This bakeshop is located on the third floor next to the north food court. I've seen Carlos on TV and heard he was opening a bakery. When I heard a location opened at Mall of America, I had to go try the cake. The shop was full of desserts and treats behind the glass, ready to choose from and take home. There's someone behind the counter that will help you as you're looking at the desserts to put them in box or bags. Ambiance is like in and out, whatever is available is behind the glass. I'll just start with one word: Yikes... I remember when this location opened up and how excited people were! I thought I would give them a try and what an absolute waste of money!! I included pictures but so many things come packaged. It is clear everything is shipped in and not fresh. I decided to try 3 items. The rainbow cake, birthday cake cannoli and a sugar cookie. All items were beautiful and I had high hopes(even with the prepackaging) The cake is nothing special, the flavor was lacking, there was too much frosting and it is served cold, so the frosting was hard. The cannoli had some flavor but was rock hard again because of the refrigeration. The cookie... oh man... the cookie was the absolute worst cookie I have ever had in my life. There was no flavor whatsoever! Not even sweetness! The base tasted like just flour! My boys and I each took a bite and couldn't choke down the rest, we threw it right in the trash! Not as bad as many of these reviews might suggest or at least for us. We came on a weekday afternoon as a late lunch date. No line whatsoever. We tried the rainbow cake with strawberry frosting and a chocolate dipped cannoli. Tucking into the cake, it was nice and moist but still firm, holding it's shape. The frosting has a light strawberry flavor and was not overly sweet and so accented the cake nicely. It was a good sized slice and I only ate half, bringing the rest home to my kids. They loved the bright colors. It came prepackaged so I do wonder how fresh it is though. The cannoli was very good. The shell was dense, crisp, and crunchy. The filling was rich, creamy, and studded with yummy chocolate bits. A very good, classic cannoli. It reminded me of one you can get at Bucas. I think when I come back I will try a variety box of their cannolis. I'm curious to see how their peanut butter one stacks up. I feel like this location seems to get an bad rap. Though I'm the kind of person that doesn't expect exactly the same as the original location at a different location. We went on a weekday and had a number of options and little to no wait. Service was friendly and seemed to know what they were talking about. If you are worried about pre-packaged or shipped in ask before you order which items are fresh or shipped in from their original locations. We got a few different things and the stand out was the cannoli's that we tried! Everything else was mainly ok, but I would get the cannoli from there again! I'm glad that they had this location because I doubt I would get the chance to visit their OG location that was featured on the show. read more

The display at the mall was amazing and neat but I could tell because I have worked for many bakeries before, that the pastries have been sitting for days. I had a tiramisu cake which was dry and the frosting needed more flavoring because all I tasted was milk instead of the mascarpone cheese. This place has some great delicious food to try. We have a scone and it had the perfect crunch and filling to it. The staff is not very engaging so you sometimes need to call them over when you want help. The prices are decent. There is not sitting area so you just need to go to the food court to sit down. I recently visited Minnesota to celebrate a new life milestone achievement. While at the Mall of America, I came across Carlo's Bakery. They had a wonderful assortment of cakes and pastries. I went on a weekday and there was no line or options sold out. What caught my eye was the lobster tail, and I am so glad to have bought one!   Lobster Tail: -An extremely delicious and crisp pastry covered with powdered sugar and overflowing with a smooth vanilla flavored French cream. -I was pleasantly surprised at the flavors! The French cream was light and delectable. Looking at the pastry, you can see the individual layers showcasing the talent of the pastry chef. Importantly, the pastry was not soggy or chewy indicating its freshness.   Of note, a single lobster tail cost $6.25 as of writing this review. Although on the pricier end, the quality of the pastry justifies the cost. Overall, I am happy to have stopped by Carlo's Bakery. Their quality of lobster tail was incredible. Located within the Mall of America, you can get a box to go. While I won't be ordering it on a daily basis, this is the perfect treat for friends and family. Meh. I've been to two other Carlo's Bakery locations: one in Las Vegas and another on a cruise ship. This one just didn't stack up. A lot of the items in the display case seemed sad, dry, and less than fresh. I ordered a lobster tail, which is my favorite Carlo's item. The lobster tail was caked with powdered sugar, which is both messy and kind of gross. The consistency of the cream filling also seemed a bit off. The mall of America coupon book included a coupon to Carlos's bakery so we decided to check it out. My son picked the rainbow cake because of the sprinkles and all the color. Our coupon allowed us to get free cup of coffee. First of all, the cake was delicious! Just the right amount of sweetness and oh so good! My mouth is watering as I reflect on and write about it! They brew lavazza coffee and it was good. There are no seats inside the bakery but there are tables just outside. The bakery is nice and bright with so many options. Full-size cakes, cakes by the slice, donuts, cupcakes, and more. It's on the top level, next to the food court. I recommend you get a meal in the food court and save room for a dessert from Carlos! Never seen the show Chewy cookie and moist cake Color me impressed Several months ago when at MOA, I saw the signage that this place would be opening this fall. Heard someone else comment about it being the Cake Boss. Figured out there was some kind of show about the original location. Still haven't bothered to try and watch any of it. On Yelp talk recently, saw it mentioned that they were opening this Saturday so I was pleasantly surprised to see they were open today. It was the soft opening. The menu is not up yet and they are not printing receipts. Think one of the female stars from the show was there working the line as some of the customers were getting their picture taken with her. I did not partake. Unless your name is Larry David, I am not much of a star worshipper. Saw a sign that Buddy from the show is going to be there for the grand opening this Saturday. He must be the Boss, I guess. Got one