Great atmosphere, you can tell it's been here a long time... busy, also a good sign. Always heard good things... finally came! We got shrimp spring rolls to share that were delicious. I had the Black Bean Hot Pot with chicken and it was oh so tasty!!! I could eat it every day! My husband got the Three Way Bacon which he really liked. And my Aunt got the Basil Curry with tofu and veggies and it was delicious also. It would be hard to believe anything here wouldn't be, honestly, after how good my Hot Pot was, ha! Lunch - Best BUN ever! Grilled Vietnamese Pork Sausage Bowl with egg roll. We have eaten a lot of BUN over the years as we travel all over the US -but not as yummy as this. Fresh greens instead of shredded lettuce and not sure why but the fish sauce added a little more yummy to it. The egg roll was unique as well. Would definitely eat here again. read more

I found what clearly looked like a strand of hair in my pho. When I first brought it up, the lady who was serving me initially denied it. After taking it to the front to check, the man there acknowledged that it was hair, but still insisted that it could have come from me rather than the restaurant. They offered to remake the dish, but I had already eaten enough and was no longer interested. When I asked about a refund, the man at the front said that because I had already eaten about half, they could not offer one. What really bothered me was his response -- he said that if I could throw it up right now, then they would refund me. I found that comment extremely disrespectful and unprofessional. I understand that accidents can happen, but the way this situation was handled was unacceptable. The lack of accountability and the dismissive attitude made the experience much worse. read more

I hate to leave Chez Thuy a bad review because it holds nostalgia for me in we used to go here 20 yrs ago. Found myself in Boulder and thought let's go! Well upon entry the place is old and not well kept. We sit at a booth and order spring rolls and Vietnamese egg rolls and both were good. Next my guest got the pad Thai with chicken and I got the beef noodle bowl. The chicken on Pad Thai was so rubbery and dry. When I got my beef bowl I tried to cut the meat and although thin it was hard to slice I had to pick up with my hands and piece and it was like jerky. Probably the worst green curry I've had, very bland. Menu seems to be trying to cover way too much territory. Service was abrupt.

This restaurant seems to be fairly busy most of the time, so we decided to give it a try since we were in the area. Stopped by for dinner on a fairly busy Friday evening. I got the Five-Spice Duck, which came with two 1/4 portions of duck on top of a bed of Vietnamese slaw. I must say I am fairly disappointed in the dish itself. The duck is overpowered with a very very sweet coating, which isn't usual for a Vietnamese or Chinese duck recipe. The Vietnamese coleslaw was fresh and good, but the fish sauce with it was not as flavorful as fish sauce should be. IMO, it is over priced as well, at $24.99 for the entree. "Fantastic food, very generous portions, so-so service" We went there with four adults and four children and we ordered food which was outstanding: * Chicken Pho with noodles and veggie (x2) - Medium sized: It was outstanding, fresh, and it was a HUGE portion for one (me and my niece ordered this and while she is 6 she loved her food). * Beef Pho: My brother-in-law loved his food * Fish cakes: It comes with noodles and three cakes. I wish they would have told us it came with noodles so we wouldn't have ordered extra noodles for our Pho (service was so-so) * Beef satay: Two kids ordered that and the beef was super soft and they enjoyed it. * Grilled chicken on the cabbage (cole slaw): My wife enjoyed it but it was a huge dish for her. She was satisfied. All in all I will tell you that this place has a great atmosphere, awesome food (both taste and portion size), but their staff needs a lesson in how to be more courteous and welcoming. read more

Zero stars. Similar to previous reviews, Chez Thuy used to be our go-to since 2000. We recently ordered takeout for a family of 4. Even the most classic dishes's flavors were ruined - veggie pad Thai (tasteless, why is it red?), spring rolls (tasteless with only lettuce, noodles and tofu ), egg rolls (not eggroll wrappers, but rice wraps that were fried). The wonton soup was essentially pho broth with wontons; not the classic wonton soup taste. We called to give feedback, and were met with no response or concern from the employee who answered. We've been coming here for 20+ years and think it's as good as it's ever been. This time we started with chicken lettuce wraps, which were delicious. The sauce tasted like it had some Chinese mustard which gave it a nice spice and additional flavor profile. Great sized portion! For the main course we had our favorite, Bún, Vietnamese noodle bowls. The shrimp and chicken are always so tasty and grilled to perfection, while the egg rolls are a perfect accompaniment. Always love seeing Mike and his staff. I've been going to Chez Thuy for decades and always loved it! It was my favorite Asian restaurant in Boulder and my go-to for eating in and taking out. But we got some takeout yesterday and it was extremely disappointing. I heard the quality went downhill since Thuy retired, but hadn't been in a while. My Chef's Red Curry was completely tasteless. Not even "one pepper's" worth of heat. No taste at all, especially for a curry which is usually packed with flavor and nuance. The sauce was watery. The noodles were mushy. And it was hard to find but a few pieces of seafood in there. My friend's Chef's Chicken Delight was also flavorless. I didn't try enough to comment further. I was beginning to get worried I was getting COVID and that I couldn't taste. Not so. The cream cheese in the fried wontons tasted weird. Like maybe it was going bad? And the Chicken Fried Egg Rolls also had very little flavor, but I'll write that off to the fact that I always got the pork variety, not chicken. I really hope they can get back to the quality I've come to rely on since the early 1990s. I'll go back to get some pho as it was the best pho in town. It's alright, just not what I expected. Passed by this place many times, until I saw a post on Crazy Hungry Asians of CO yesterday. Somebody tried the spicy oxtail soup, so I thought I'd give it a try too, seeing today is a cold day and it snowed a couple days ago. So first time here. Very busy at 5:40pm. As far as I saw, only two servers tonight. Wait about 10 minutes to be seated, then 20 minutes for my order to be taken, then about 20 minutes for it to come out. So I don't recommend coming when you're hangry, or starving... Or if you need to be somewhere in a timely manner. Ordered the Thuy's Spicy Beef and Oxtail Soup (bun bo cay). I've never had it before, but it didn't live up to my expectations. Noodles a bit broken. The broth smelled and tasted similar to the broth in the canned chicken noodle soup, not sure if that's how it supposed to taste or if they just ran out of the normal stuff and had to sub it with something. I guess I was also expecting a broth similar to bun bo hue in taste and color (brown-red vs yellow). Broth was not spicy at all either. Beef shank meat was tender enough, the single oxtail could be better cut like at the joint so that it could be more easily eaten. Comes with the normal pho veggies like bean sprout, basil, jalapeno, and lime. One size, probably their medium and filling enough. Overall, it tasted alright just not what I thought it would be. There was a line of people waiting to be sat when I was leaving at 7pm. Very little parking at the front, but if you drive past, there is some more behind the building. read more

