Edelweiss is easily my favorite spot in the area. There's almost always a line on weekends, but it's totally worth it and moves fast so you're not waiting long. Everything looks so good it's hard not to over order. They have a really great mix of sweet and savory options. Pastries, donuts, cakes, sandwiches, and more. The quiche is one of my go-to items and the breakfast pastries are always so good. They also have homemade granola that is to die for. Coffee and matcha are consistently great also. I love their seasonal fresh orange juice but it is a little pricey. The space itself is super cute and nicely decorated with plenty of seating, so it's a great place to sit and actually enjoy your food. I also love that they're open in the evening for wine and small plates. Makes it such a fun and unique spot for the area. Such a great local spot that does it all really well. Best kept secret in Minnesota. Shakopee should come here instead of visit the main bakery in Shakopee. I've been here lots of times. The donuts are top notch as well as the breakfast and lunch items. Fantastic. Stopped in for some breakfast sandwiches and the croissant was delicious. The sausage patty was good, but very thin. I got cheddar cheese on mine and could barely tell it was there. Wish the cheese was thicker. Eggs were good but almost overpowering. Lots of egg. But, all that considered, it still tasted amazing. We got a cinnamon roll. Again, fantastic! I wish they would've offered to heat it up though. Was weird eating a room temp cinnamon roll. Service was great. Employees seemed happy! The vibes of the restaurant were nice too. Very clean and warm. Pricing was a bit much. But hey, everything is now-a-days I guess . We got the take and bake carmel rolls and they were (deep breath) 22 DOLLARS + TAX! This place is charming and makes a delicious breakfast sandwich! They take flaky and crisp croissants and put two eggs, sausage, ham, or bacon, and cheese on it to make a yummy and filling combo. We tried the maple bacon on one and the sausage on the other, both were great and we will definitely be getting them again. The service was fast, food was ready fast, and this place has a surprising amount of seating- that isn't crowded and is comfortable. On a Sunday morning before the after church rush it was busy but we easily found a table for two. The donuts were meh, we had glazed and a glazed dirt and worms, both were 6/10- nothing special. Came here on a Sunday morning, and even though it was packed, we managed to get spots by the window. The line to order moved relatively quickly, but it took about ten minutes for my Lavender Matcha Latte to be ready. I also got a Chocolate French Cruller and Plain Croissant. I wish the croissant was flakier, but the cruller was great. We also realized while eating that they charged us for something we didn't order, but they were more than happy to fix the error for us. Hadn't been before and went to pick up some donuts for the neighbors. It's a really cute space and their cafe menu looks pretty good. The staff and everyone else in the cafe was super friendly and it was a great experience. The donuts themselves were pretty disappointing, though. Standard cake donuts but not quite on the level as the several other donut shops in the area. I'd definitely go to Bogarts or YoYo if you're in SE, but Cardigan is the leader by far. I want to come back to try their sandwiches so might try it out as a remote work spot one day. Probably won't be back for their pastries, though. read more

While visiting my friend in Prior Lake, I found out about their Sunday tradition to get donuts from Edelweiss Bakery. Located right in the charming town, the bakery offers a variety of breakfast, lunch, and dessert options, including donuts, breakfast sandwiches, cakes, sandwiches, salads, etc. Being Sunday morning, it was quite busy but the service is helpful and tries to keep the line moving. We grabbed 3 donuts which included a chocolate with sprinkles, apple fritter, glazed, and a maple, as well as a croissant. The donuts were a great morning treat, and all of the desserts looked absolutely delicious. The lunch menu also sounded great which I would love to try during my next visit. We've gone here a handful of times and it NEVER disappoints. We first tried the caramel rolls, then the hot cocoa bombs & take-home sugar cookie decorating kits during COVID, and have continuously gone back since for their various de-licious pastries and coffee. I love the self-serve coffee pumps (the Texas Pecan medium roast is absolute ) ! Everybody we've dealt with has been so nice and hard working, and the shop & seating area is so great, it almost makes me feel like I've been transported many miles away to a much more quiet, small town, than I'm generally used to. Unfortunately I haven't been here personally but saw a vid where a guy went to purchase 40 doughnuts to give out to homeless people and the owner ended up giving that, plus another box, for free to support this guy josh doing a nice thing. I barely ate the sandwich as it was just okay. They also charge for a refill on coffee (just so you know. They recently opened as a wine bar at night and I finally stopped in on Friday night! The caramel rolls are the best!!! We love this little bakery. Too many tasty options and pastries. Last year we preordered a cookie kit for at home which was so much fun, and the cookies were delicious. They also do donut kits and other fun things. The yearly flavored hot cocoa bombs are a hit too. Edelweiss also just opened up a wine bar in the evenings which is super awesome to have close by. They have all wonderful offerings a cozy bakery should and the most beautiful display case of all of their sugary goodness. We scratched the surface with a maple long John (the maple was so so good and the donut a perfect density, soft and flavorful) and a lemon danish which had the perfect lemony zest and crust to filling ratio. I am so Thankful for this bakery. I'm a sucker for boulangerie's! I have found a bakery that sells amazing french pastries as well as american donuts, cookies, bars, etc. They also sell coffee drinks, assorted breads and breakfast sandwiches. The baked goods are artfully arranged and just a pleasure to look at, and the their taste equals or exceeds their alluring appearance. Most baked goods have become dry and less flavorful. Not here. Edelweiss is a hidden gem. It's one of my favorite breakfast spots south of the Twin Cities, and has some of the best doughnuts in the state of Minnesota. Their Boston cream doughnuts are the best I've ever had anywhere -- so fresh, and with all natural ingredients, nothing artificial. Their coffee is excellent, and their breakfast sandwiches are superb. These come with a little side of their granola, which is also very good and a cool idea for a breakfast side. They do a brisk business in fancy desserts, which are in the left side of their case. Sooooo very worth the calories! Need a pie to bring to a Thanksgiving get-together? Their bourbon pecan pie is wonderful. My only bone to pick is that their apple desserts and doughnuts don't quite excel to the same degree as everything else. They slice their apples thickly, so the fruit isn't always cooked through. The service is very good. Ambiance is bright and sunny due to their windows, and there's a charming fireplace in the back.
