I really wanted to give this a five star rating, but there were some issues. First off, even though I didn't get the highly recommended chicken, the main food was still very good. Reuben, Ham and Cheese, bier cheese soup, pretzel app and sampler app were all excellent. However, the service was just OK (it took FOREVER to get our food) and the French fries were barely cooked. Even the second batch they brought out. They did comp one of the meals because of it, but French fries really aren't that hard to fry and frankly, not that special. I would like to have seen homemade skin-on French fries. Would have been a little more appropriate for the style and atmosphere. We'll come back again and hope for a little better experience. read more

We stopped in yesterday after a couple of hours spent in the park. We have briefly walked through the brewery a couple of times, but never ordered anything. I did not sample the beer at this particular time, but both my wife and sister-in-law enjoyed the coriander beer. They also sampled three others, but that was the favorite. All of the food was delicious and the atmosphere was pleasant and relaxing. It was enjoyable to sit and watch the old-world brewing and to smell the wood smoke, as we ate and talked. We plan to go back at some point, then I will be able to sample the beer. Until then, I would certainly recommend the food. read more

The second time I've been here and had made a reservation for 10 last Tuesday for 6:30 Thursday. I had out of area guests and expected our table to be ready. When we arrived on time, our table which was set for ten had been given to two women who arrived right in front of us with no reservation. Therefore instead of asking them to move to a smaller table I was told it would take a few minutes to set another table of ten for us. It took 15 minutes. Meanwhile the original table had 3 others that join them and began ordering and while we continued to wait. I don't understand why they were not asked to move. The table we finally got had a pillar restricting a few of my guest from seating there. No apologies or manager. Food was just average, I had the schnitzel that was very dry and hard to eat. A ridiculous wait, horribly understaffed, poorly managed, ridiculous excuse for a kitchen, inedible. So unfortunate as Carillon Park is a beautiful place, especially at this time of year. Carillon Brewing - They are almost ready to brew their own beer - Breweries Near Me - Dayton, Ohio

We went there tonight for dinner with another couple. It was difficult to get to the hostess counter to check in because it isn't near the door, it's by the steps. Once we checked in, we were told it would be about a 40 min wait (which it was). No problem, we'll go to the bar, right.. We couldn't get anyone to wait on us. They clearly were understaffed and the way the bar is set up, the few bar tenders had to run all over. Nothing was close. We couldn't even get anyone to make eye contact or acknowledge us at all. It finally took waving a credit card to get an order placed. The atmosphere was great! The beer was good! We were seated within the stated time which was good! The food was good! The service was slow. Would we go again? Yes! I would hope that they would work on the service piece. read more

The food was great but we can not understand why we had to stand in a line for 30 minutes to get a beer ? Very strange. This is a Brewing Co. so why do you only have 1 bartender ? There is a solution to this problem. Hire more than 1 bartender. It would have been much nicer to be able to sit and enjoy a beer while we waited for our table. Or even to stand and enjoy a beer while we waited. They need to correct this situation. It could be the thing that closes this place down. read more

I was surprised to see the not-so-great reviews here. We went on a Friday night, got there at 5 pm (FYI - they don't take reservations for parties less than 3 people, but if you get there by 5-5:30 pm, you should be fine w/o reservations). I have complicated food allergies - things like rice and onions, plus I'm vegan. Try eating out with that diet - it's nearly impossible with cross contamination everywhere. My husband and I planned a date night here, thinking I'd only be able to have the beer. The menu is somewhat limited, but vegan, vegetarian, and gluten-free options are well-marked. When our server came and introduced himself, I immediately asked if they could accommodate a food allergy. He asked what it was, and when I told him, he said he'd speak with the chef immediately. Within a few minutes, the chef was at our table, asking me how he could help. He gave me two options - a German pretzel, and a portobello burger. I wasn't hungry enough for the burger, so selected the pretzel. I can't tell you how much it meant that they were willing to help me, and accommodate my weird allergies. The beer was delicious - we chose the flight, then ordered based on what we liked from that. I chose Coriander, and my husband the Irish Red, but really, all the choices were delicious. The pretzel was delicious, too. Next time, I'll try the portobello burger. All in all, the service was excellent, our waiter was very attentive. We'll definitely be back! read more

The food is absolutely delicious here. But they need work on their service. We sat outside and when the sun went down there was no light. We asked for maybe candles for the tables and the waitress told us it's a fire hazard so they don't allow them. Really? What if someone falls and gets hurt because they can't see ? Also we wanted to divide the bill and it caused a huge problem. They need to get it together! Also the draft beer was $8. Are you kidding me? read more

