This was great cheesecake! I have been waiting to make it into the store and was not disappointed. There were several flavors to pick from and you could get from a small tart size, a slice, up to a whole cake. Plenty of ways to try a bunch or stick with what you like. I got the turtle cheesecake and it was so good. Great amount of Carmel, chocolate, and nuts on a perfect slice of cheesecake. The owner and her brother in law were in and they were so nice! I love supporting women owned businesses in the twin cities and somehow I got connected with Vanessa sole owner of cheesecake funk I was able to try her mini cheesecake collection and a regular size cheesecake Let me just say that the mini cheesecakes especially the turtle cheesecake and the white chocolate raspberry were soo delicious I won't hesitate to order these again - they were all good but these were my favorite!!! You can pickup from the kitchen at the Marriot hotel in Minnetonka but they are also available on the menu at Crave, Cowboy Jacks(certain locations) and Chloe restaurants and of course Paisley Park- where it all began There is something special about these cheesecakes and the fact that Prince played a part in this business coming together is icing on the cake!!! Now, I've never met Vanessa (Cheesecake Funk's owner) in person, but I feel like I know her heart and soul after indulging in one of her cheesecakes, and I would pay a large amount of money to take a baking class from her! If I bite into something and can imagine and sense the baker's heart and soul, then that person is doing everything right, and after one bite of Vanessa's cheesecake, you taste the difference from all the others. The recipe, the quality of ingredients, the perfection of the baking - Vanessa has mastered it all. Forget New York, and forget Europe. Yes, I said what I said. What could make it better? I've been following Cheesecake Funk for awhile and just needed an excuse to get a whole cheesecake when I live with just one other person. The opportunity finally came with Thanksgiving & it definitely exceeded my expectations! THE CHEESECAKE I was super intrigued with their pumpkin-flavored cheesecake. I'm not a huge fan of real pumpkin pie, so this seemed like the perfect solution to celebrate the holiday. Omg, soooo good! Creamy, and the pumpkin flavor was just right, not over-powering or fake pumpkin-y like lattes. The crust was crunchy, not too thick or thin, & flavorful as well. I splurged and got the whipped cream for an additional $7.50. It's thicker & has vanilla beans so it it wayyy better than anything you can get from the grocery store. In terms of size, the cake is slightly bigger that my handspan and you get a lot of whipped cream. Perfect for a group of 4 so that folks don't have to fight over seconds. ORDERING Super easy to order online & you choose what time you want to pick up in store. The confirmation went in my junk folder though, so make sure you check that before reaching out to the owner. PICK UP EXPERIENCE This business is in a restaurant on a golf course in Chaska, MN. I wish there was more signage. I thought I was lost until I finally saw a sign for Cheesecake Funk on the front door. I didn't realize you weren't supposed to go inside as again there was no sign with directions to pull up front so I partly wanted to do this review to let y'all know. During COVID, they have curbside pick-up only. Just drive-up to the door & a staff person will come out. Don't come extra early. I arrived about 5 mins early, but ended up waiting about 20 mins in my car. I expect that it's a lot quicker when they're not busy with holiday orders. The staff person was nice though and wore a mask & cleaned between orders. OVERALL I'm so excited to try more kinds of cheesecake! I haven't tried cheesecake from a designated cheesecake bakery but I knew I was in for a treat. After all, a certain cheesecake chain restaurant may be good but sometimes you just need a local gem that freshly bakes the cheesecake with love. None of that frozen stuff! I scheduled for a pick up of the 8 inch chocolate cheesecake and for a "mini" cheesecake, it was huge ! Didn't know what to expect because I tend to go with traditional cheesecake flavors but the chocolate in this was pertect. The chocolate sauce on top wasn't too runny and held its' shape well. The cheesecake itself was divine - not too rich or chocolate-y but just right. And the crust was crisp enough to not fall apart but still perfectly moist at the same time. I was silently moping a little about my cancelled tropical vacation just when the lists of black owned businesses to support in Minneapolis starting floating around Instagram. It was truly a perfect storm for me to start being more cognizant of shopping at black businesses while treating myself to some cheesecake, and I honestly feel lucky to have learned about Vanessa's masterpieces!! First came the struggle of deciding which cheesecake to choose for my first order. When I couldn't decide between a few, I let Prince choose for me and ordered the Turtle cheesecake! It was ready 3 days after ordering (Saturday to Tuesday morning pick up), and pick up was a breeze! The location is super cute and has plenty of parking. As soon as I had the cheesecake, I took a bite in my car before heading home because the smell of the chocolate was intoxicating. Once I fully dug in, I couldn't decide on my favorite part. The crust is so perfectly cinnamon-cookie flavored, and the actual cheesecake is smooth and delicious. The toppings are also amazing-- decadent chocolate and caramel and crunchy walnuts. YUM is all I have to say. I was wow-ed. The cheesecake was incredible, and I would recommend it to anyone. Prince's favorite cheesecake was made by Vanessa of Cheesecake Funk. The name of the biz was bestowed by Prince himself. Obviously, the guy had great taste. I ordered myself an 8" strawberry cheesecake ($30) + a quart of fresh whipped cream ($7.50). It was easy ordering and communicating with Vanessa. I picked it up at Kitchen Space in Edina, which is an adorable community commercial kitchen with a private parking lot. The entrance is off 58th St W. The cheesecake, fresh strawberries, and whipped cream were all packaged separately to ensure the perfect assembly and freshness. But onto to the cheesecake! Holy hell. Best cheesecake of MY LIFE. The texture was heavenly, the cinnamon-y base was thick and delicious, and the whipped cream was unbeatable. The whipped cream was about $7.50 extra, but it was worth splurging for an entire quart, and it was made with love and lots of fresh vanilla bean. OMG if you have not tried Vanessa's chessecakes, you are MISSING OUT! When I saw Kara's post, I knew I had to get my hands on one too! It is truly worth every penny! Ordering online was easy and seamless. Vanessa offers a variety of flavors, I believe the Turtle Cheesecake was Prince's favorite! A small 8" is $35 and a large 10" is $50. I listened to Kara's advice to get the extra quart of fresh vanilla bean whipped cream ($7.50) and it honestly takes a strawberry cheesecake to the next level! It does add a lot of extra sweetness to it, so beware. I only used half the quart to spread on my cheesecake and it as very sweet! Now, I'll have to brainstorm what I will do with the rest because it is not going to waste! Note: In my pictures, I also only used about half the strawberries provided. Vanessa gives very generous portions, so I will load up on strawberries for my leftover slices :) Onto the cheesecake: The whipped cream and strawberries came in separate containers for at-home assembly. Do yourself a favor and get the whipped cream, you will not regret it! The cheesecake is the perfect consistency, creamy and dreamy! The crust was super good too, it was not hard like some cheesecake crusts can be, I actually really enjoyed it! The strawberries and syrup were not overly sweet, which I really appreciated since the whipped cream contributed a lot of sweetness!
