Be warned, because they cook all foods to order, the wait can be 15-20minutes. Also, be sure to ask for salsa if you so desire. Loved Chido taco! I was on a long layover in Raleigh for work I was looking up were to eat preferably somewhere cheap. I've been on the search for good birria tacos for the absolute longest. After several failed attempts, I was close to giving up. Luckily, Chido swooped in just in time to save the day. The space is absolutely stunning on the inside. It's bright and colorful, with graffiti art adorning the ceiling walls. There's a spacious patio area and a small bar located in the back with drinks that look so delicious. We went for the quesabirria combo, the esquites, and queso. Thankfully we didn't have to wait three hours for our food like the other overhyped taco spot we ventured out to not too long ago. It was around a ten minute wait and our food was ready for pickup at the window. The quesabirria was a knockout! The meat was so flavorful, tender and tasted amazing. There was just the perfect amount of cheese, cilantro and onion to complement and the consommé was outstanding. I've found it to be watery and soupy at other spots, but Chido's consommé was so flavorful. The queso was delicious and cheesy. The rice and beans were also really tasty along with the esquites. We enjoyed everything we had and wanted to sample some of their single tacos, but our stomachs simply wouldn't allow it we were so full. We are oh so glad we found this awesome Taco/Mexican spot in the Triangle! Firstly, the ambience definitely felt authentic to Mexican cuisine with a bustling open-style kitchen. Now on to the food! It was so bland I had to add spoonfuls of salsa to make it edible. The shrimp ceviche was extremely salty that it overpowered all the other ingredients. Also the avocado wasn't mixed in with the lime juice so it turned brown before I got home which is only about an 8 minute drive. Won't be going back. I've been back since and had the vegetarian tacos and more steak tacos. I love that they have REAL coke and treats for purchase. The guacamole is good and the queso is yummy but expensive. The vegetarian tacos were a bit bland but I wouldn't count them out. I love the opening wall and the back bar. It's clean and comfortable. The tables are really cool and add to the decor but make sure you don't get a wobbly one if you grabbed a glass coke. I think the salsa bar is excellent but wish they had larger cups for salsa for chips. I find it difficult to eat from the tiny cups and would like to be able to dip a chip fully in.