Well i just stopped in to try the beers. Went with forfrom the menu but learned they have one for the day as well. Bartender let metry it which is nice. All house beers were seasonal. Not a large variety of food or beer, but everything they have is great. The selection of beers made on site won't disappoint, if you can't decide, just do a flight (or two...) The potato salad is an authentic German potato salad, very difficult to find in the States - especially done well! What sets Carillon apart from other places is the building and the style in which they brew their beer. They studied how beer was brewed in the 1800s and did their best to recreate that. They even employed Colonial Williamsburg VA to help with the manufacturing of some of their tools and equipment. I recommend the pretzel, another more-authentic-than-most German-styled pretzel, really good! Only reason they didn't get five stars from me is that they broke a cardinal rule when brewing beer, especially if they're going for the German mold - no fruit or extra ingredients in your beer! The beer was overall pretty good, though a couple of them could use a little work. I'm definitely going back! read more

This is a great concept and wonderfully unique building. It is the kind of new place that you really want to be successful, and it should be once they improve the service. The biggest challenge is that it is a relatively small place and the line of people waiting seeps into the dining area. It would be better to turn people away up front than to have such long wait times and overwhelmed staff/space. I'll be back and look forward to giving more stars next time. Good luck! read more

What a unique and fabulous experience. My husband and I went on day-cation and decided to head to Dayton. Carillion Brewing Company beautifully blends history with beer. The brewery is located on the campus of the Carillion Historical Park Museum which is neat because inside the brewery's doors is an exhibit of sorts that describes the brewing process. Review of the Beer: There were several beers available to try. I had the Coriander Ale which was absolutely delicious and refreshing! I also had the Porter which had a rich creamy taste with hints of chocolate. Both of these I walked away with a really neat growler. The final beer I had was an Irish Red which was good but not as good as the Coriander and Porter. Review of the food: My husband and I shared the pretzel appetizer which came with homemade beer cheese and mustard dipping sauce which was pretty good. I had a delicious Ruben sandwich was huge and filling which came with a side and I chose the cabbage saccatoush which was really good. My husband had the ham and cheese sandwich on pretzel bun which he ordered chips as a side. Overall delicious! Review of Staff: The staff are all dressed in 1800s garb so be prepared to step into the past. It was VERY busy when we went and so they have a really neat system where you can grab a beer and hang out in a waiting room until your pager goes off. The staff were really kind and the staff making the beer was very informative of their beer making process. Overall really neat experience. The emphasis is definitely on the beer and the process of making it from scratch with methods from the 1850s and the food is just a bonus! read more

The building is interesting and looks fairly historic. It has very lively acoustics. If the place were full, it would be difficult to carry on a conversation there. When we were there (a Monday night), only a few tables were occupied. My husband had mediocre fish and chips, accompanied by a very good dinner salad with house dressing. He said that the fish and chips at Red Robin are much better. Much. I had fairly good potato-leek soup and a ham-and-cheese on a pretzel bun. The cheese was extremely salty cheese sauce. Not good. The ham was tasteless. I ordered a draft root beer, but they were out. I tried their draft ginger ale instead. It was far too sweet and very low on ginger flavor. Overall--a mediocre experience. I suppose we'd go back to try other things. Maybe. For anyone who goes, I strongly recommend a jacket and long pants. It was ice cold inside, on a warm summer night. Neither of us tried beer. I took my grandmother here for the Irish and German food. She order the cheeseburger and German potato salad. She ate everything on her plate. She has not done that anywhere else. I had the soup and the pretzel braid, Both were very good. Food has authentic flavors. The atmosphere is great for all ages and the staff is friendly. Today I went with a group. The manager knew we were coming and that we were a large group. It took and hour and a half to get our food. When I talked to the manager she said that she had told our leader that they could accommodate only 25 people. We ended up with 28 people. If we had had only 25, would we have received good service? Three people made that much difference? After an hour and 15 minutes, I told the manager that I would have to cancel my order because I had to be somewhere else. My food and the food of some of people came out a little later. Some of the orders were incorrect. There were still people in our group to be served. I can't comment on the quality of the food because I ate it so fast, I didn't taste it. When my food was served I asked for my bill and soon received it. I tried to go to the front of the restaurant to pay, but the man there said that I had to pay my server. My server was not available, so, fortunately, I had the right amount of cash for my bill plus a tip. I left it on the table. I would think that this was an unusual event had I not had a bad experience with another group earlier. In fact, I have been to this establishment four times. Two experiences were dreadful. One was below expectations, and one was average. read more

