Carbone 100% lives up to the hype. The interior is stunning, an upscale Italian theme with moody ambiance. Service is excellent, explains the menu well. I started with one of the best espresso martinis I have ever had, great coffee flavor with a hint of chocolate and creaminess. The complimentary appetizers are delicious - i loved the picked cauliflower and onions which were sour with a nice crunch, the salami is soft and savory, and the bread basket variety is perfection (LOVED the tomato bread and garlic). I had to try the famous spicy rigatoni and was so pleased. The pasta is al dente and the sauce is scrumptious - creamy and does have a bit of a kick! You end with a little yummy Italian cookie. I got a Mojito and a spicy rigatoni and it was absolutely amazing. I also loved all the small little appetizers they give you with your meal. It was super nice and then they also give you some bread and the service was absolutely phenomenal. It was honestly one of the best service I've ever gotten at a restaurant. What a fun experience! We went for the SOBE Food and Wine festival event hosted by Gold Belly. We were welcomed in, and escorted to our table. The place is beautiful inside and out. We had multiple items, I will post the photo of the menu. Everything was delicious! The team members couldn't have been any better. They were efficient, professional, funny and kind. We had one person that doesn't eat meat, and our waiter made sure she was well taken care of. The favorites at our table were the eggplant, meatballs, tuna, tartar, pasta was made perfectly, carrot cake and the rainbow cake. Every dish had great flavor, great presentation and was hitting every taste bud. The restrooms were well maintained, they have valet parking, and have the option of indoor/outdoor seating. Beautiful interior and ambience. very old school dining room design, and great music (old rock and soul type). Complimentary basket was delicious - especially the tomato bread (red sauce on toasty bread). It was dripping oil with each bite though, but I personally didn't mind it. Salami and pickled cauliflower came with the bread basket, also complimentary. Made the prices hurt less for sure. Caesar was prepared table side. Personally I thought it needed more dressing. Croutons were oily as hell but huge and crunchy and super flavorful. Again I didn't mind the oil though. Anchovies are optional but weren't as fishy as I prefer. Mozzarella was also prepared table side and was ok. Ours did not stretch the way we saw it did in TikTok's. The vegetarian option puts the mozzarella on top a bed of carmelized bell pepper and onions. Spicy rigatoni was good, no complaints. I liked the mushroom fettuccine more personally, very silky shroomy sauce. Did not get dessert besides the complimentary Italian flag cake at the end, but included pic of the comically large dessert tray that they bring to your table instead of the usually expected dessert menu. Overall a really fun experience with good food. I would definitely go again, and the complimentary snacks really won me over. read more

Been here about a dozen times now. This review is long overdue. This place could be good; if only it were good every time I went. It's so hit or miss. We're past the point of making rezzies like regular schmucks but even still, it's inconsistent. The ac dripping in the dining room is appalling. The busboys cleaning the vents with the bottom of a mop/broom over the tables with food and patrons sitting close by is just so off. They need to fix this properly. Pretty sure how they're handling it is a health violation. The complimentary cheese is experiencing shrinkflation. It's smaller every time I go. It always takes too to bring that to the table too. Hi. We're here. We want the cheese, NOW! The spicy rig is NEVER the same. It's never bad but it's never been the same twice. Very odd. Espresso martinis are delicious but the rose was room temperature (disgusting). Jake fixed it for us but it's one of those things that they should make right and say, this glass is on us. Nope. The chopped salad is always some sort of different combination of radicchio and lettuce but never the same proportions. The last week we were there twice and the oil on it was most certainly spoiled when we were there the second time. Did try the carrot cake. The ginger ice cream completely destroys the delicacy of the carrot cake. What a shame. read more

