Their Duck Pho is definitely worth 4 stars, however, I think the restaurant as a whole deserves 3 stars. They have the best pho that I've had in Boulder, so if you stick to that, you'll be very satisfied! The menu is huge and they offer Vietnamese, some Thai and several Chinese influenced dishes. The portions are Huge and the flavors are pretty good overall, but I've not been happy with several of the dishes I've tried here.... so be aware that while they may offer a huge variety, not all of their dishes are authentic. I tried their Thai curry and found it very dense (coconut milk) and sweet without much flavor or kick. If you are a fan of authentic Thai food and Thai curries in general, I'd steer you away from this. If you don;t like the strong flavors that usually accompany thai food, you make like this version. The stuffed chicken legs are unique and a fun appetizer to try, I do Love their 'grilled' spring rolls, which basically come with grilled shirt inside instead of boiled! They offer wine and beer unlike many vietnamese places, so if you're looking for more of the Dinner/dining experience, you may enjoy that. On to the Pho.... not much to say other than: Get the Duck Pho! It's very traditional and the duck is plentiful and delicious! The ambiance is casual and comfortable and the service is quick but lacking the hospitality and friendly factor. Chez Thuy, despite having a not very Vietnamese name, easily has the best Vietnamese food in Boulder, and there isn't anything comparable until one gets to about Broomfield, where there is a bit more ethnic food. I had some takeout from Chez Thuy a few weeks ago and it was amazing, it was even better than a lot of Vietnamese food I had in San Jose, California where there are a bevy of Asian restaurants. I really recommend this restaurant and I would say it's the only Vietnamese restaurant in town that I would consider authentically Asian in flavor. We were driving towards Denver and found this place in boulder,co. We ordered chicken pho, spring rolls and fried rice. All three of us truly loved the flavor of the broth and it was perfectly hot. The chicken was cut in great portions. The fried rice was savory, my niece ate the whole thing. The spring rolls were delicious with the peanut sauce, one of the best sauce I've had. The Best Vietnamese Ever! Chez Thuy is our favorite Vietnamese restaurant. If this place would be in New York or SF Bay area, you'd have to pay double or triple easily and would have difficulty finding a reservation. Their cuisine is French influenced Vietnamese and so gourmet. Chez Thuy was our regular go-to lunch and dining place while we lived in Boulder, CO. We started with the fresh spring rolls and they were fabulous ... especially the peanut sauce that accompanied them. Very nice ambiance for somewhat Americanized vietnamese cuisine and still feel like you are getting authentic version. It caters to the higher end clients. Our party mostly enjoyed the meal. Hubby and I found most dishes a tad sweet, we both left with headaches from the sugar rush. The others loved their dishes. We ordered the sampler appetizer, it came with rice noodles and rice paper to wrap and nuoc cham (dipping sauce). Large beef and meatball pho, vegetable.green curry and halibut fish with lemongrass basil. Total with tip came out around 100$. This place offers all kinds of Vietnamese/Chinese dishes. They offer pho in two sizes. The large is the largest bowl I've ever seen. For $10.95, you get a ton of meat, broth, and noodles. They put out a good product in a good ambiance. This place is great for groups as our party of 12 was seated with no problem at a long table in the middle of the restaurant. There are also a ton of booths and it is clean. There is plenty of parking in the back and everyone seemed to enjoy their meals. The service could be a bit quicker on some of the refills and follow up after you get your food, but that is my only complaint. read more

We hadn't eaten at Chez Thuy for over a year.. My daughter took me out to dinner there a few nights ago.. It was a delicious treat.. I would like to share a few observations with you, though. We ordered their immense bowl of Pho to share and it was more than enough for two.. Just as good as it has always been although the broth could use more flavor.. Many have pointed that out in their reviews.. Personally I'm not particularly down with their whole gradually diversifying Asian Fusion focus and I loved the early days when they were primarily a Vietnamese restaurant.. I realize that in the business world markets change and restaurants must do what they have to in order to remain open and viable. Service was not exactly rude but in order to serve almost half the restaurant our waiter seemed to feel compelled to run around his area at the speed of light, dropping food and other items off at the table