Never ever come here on a holiday. They were completely slammed, yet continuing to seat folk. Not nearly enough staff. They had one server, one seater, one table cleaner, one bartender, and unknown cooks. That's it. We got up and left, and the one waiter looked grateful. I used to eat here a lot back in the day and after reading some of the recent negative reviews I wasn't sure if I wanted to attempt it again. But the family came here for dinner last week and we all loved our choices. Hubby got the Bun bowl with all the meats and egg rolls, I got the medium pho and kiddo got the vegetarian egg roll bowl. All 3 are traditional Vietnamese dishes and all 3 were very very good and generously plated. When I read about people ordering lo mein and sweet and sour dishes i think that they would enjoy their meals more if they tried Vietnamese cuisine at a Vietnamese restaurant instead of Chinese choices, although Asian fusion restaurants can be great. Our menu was: Appetizers: Vegetarian Vietnamese egg rolls Fried wonton Entrees Beef Lo Mein Beef Lo Mein Pad Thai Beef Chow Fun The food was excellent; temperature was perfect, spice levels were great. Also, not sure which dish this came with, but we were given a container of a soup (had chili flakes, accompanied with bean sprouts and other veggies), anyway, this soup was so good. I could shower in that broth. Everything was excellent, but hands down favorite thing on my plate was the vegetarian egg rolls! One of my favorite places in Boulder and the place we tend to fall back on when we decide to eat out. They have a huge menu of quality dishes that are particularly flavorful and, though you can probably get them made spicy, the baseline temperature is mild. The portion sizes and service are excellent despite the fact that they are often very busy. The curry dishes and pho are my personal favorites, but the menu is so big, there is still a lot for me to try. The thing that really makes this place stand out aside from the delicious food is that the vegetarian dishes are actually priced accordingly and are cheaper than meat dishes. In recent times, this restaurant has become a hit or miss with quality. I come to get their noodle bowl with pork and I'm pretty consistent with that order because it's always been wonderful however two out of three visits in the last three months proves that they are not consistent in their cooking of this dish. Perhaps they have different chefs. Regardless, the pork can be very succulent, or it can be dry and flavorless and the bowls have a tendency to come cold in that case therefore, I am forced to give them a three star rating out of five. the service however, has improved greatly. This 5-star rating is for one item and one item only: the Pork Vietnamese Egg Rolls. These are the best egg rolls you will ever have, and that's a personal guarantee. Don't get me wrong, they have other good things on the menu (they make very good pho, and I'm quite fond of the salad-style noodle bowls as well). Other things are hit-and-miss, but if you stick to the Vietnamese/Chinese cuisine dishes, you will probably be pretty happy. The "Bird's Nest" is another good option. Most of the poor reviews of this place are people ordering Phad Thai and Panang Curry. Those are Thai dishes folks! Don't go to a Vietnamese restaurant and order a Thai dish! Honestly, they probably shouldn't even offer those things - this is definitely a case of less is more. Their menu is the length of a Ken Follett novel, and clearly they don't make it all well, so they could use some fat trimming. Also, don't expect world-class service here. Some of the staff are friendly, some have worked here for 20+ years (no joke) and are clearly burned out. My dad likes complaining, and he can usually find something to gripe about when we go here, but that never stops us. Bottom line: the pork egg-rolls alone earn 6 stars from me. We didn't come her for pho, we didn't come here for pad thai, we came here for the La lot which is some of the best I've ever had. Meat skewers in betel leaf with lemongrass and spices. I thought my friend was crazy when he told me we had to go out of our way to come here. We sure did, and it was absolutely delicious. On a saturday for lunch the place was decently busy but you could just walk in. We walked in, sat down, ordered La lot and some summer rolls. Ten minutes later our food was out and delicious. The La lot was some of the best I've ever had. It was smokey, sweet and a little bit spicy. Paired with the noodles that they give you and it was one of my ultimate dishes. We also had summer rolls which were really solid and fresh. This is a great little spot, they are for sure doing something right. read more

Chez Thuy has an extensive pan-Asian menu with an emphasis on Vietnamese cuisine. Even from the parking lot, I could smell the aroma of pho broth. Service wasn't great and the table I sat wasn't the cleanest, but the food was surprisingly good. I ordered the pan-fried salmon with lemongrass sauce on eggplant. The sauce had a great balance of sweet, sour, and savory, and the eggplant and fish were cooked perfectly. The portion was huge and heated well as leftovers. There doesn't seem to be many Asian restaurants in Boulder, so I would definitely check Chez Thuy out if you appreciate good food and don't mind a mediocre dining experience. read more
