make no effort at even the simplest gestures; such as eye contact. I watched as the other guy went on to ignore the next customers who walked in. I said thanks and he turned his back on me and walked away. Again, great food, WONDERFUL food, but the taste in my mouth as I hurried out the door was not as great. I guess ill have to go to chipotle for my fast-burrito fix. read more

Really good food all around. Particularly tasty burritos. Would recommend getting the green chile. Unfortunately some of the staff seem to act as if the customers are just an inconvenience. In addition to the sometimes moody staff, the burrito sizes can be quite inconsistent. Some of the staff really hook it up, others not so much. All in all really good food but maybe not worth the risk of bad service. read more

Only had the burritos, they're good! Most of the staff is very friendly, but be prepared for a grumpy burrito guy every once in a while. read more

By far the best fish tacos and burritos in Colorado. Good service good people good environment my #1 choice in summit!..

Chipotle like. Came after 7:00, the food is good. I Had shrimp burrito. My wife had fish tacos. Service was ok. it cost $35, but for a mountain town, prices are what you'd expect. read more

The best place to eat in town. Baja tacos are the way to go with a nice cold marg worth your money

Guy with the rat tail is very unhappy with life. The other guys were nice but wow this guy was unprofessional, as soon as he was done serving us he exclaimed he was tripping out and needed a cigarette. He is that type of guy that makes you first throw up a little in your mouth and then want to immediately punch him in the face for making you do so. read more

The Chili Relleno Burrito is quite possible the best Burrtio or any fast-gourmet food I have ever eaten. All the guys that work their hook it up and I always tell them to make it how they would. Perfect meal after a day on the mountain! read more

I have been a seasonal customer for years and have always enjoyed their fish tacos. But today, I was truly disappointed. One can no longer just buy them singularly but must buy 3; and I don't care for left over fish. But I ordered them anyway and figured the dog would have a good meal. The tacos arrived and I was really disappointed to see that one of the pieces of fish was literally 3" long and the others were ~4". Needless to say I had no problem finishing all three. Can no longer recommend to house guests or visitors; really too bad. Will save my fish taco meals for Rubio's (Denver) read more

I will start off by saying I have been to this place a few times and have had different experiences each time. The food is good but unfortunately the service hasn't been great. Today I took my family for their first time and I was embarrassed I picked this place. They got all three of our orders wrong and I believe it was because they were trying to rush us through the line and not listening to what we were saying. (None of us had a special order and its mud season...)The guy putting the dishes together and the girl checking us out were both rude and uninterested. I will give this place a chance when I'm by my self because the food is good but that was the last time I take friends or family. read more

The fish tacos here are delicious! Not impressed with their burritos, though. A little pricey, but worth it.

This place has awesome shrimp tacos and their margaritas are good and strong but come in a normal sized glass filled up only half way. Their queso is pretty disappointing. Sometimes they get your food out to you fast-other times not so much. read more

My husband and two boys went for lunch. We arrived ahead of the lunch crowd, so easily got a table (~11.30am). The guys behind the counter were quite nice and efficient as all get-out. I had the baja fish tacos which were ah-MAZ-ing! The breading was light and airy, and super crispy. There was cabbage and cheese with a sprinkle of cilantro and their house white sauce... which was like The Dude's rug: it really tied the room together. Great flavor all 'round! I had them on flour tortillas, but would get them on corn next time I think. The two boys had cheese quesadillas (pretty big and good-n cheesy), but husband got the not-so-shrimpy baja shrimp burrito, which I think was the table favorite. This thing was huge! and absolutely delicious!! Lightly breaded and fried shrimp were perfectly done and like the fish, the breading was crisp and airy. We said, with mouths full, that we'd absolutely come back here! read more

I read the reviews. It sounds like service could be a little bit hit or miss but you know what? You're in the mountains. Summit County service can be hit or miss everywhere. I had no problem. Everybody was nice enough. My daughter and I got our fish tacos and you know what??? They were great. Two tacos, six bucks or something like that in Summit County? I consider that a real bargain and they tasted great and we will be going back. Cool place. read more

Fresh... and really good! How refreshing! Similat to Chipotle or Qdoba only on the surface. In here you'll find great flavors and a satisfying meal. read more

I really enjoyed the food there the tacos of carnitas is really good! I like how there many options to put on your food it's like chipotle but more better! read more

I come here occasionally and usually have great service, especially when, I think his name is PJ, is working. This time however a shorter stocky guy was taking my order and mumbled everything and acted aggravated when I asked him to repeat himself, which was almost every time he spoke. I brushed it off as a bad day and went to fill my drink, while doing so, I witnessed his next customer interaction. A good looking 30-40 year old woman. He was polite and flirtatious and even spoke loudly and clearly to her. When my burrito was ready he mumbled something about a burrito then stood there holding my burrito without extending his arm, forcing me to reach all the way over the counter to grab it from his hand while he looked of in a direction of something more interesting. I will turn around and walk out if I see him taking orders again. read more