abruptly so that soup and other liquids spilled over slightly when roughly placed. We have come here since the year it opened and honestly even though the food is still good I am not certain I will return. I've been eating at Chez Thuy for almost 15 years. My parents live right around the corner so I grew up eating tasty Vietnamese treats. Thuy (the owner and namesake of the restaurant) comes by our table to say hi whenever we are there and her son, Mike is just about the sweetest guy ever. This makes my review a tad biased, because I absolutely love the staff. I understand some of the reviewers opinions on the 'can't be bothered' attitude of some the wait staff but I've eaten at a lot of Vietnamese places and in general, never expect a super-awesome-chatty-helpful staff - if the food is good, I'm cool with an icy waiter. On to the food. I think the quality has gone down somewhat in the past few years. I've had significantly more 'meh' meals than 'OMG' meals since they remodeled in ... 2009 (?). I do however, know what to order and what will always be tasty. I don't eat pho here - I'd rather head to Federal to get my soup on. I do love their combination soup though - egg noodles, big huge veggies, a stuffed duck leg, wontons and cured pork in a clear broth. The grilled meat appetizer (basically make your own spring roll with delicious grilled meat) is killer, especially the lamb. Jalapeno calamari, tofu with tomatoes, lettuce wrap appetizer and five spice chicken are all solid choices. Pork fried rice is my dad's go to meal and the pork egg rolls are always fantastic - they serve them with lettuce, sprouts, mint, basil, cucumber...yum. I love Chez Thuy because I've been eating here for so long and have a soft spot for the staff - I know I can get a yummy meal here for a pretty good price and take a stroll down memory lane. Let me just start out by saying I'm from California where there are tons of Vietnamese and Asian restaurants to choose from and going to Colorado for business made it a little difficult to find Vietnamese/Asian restaurants... With that said, I was out in Colorado for business and with the thunder storms coming, it made me crave Pho. So I Yelped to see if there were any Vietnamese restaurants and I came across Chez Thuy! I walked in and was immediately greeted and sat at a booth. It was pretty packed for a Thursday evening. Although, I found it strange that they set up a row of tables in the middle of booths. It definitely made it hard for the servers to walk around to get to each table. I ordered a Thai Iced Tea (a little too sweet for my taste) and I ordered their egg rolls to start. OMG their egg rolls were delicious!! So crispy and HOT! I forgot that they just came out of the fryer and burned my mouth, ouch! oh well, none of the less, it was tasty! I also ordered Pho Tai. The pho was really good, but it tasted like it was missing something.. perhaps MSG?? That's probably a good thing that there wasn't any MSG present, I just added tons of lime, sriracha and plum sauce. Also the meat was cut a little too thick for my taste. But other than those two things, I can't complain. Also, Chez Thuy does not just have Vietnamese food. They also have a bit of Korean and Chinese mixed in (if Vietnamese is not your flavor). I love this place! As a vegetarian I'm used to having limited options when it comes to dining out, but not at Chez Thuy. I've been trying to eat my way through the vegetarian menu and every dish I've tried so far has been delicious. The portions are also huge, I easily get 2-3 meals out of each dish. The service is fast - I'll usually order 1 or 2 dishes for takeout, it's never taken more than 20-25 minutes. I highly suggest the Pad Thai, Tofu Basil Curry, and the Vegetarian Delight, though I don't think you could go wrong with anything from here. This is one of my favorite Asian restaurants in Boulder. The food is consistently tasty and plentiful. I've tried many of the vegetarian dishes and have liked them all. The soups and appetizers are wonderful. Thuy, the Vietnamese woman owner, works there most nights and she keeps the system flowing. Service is efficient and friendly. I like that the place is large, the booths fit six easily, and there's enough room between tables that you don't feel crowded. I took my friends who are visiting from London as I could recall that this place was pretty good. However, last night, the food and the service was horrible. I ordered chow fun dish and the word chow fun is a specific type of flour noodles and they made it with rice noodles that you would use for pad thai. They forgot to bring our spring rolls, they wouldn't bring monkey dishes for the fish sauce and expected the 3 of us to share a small bowl, they didn't bus our tables during the whole dinner. It was not worth my $75 to take my friends out to special dinner. read more