But there was one component that was so off putting that I'm afraid it's what will stick with me and drags the review down 2 stars. To start, I'm from NYC and was in Miami on vacation and out with old friends. Carbone's is impossible to book in NYC so was excited for Miami reservation. When we arrived I had book the room for outside (because outdoor dining in Jan is a treat for NYers) but quickly realized that the interior is part of the show at Carbone's. The hostess wasn't accommodating at all and wouldn't switch our table, but I let that go as ultimately was my fault. On to the rest of the meal, which was as advertised...tremendous. Bread basket, table side Caesar, spicy rig, veal parm and the standout may have been the pork chop. All amazing, pricey of course, but loved the service and theatricality of it all. So the rub... When we were ordering the main waiter mentioned one of the special apps was burrata, which sounded like a nice 3rd option. When it arrived it was covered in caviar. That was not mentioned when describing the dish. Well, now that we were a few cocktails and 1/2 a bottle of wine in we didn't think to ask for the price as it wasn't offered either when pitching the appetizer. Turns out that app was $150. So, it took a very expensive meal to an extraordinarily expensive one. But we all felt duped. Like the theatrics weren't for fun and enjoyment, rather to extract us out of an extra $150 for something none of use would have ordered had we known the extra ingredient and price ahead of time. The kicker was a separate hostess we hadn't seen all night, maybe 5 minutes after we paid the check, came over and told us we needed to hurry along as the time allotment was up. So, yes, amazing food and a fun experience in Miami with friends. But the illusion of the theatrics was punctured by an unadvertised upsell and poor hostess experiences prior to and after our meals. Suspect I'm going to check my experience at Carbone's off as "one and done". read more

I had only been there 1.5 hours, but the manager insisted this was their normal practice. No apology, no consideration--just a clear message that I was nothing more than a check to them. Some parts of the night were great, but a few things didn't quite live up to the hype. We got seated right away, and our server was amazing. Super friendly and made us feel comfortable from the start. The complimentary bread basket was a nice touch. The pizza bread especially was warm and tasted incredible. We split the Caesar salad, which they prepared table-side. It was a cool experience, and honestly, the croutons were my favorite part. For our entrees, we had the lobster ravioli and the spicy vodka pasta. Both were just okay. They looked good, but the flavors felt kind of flat, and the pasta was way too al dente for me. Customer service overall was excellent. Everyone we interacted with was friendly and attentive. The atmosphere was a little different than expected. It had a low-key vibe, but hearing Biggie Smalls blasting during dinner threw me off a bit. Not necessarily a bad thing, just not what I imagined for a fancy Italian anniversary dinner. Glad we tried it, but probably wouldn't go out of our way to come back. That pizza bread though... definitely a highlight. read more

Once seated, we were rushed to order and not allowed to order appetizers before deciding on our meal. We were told we had to order everything at once. So we did and everything came out too quickly. The food speaks for itself. You walk in and you feel like you're walking into a 1960s mob meeting. It's lightly dimmed, gaudy decor, staff dressed in suits. You definitely need to dress to impress and if you're lucky you'll get a glimpse of a celebrity. I did feel you are being judged at every turn, but the food justifies it (i guess). The espresso martinis were creamy and delicious. The free bread that comes before the food was a surprise. The fluffy bread topped with tomato sauce was incredible and almost melted in your mouth. For entrees, the spicy rigatoni is everything. I would go back and just order multiple of these. The Dover Picatta was hands down the best fish dish I have ever had. The meatballs were plentiful and seasoned well. The table side Caesar salad was fun to watch and even came with whole anchovies. Everything we had honestly was amazing. The waiters where Valet suits that looks super cool. I believe this place makes everybody feel important and the food is absolutely amazing the biggest hype Dish is the spicy rigatoni and it does not disappoint is crème de la crème. Baked clams are amazing. One of them had sea urchin, and it just melted in my mouth. The truffle corn is exceptional overloaded with truffle. The Seabass was lightly seasoned and very nice. the tomahawk was probably the best steak I've ever had in my life, don't forget the Caesar salad, which is made in front of you and has pumpernickel croutons that are amazing.