I love coming here because the food is delicious, the baja fish tacos/burrito are a fan favorite for a good reason. Despite the great food, the staff is constantly WAY TOO HIGH. I understand it's in summit county, but c'mon chimayo, step it up. The last 3 times I have come here, the staff has gotten my order wrong. Items that I have ordered are forgotten or the wrong ingredients are added. When a small line builds, the kitchen starts to rush and orders are messed up. Ingredients are often forgotten or added without consent. Beware of ordering a cimichanga because it might forgotten by the oblivious kitchen staff. After my food was forgotten and then haistly handed to me, I still wanted more toppings. So naturally, I asked for jalapeños before leaving the counter. I then received a baseball sized fistful of peppers which I then picked 3/4 off before being able to eat my cimichanga. I like spicy food, but that was just rude. TL;DR Come for the food and not the service. Avoid peak times and/or anytime shortly after 4:20. read more

I LOVE the fish tacos. I am from Baltimore and always make Chimayo's a destination when in Summit County. The best fish tacos I have ever eaten. Their sign outside says best fish tacos in area. Should say best in country. Their white sauce is amazing. Affordable and fresh ingriedents. A must go when in area!! read more

Forget Chipotle or Qdoba, this place has better, fresher food and friendly employees. Not to mention the best part... It's LOCAL :)

We wanted to try something new and different when we passed through Dillon near dinnertime last night. WOW!!! Super experience!! Fresh, Great Food, Fast! I ordered a carnitas burrito and pointed at the veggies I wanted added (grilled red peppers and anaheim peppers and onions), my husband had shrimp tacos. All of the food was fresh, high quality ingrediants, prepared after we ordered. We loved the food, medium and hot salsas both get two thumb up! Wonderful, friendly, personal service, and Thanks SO Much for having cilantro as an option to add - so my husband could get it and I did Not! :-D We will definitely go back if we are in the area! read more

Try the fish, it is very good. All ingredients are delicious and the hot salsa and queso is phenomenal. Would go back and is better than any chain like q doba and chipotle. read more

The Baja fish tacos are worthy of all the reviews - the fish is cooked per order so expect to wait a few minutes. The fresh salsa, cilantro, and jalapenos are awesome. read more

Chili relleno plate was amazing. Chicken chimichanga was delicious. Great service, clean facility, we will be back.

Famous for the fish tacos and for good reason! That was some of the best food I've ever had in Colorado! I can't wait to go back again! I was recommended by the front desk person at our hotel and I am definitely thankful. The staff was great too. Reasonably priced. Worth it! read more

great food and great prices! Andy was great walked me through the process and made me some awesome tacos! i would defiantly recommend chimayo over chipolte or qdoba. there is a great menu with lots of variety. the fish and shrimp tacos are the best i have had in summit county read more

Best fish and shrimp tacos in the area with fast service. I've gone here about 25 times over a 5 month period and it never disappoints.

Really friendly staff and amazing food! What more could you ask for? My husband had the fish tacos and I had the fajita fries. They were both really delicious. Their green chile was amazing. The restaurant was clean and easy to find. 5 stars! read more

This is very similar to a chipotle, but I may actually prefer Chipotle. I was told that the fish tacos were a must try. I have to say you could live your life without trying them and you would be just fine. They were not exactly bad, but not good either. They were well breaded, but were pretty fishy tasting. read more

I'd give it 0 stars if I could, because I didn't even get a chance to try it due to the atrocious customer service. Seems like this is a trend here. Came in for lunch to order for 3 people, one of which has a serious allergy to cayenne. Asked the cook (hope he isn't the manager) if the steak had it and he said to be safe he'd say yes. Ok. How about the chicken then? Tells me there might be like a tablespoon of it in a gallon of seasoning. I again explained it's a serious allergy and if maybe I could see an ingredients list. (This is common to ask and be given when there's actual allergies). He then proceeded to tell me he didn't have anything to show me and if the person couldn't have cilantro or onions we shouldn't even eat there at all. What??? You'd think with the financial impact of COVID they'd be a little more eager to be helpful and want what money came through the door. Instead, he was just incredibly rude. Left and took our service to Chipotle. read more

We were passing by Silverthorne and had a craving for Mexican food. Yelped it and decided to try Chimayo. Never regretted it! It is not much to see once you're inside - you order at the counter and take the food to the table yourself - but it's what's inside and how it tastes what matters. The soup of the day was very hearty and fulfilling and came with some chips and salsa. The beef quesadilla was one of the best I tried anywhere and that's my prime pick at Mexican restaurants so I'm picky when it comes to it. For under $20 we were full and had some of quesadilla to go - made a very nice late night snack later on. Everything tasted very fresh and we'll definitely be back if we're in the area. read more

It was great!! very friendly. The owner was very helpful with our food choices. Great environment and easy to locate. Highly recommend the fish tacos and will be back! read more

This place is awesome. Staff rocks and keeps it interesting and the food is bad a**. Baja tacos are my norm, the chili relleno is unique and awesome, and the other food is just a bonus for your wierd non fish eater. Support local and eat good! read more

Came in on a Wednesday afternoon and the dude behind the counter was moving slowly. Like, really slow. Like, he couldn't handle more than one piece of information at a time. He took my order for the first thing I wanted and walked away...not realizing that this would be faster if he also started on the second and third things I would like to order. Then I looked around and realized, every person working here is completely baked out of their minds. It looked pretty fun and made me miss working in the service industry. Eventually, I got all of the food I wanted. It was pretty tasty. Great salsas and a solid fish burrito. Just stoner-grade service. read more

By far best fish tacos ever. We have to stop here every time we're in the area. Our boys devour the shrimp burritos. The guys here are super friendly and welcoming. Love this place! read more