M&M cookie and one Oreo cupcake. The cookie was nice and doughy and loaded with M&M's. I prefer donuts over cupcakes, but the cupcake here was not bad at all. Think I liked better than what I had at Georgetown Cupcake which seems to get all the buzz in the cupcake world. Line was short when I got there. Waited maybe like 10 to 15 minutes, and the line was almost non-existent as I was leaving. I imagine that will not be the case at the Grand Opening this Saturday. So I tried the pastries at their Vegas location and it was just okay. Now after trying it again at their MN location my thoughts are the same....still just okay. If I need a cake for a special occasion this won't be my go to spot. The tiramisu cake was okay, but seriously could use a boost. The mascarpone cream filling is good, but the lady fingers on the side are dry. While the ones on the bottom are soaked in coffee it's not enough to impart the true flavor of a tiramisu dessert. So... in a nutshell doesn't taste like I'm eating tiramisu. The yellow cupcake was dry and taste funny, kind of like the pre-packaged cupcakes at Cubs, Target (vs cake found at bakery). I cant place my finger on the taste but it's almost artificial-ish. The swiss buttercream isnt swiss, but is tasty. (Trust me I make swiss buttercream often). That said I am happy with the $2.25 price tag being so many bakeries charge at least $3 (which I find pricey). All in all is it worth trying once......sure. However, I don't see myself being a frequent visitor. *Side Note: I really wish they sold fancy Italian butter cookies (by the pound). Like others here, I am also a fan and wanted to try some tasty treats. I walked out while in line because of the rude employees behind the counter. One woman in particular was extremely blunt and mean to customers. I walked away and two other customers that were waiting behind me did too. I didn't order anything because we saw how mean she was to my coworker in front of me. I read someone else's review below me, and they also must have experienced the same woman. I wish I could try your bakery but I refuse to be treated like that. I hope you look into this because just those few minutes I was in line, you lost 3 customers. As a fan of the show and avid sweets connoisseur, I had high expectations for the beautifully prepared treats this place had to offer. Sadly, this place did not live up to my expectations! I ordered several things from the menu: Cookies and cream cake slice, peanut butter cookie, salted caramel lobster claw, fudge brownie, and vanilla cupcake. The only thing I ate in it's entirety was the cookie. I feel like that says something about the product. The cake frosting tasted like shortening and I scraped most of it off. The cake was good however. The lobster claw had WAY too much filling and not enough dough. I was expecting it to be flaky, sort of like a croissant, NOT!!! The fudge brownie tasted like it had been in the display for a while, the outsides were crunchy and the fudge tasted artificial. And the fudge on the vanilla cupcake tasted the same. extreme disappointment. And the price of these things, not worth it. I paid almost $25 for those pastries to not even satisfy my sweet tooth. Today I went there. Don't know why the "italian" theme if they only have cannoli, and then just regular common desserts. I ordered a piece of coffee cake. I came home all excited, and... It was so dry and hard, the plastic fork provided snapped and after doing some demolition, I tried it, and it really destroyed my palate. It was hard as gravel. Probably a couple weeks old. Tried this place , AGAIN because my youngest loves watching the Cake Boss. Heavy set girl with some missing teeth said "No" when I asked for a cup of cannoli cream and chocolate chips on top. Some skinny broad with tattoos and was short came over. I told her my son does not eat gluten, so could he have a cup of the cream and chocolate? " No "...I asked " why not?" Full disclosure, I've been to the original Carlos bakery in New Jersey. Now to get down to business, I actually like this place. Maybe it's my love for Carlos bakery and buddy but I think he did a good job trying to duplicate the original Carlos bakery. No it wasn't a homerun but at the same time I did step in there and think this is great, I'm going to order a lot of pastries. Now here's where this review gets interesting, there wasn't a lot of pastries. At first I was mad and got real negative about it but then I thought the end of the day maybe this place really got hit hard with a lot of people wanted to get some of the delicious buddy pastries. That's probably what happened. I was very disappointed not to get a cannoli, but my daughter and I got a piece of carrot cake and we were not disappointed. Got a tres leches cake slice and a birthday cake here. The cakes were moderately prized. We went to the store around the closing time. The tres leches was almost coming apart. It tasted good nonetheless. We also bought a birthday cake. Just the right amount of sugar. The place has waiting time. So be prepared to wait in the queue for a bit especially when you have undecided customers. The store could have multiple people serving customers instead of one person trying to handle all the customers. Would recommend visiting if you have time in your hands. Took my kiddos to Nickelodeon Universe and decided to stop by this famous bakery. I was hesitant because of all the negative reviews. But walked right by, so hubby and I decided to grab a couple of treats for dessert. I am so glad we did. We received friendly, helpful, quick service from a couple of ladies. We had a cannoli, chocolate eclair and a salted caramel lobster tail. All was so good. But the winner is that crispy decadent lobster tail pastry. So thankful it wasn't hidden in the food court. There were three people in line on a Sunday afternoon. Score! I got in line pronto only to be stopped and said I had to wait for my turn. My turn for what? My order. There was an order taker and she wrote my wants on a note pad and then handed it to another employee who gathered my goodies. Then another employee wrapped it up and yet another person rung me up. Yes, that happened. Back it up to the order. There were no prices nor signs showing what each item was. I looked like an idiot pointing to "this" and "one of these" and so on. I also purchased a reusable $2.95 bag because I'm going green and paid exactly $19 for my items. Taste Test: Everything was very mediocre. The rainbow cake was rather dry and crumby with extra sugary sweet frosting. The Neapolitan cake was delish as the cream wasn't overly sweet but instead of flaky crust, it tastes like crackers. The cannoli was good, I enjoyed it thoroughly and the cream wasn't too sweet either. I was rather disappointed that they didn't have anything fruity like the goodies I purchased in Vegas.
