I would give them a solid 4.5 can't give them the straight 5-stars yet as I didn't get the moist brisket I'm accustomed of eating. I forgot to ask for it! I just don't see why folks don't want to eat the juicy, moist, fatty portions of the brisket!?! That's is the best part...but next time I will remember to ask to get those pieces. Now the regular brisket it was necessarily dry...but it just wasn't the fatty lusciousness I'm use to eating. When you walk in the people behind the counter were really nice and actually SPOKE! Now being from East Texas that's what I'm use to and miss about people. Living in the DMV area now these folks can't be really standoffish and that's why I can't wait to go back soon...but I digress. I really wanted to try the turkey but it was already sold out by the time I made it there. So make sure you come early to try it. I did wish they offered chicken because that would have been a great addition to my meal. My two sides were potato salad and coleslaw. Both of which I really don't like. This place is delicious! I stepped inside first to take a picture so I could decide what I wanted from my car without holding up the line. While I was sitting there looking things over, a very nice man even came up to my window and brought me a menu. I went through the drive-thru expecting a bit of a wait since there were four cars ahead of me, but I had my food in hand in under 15 minutes. Everyone was incredibly polite and friendly the whole time. The photos don't come close to doing the flavor justice--I only remembered to take one halfway through eating. I ordered the Carter Special with jalapeño cheddar sausage, chopped beef, pickles, onions, and white bread. My wife & I went to Carters today in Longview for lunch, big mistake. First off I ordered a slice beef sandwich, told the lady I wanted moist meat not lean, of course it was full of lean meat. The brisket had no taste at all, my wife got a rib plate. She ordered ribs with 2 sides, instead she got all ribs, no sides at all. This is the first bbq restaurant we've been in that you actually had to pay extra for pickles, was also charged for a cup of water. We will not be going back to Carters again read more

Every year when we visit family living living in Longview, Texas we have to stop and eat with the locals at Carter's Bar-B-Que. This is always a fun treat for us to eat real East Texas country Bar-B-Que. We know during the lunch hour there will be a line of rednecks and working folk but the food is worth it. I usually have the Carter's Special and my wife normally gets a Brisket Sandwich. We never leave with an empty stomach and can't wait til our next family vacation to Longview, Texas. read more

We are new to the area and headed to the mall when drove past Carter's. It was around lunch time and the drive up line was out to the street. We figured it must be good so when we finished shopping we stopped in for lunch. My husband had the ribs which literally slid off the bone and he said were VERY good! I had the Boudin which I have never had before. It was ok but a different type of sausage than what I had in mind. The potato salad was also tasty. Overall we will return. read more

In my opinion, one of the better barbecue spots in Longview. I like the Cárter Special.

We have eaten here a couple of times now. The meats are what we love here....not really the sides so much. The ribs are well cooked, come off the bone easy and have a delicious flavor rubbed on them. The links were tender, seasoned well with a crisp pop when biting them. The Boudin was great also. No sauce needed. Awesome flavor. The potato salad and beans we have had way better. Stopped by Carter's on a visit to Longview and they do a solid job on both their sliced beef sandwiches and their iced tea. Reasonable prices and friendly staff. Atmosphere is quaint with some really great vintage soda pop clocks and signs throughout the restaurant. Lots of Frostie's memorabilia! Only downside? OK barbecue spot in the old Dairy Queen. I had the brisket ribs and Carter special. The brisket was below average dry very little smoky flavor the ribs were tender and OK as far as the ribs go the best was the carters special which basically has chopped brisket beans and sausage all thrown in together had a lot of flavor. Quality and quantity, hickory smoked all the way. All the firewood on the property is beautiful hickory wood. Several cords sitting out front for customers to check out. I'm a Hickory lover and this is some of the best looking wood Iv seen. No rotten logs, no junk. Only the best. Food is on point. I had the three meat plate, Ribs pure awesomeness, Boudain prepared better than average, brisket was lean and tender. Not one complaint from me. When an out of town West Coast kid like myself thinks about good BarBQue... Carters is what I think about. I don't want a bbq joint to feel, look or act like a starbucks. An old gas station with a few people hollering at me from behind the counter is good by me. Country feel? Yes, long community style picnic tables? Yes... one big ole platter called the "Carters Special"? Hell Yes! If a BarBQue joint can toss beans, chopped pork, onions and sausage together in a pile and it still tastes good, you know they are doing something right! My only regret is the degree to which this dish utterly filled me up. I always say, if you need bbq sauce to eat bbq then the meat was not good. This is the case here. Sure the food was filling but the flavor was like eating no spices at all. I had to drown the brisket in their bbq sauce just to eat the brisket. I'm not sure why I stopped there. It was horrible and o will not be going back. On a recent trip to Longview, I asked my client where I could find the best BBQ in town...I was directed to Carter's. If this is the best Longview has to offer, the bar must be set pretty low. Absolutely pedestrian, run-of-the-mill BBQ. I had sausage, sliced beef and ribs. The beef was pretty dry, the sausage pretty much like Hillshire Farms, and the ribs, very plain. Sorry, but true.