One of the worst experiences I have ever had in brewery/restaurant. We stopped here as part of a brew pub tour as part of a birthday party for my husband. All14 of us were looking forward to this place the most out of all of the places on our tour. Sadly, it was the worst. The bartender was extremely rude and acted as if she didn't even want to talk to us. Since it was our first time, we had a lot questions, but she kept rolling her eyes and walking away from us. They were out of several selections, so it was hard to have enough samples for their beer flight. The beer was a big disappointment and was hardly even drinkable. Most of us didn't finish the flight. We understood it is made by using an historical process, but it tasted awful. Let's just say it was as sour as the lady bartender. We do not plan to go back anytime soon because of the horribly rude bartender. A note of warning if you find yourself in the brewery out of obligation: avoid the bar service, the nasty beer and opt for a cocktail. read more

Went there last night for a work party. Can't believe I hadn't been there yet! While I'm not a big beer drinker, watching the process was pretty cool. It is a working museum, we were told, by the very knowledgeable gentleman who asked if we had any questions. They have a couple of domestic beers on tap, wine, and a full bar for those less adventurous. We were in a separate room for the party of about 55 people. Eric and Liz did an exceptional job of keeping the drinks coming and keeping our plates cleared. Couldn't have asked for better service! The food was buffet style. Soft pretzels and sauerkraut balls were delicious with 2 different mustards for dipping. An assortment of brats and kraut, chicken, and breaded pork tenderloin were very good. Salad w/balsamic dressing was delicious, nothing fancy but good! All in all a great night and a place I would highly recommend! The decor was amazing as well. read more

It's difficult for me to write a positive review of this place because as a whole it's not my cup of tea. First I'm not a beer drinker, but I came with others who are. We stopped for lunch on a sunday afternoon so no crowd and not a wait. My friends were hoping to see a brewery showing but nothing was going on. Not being a German fan either my lunch choice was limited. ..so I opted for the fish. It was just ok. .to be honest I thought it was a little burnt. .so did my sis who ordered the same thing. Others got the chicken which looked really good and bratwurst. Overall to all of us the best part of the whole meal was the German potatoe salad. It was delicious! The waitress explained to us that the beer they brewed today was sour because of the humidity and what hot weather does to the barrels. Two in the group sampled anyway and were not pleased. The building was nice and the staff very friendly. ..but unfortunately we won't be back. read more

We were disappointed. We liked the building & their brewery that brews beer the old fashioned way. But we went primarily for dinner and to evaluate the restaurant for a potentially group outing. Our server was great - very helpful & attentive. The receptionist...not so good. Maybe it was a slow night, but sitting at the receptionist station with her head down on the table with her eyes closed was a negative image. We both ordered fish & chips and were disappointed. Although the food arrived quickly, the fish looked like ground up fish that was pressed together in the general shape of a fish filet. Hard to describe the taste & texture of the fish.... other food (ruben sandwich example) may have been better choices. The cole slaw tasted like it came out of a large institutional can....very creamy and tasteless. The chips were pretty good. But, in our opinion, this not a good place to get fish & chips. read more

The building and brew volunteers were very nice. But it ends there. We stood in line and waited 40 minutes for a beer. There was only one bartender on staff and she had one speed...slow. There were others behind the bar doing dishes and wiping down the flight carriers but made no effort to assist customers. We waited 50 minutes for a table that was too small for our party of 7. It was tight and uncomfortable. No server for 10 minutes. We were told that 2 servers had called off. Finally got a server and we were smart and places our food order with our drink order. Very slow service and food was below average. To top it off, they added an 18% gratuity for their terrible and slow service. We won't be back. read more

My third visit was 12/22 - group of 5, with one of our group being a first-timer. Food was good, but service left something to be desired. Two of our group got there before the other three, and were served drinks right away. The other three arrived at the same time and waited for 15 minutes for the server to arrive. The first server we asked to find our server actually ended up being our server! He was the bartender the last time I was there - maybe that's a better place for him. Food was good, but they were out of sauerkraut balls, root beer, and ALL desserts. VERY disappointing. I appreciate that they are making things from scratch, and I get that this is their first holiday season, but they should have been better prepared to handle the holiday dining crowds. Tried for the first time. Not what I expected, thought it was more like a tap room with plenty of beer selections ("brewing" in the name I guess). Basically 3 different types of beer, made in the 1850 style. I had the coriander beer and I thought it was great, my wife hated it. Not saying the experience was bad, just different than expected. The food is German in nature and can be a little heavy. Can be very loud if a lot of people, all wood. Our waitress was good, very informative. Beer was great, food OK, atmosphere good, waitress good, overall experience was OK. read more

Located in Carillon park this micro brew house/ museum is a must see/experience location. The beer is brewed to period standards and is a little different by today's standards but pairs perfectly with the German/Irish/English fare that they provide. Wife had ham and cheese on Bavarian pretzel with potato salad. I had the Wiener schnitzel with kraut and potato salad . The food was fantastic worth the trip alone. We shared a beer flight sampling 4 different beers brewed in house and discovered that the beers alone were a little "sour" but when enjoyed with the food it was a combination that really sparked your taste buds. We also sampled the in house made ginger ale and root beer both again are a little different but amazing . While dining you will notice the staff is dressed in period clothing but do not attempt to speak in some jacked up period manor (thank god) . You will see the brew masters cooking mash and creating beers right in front of you while taking in an epic atmosphere not found anywhere in the Dayton area. And to top off everything our service was amazing quick knowledgeable and polite . This will remain a staple for us when looking to get out for the night . read more

Terrible Experience! I was so excited to bring my husband here for dinner on Sunday afternoon, September 23rd. It was a disaster. We got to the Brewery around 4:40. They were not busy at all. The hostess seated us and we sat there for the longest time with no menus or anything to look at. Finally after about 15 minutes, I got up and found menus. Still, nobody had come by to check on us. A waiter quickly walked by and mind you - this place was not even busy - and I had to stop him and say "Can we be waited on"? He said "In a minute". And that was it - he never came back. We came from out of town and I didn't want to leave, so we took our menus and went to the bar. I want to give FULL CREDIT to the bartender that night. He was the ONLY one working! He got us our drinks and took our order. Then, we sat another HOUR BEFORE OUR FOOD CAME! An hour! We got there at 4:40pm and received our food after 6:00 pm. I don't know why we didn't leave. Another thing that bothered us. The "Brewer" was sitting there like a bump on a log rolling out these crackers in front of the fire. He could have chipped in. His clothes were absolutely filthy and he had the worst look on his face. I was disgusted with this whole experience and we will never be back. If you do not have the staff to serve a small crowd on a Sunday evening, then close on Sundays. This was the most ridiculous experience I have ever had in a restaurant. read more

However I was slightly disappointed with the beers made there, we got flights for our table so we could sample them all and none of them really impressed me. Our food was good and the atmosphere enjoyable. The place did have poor to mediocre service and was short staffed. I would go back again if a group wanted to go, but overall the experience was mediocre. read more

The brewery is beautiful. I had a hamburger and it was not bad. The fries were great. However, the beer was not to my liking. I ordered a porter. It was the first time in my life that I ever tasted a sour porter. Then she brought me a red ale that had a slight sour taste. It was the first time in my life that I ever left beer in a glass. Visited on a mid-Saturday afternoon after working. We decided to sit at the bar and get a sandwich. Though we were 2 of the 4 people at the bar, the bartender had one speed and it was definitely slow! It took a while to order some beer flights and the rest of the place was not busy. The soft pretzel braid appetizer was delicious. I ordered a burger and my husband ordered the ham and cheese on a pretzel bun. They were both good but nothing I would be in a hurry to go back for. The thing that bothered me most was the atmosphere - there was a little trio playing very somber music and an employee making some kind of bread in the open area. Overall, the staff just looked totally depressed which kind of brought me down. It's only "my" take on it, but I thought the young girls serving were not very happy with having to wear the "authentic" clothing as uniforms. I don't feel like I would re-visit. read more

Excellent food, I've had the Ruben sandwich with the wonderful red cabbage, the sampler appetizer, and the potato leek soup. Wonderful atmosphere and great historical detail. They make their own ginger ale and root beer. Good service. They should be serving their coriander beer about december 1. Carillon developed the recipe based on historical research of 1850's recipes. After hearing many good things, I was excited to try Carillon Brewing. We put our name in for a table and went to the bar to get a drink while we waited. It took 35 minutes to be served. The bartender could have been having a bad night, but I failed to see her smile once. Whoever designed the bar was not thinking practically. It slants downward from both sides to drinks must be kept in the middle as not to fall off and break. Another design error was in not sealing the floors of the upper level. A beer was spilled in the upper seating area right down to my head. The only consolation was a pitiful excuse of a whispered apology as the server was walking away. Overall, venue was interesting, food was delicious and beers were ok (only 2 made in house). I'm hoping I went on an off night and I will give it one more chance. read more
