This review is long overdue. We've been here several times and every time we come we find something new we absolutely love. Bottomline they have great food!!! The Rasta-pasta is my favorite, it's perfectly spicy!! We always get the ribs because they fall off the bone, so good and the pineapple sauce on top is so refreshing. Ok, I do feel very bad to leave this 1-star review. It is a local restaurant and service was nice and the 2 staff members I encountered were friendly. This is my first visit here. I was actually happy that Arnie's and Anthony's required an hour's wait, which forced me to try a new restaurant. Calypso was busy, but was able to accommodate me right away on a late Saturday evening. I started with a pina colada because that damn song came on Spotify just as I arrived. It was served in a nice glass with pineapple wedge and the cute umbrella. The waitress came over later with a smile and thumbs up asking me about the drink. I told myself I will not bring it up - but with some initial hesitation I had to say it ... it tasted like shaved ice with rum on top. Very faint pina colada color visible, but it was just rummed ice. I have this mistrust about returning food or drinks so I declined a redo. The steak was the most expensive item on the menu. So I knew it had to be good. In fact, it was brought out 40 minutes later and the sauce, asparagus, potatoes were perfect. Well-seasoned, balanced flavor, perfectly cooked. But the steak was well-done. When the waitress checked in later, I also hesitated but did cut the center portion of the steak to show her it was well done. I was appreciative that her manager comp'd my dinner in the end. I did not expect it, but it showed that they acknowledged they could do better. I made sure the waitress knew I do appreciate her service and tipped accordingly. That would have been a 3-star experience. However, later that night and this morning I had the dreaded stomach reactions to the food. It was my only meal of the day and I would not post this if I was not 100% certain of the source. The #1 rule with any restaurant experience is the food cannot make you sick. This is my 1-star experience. I am sorry to post this, but I have to be true to my experience. read more

I decided to take my wife down to Edmonds on a sunny day after work based on the reviews. I didn't realize that it was in the same space as the French restaurant I took her to in high school--in 1987! It's better now. The jalapeño cornbread was perfect, the drinks were strong, and the coconut prawns were fresh, plentiful, and tasty. My lady ordered a green salad dressed in curry, which I thought sounded weird. First time trying Calypso, don't know what took us so long, all of our friends love it. Great energy, friendly staff, roomy space with a tropical vibe. The bar area was buzzing with people having a great time. Our dinner was fantastic! Flavorful conk fritters, coconut prawns with an actually spicy habanero chutney, and perfectly cooked rockfish escabeche. The flavors sang, fresh fish, colorful presentation. We've been here 3 times, the first time for takeout, and the last two for dine in (both during COVID). Service here is always great, and all employees adhere to the safety precautions you'd expect during these times. The food is really creative and flavorful. The conch fritters are a great starter, but don't ignore the chicken wings with their jerk sauce. For mains, they have a variety of food ranging from chicken, rice and veggies, to their "Rasta pasta" and lobster Mac and cheese. We haven't had a meal we didn't like. Drinks are of the Caribbean sort, and so you have your usual beachside staples (daiquiris, mai tais, Long Island iced tea, etc.). Fairly priced and great perfect portions. I don't say this often but this was the best meal I have had in a long time. For sure the best meal of the year. Before I go onto the review I will advise if they take reservations that would a good choice, if not expect a wait on the weekend around dinner time(it slowed down around 830pm). We had an hour wait to get a seat on a Saturday night(that shows how popular they are) but it was well worth the wait. There are some bars near you can get a drink well you wait. Well we waited for our table I had the Pain Killer cocktail. It was a nummy mix of coconut and rum. For a starter we had the ribs. Perfectly fork tender with a nice crust. The pineapple salsa was a great pairing to it. A fun and tasty start to the meal. We also had the pleasure of trying the award winning clam and conch chowder. This was by far the most amazing dish of the night. I wanted a bucket of this. The depth of flavor the chef managed to achieve is astounding. The smokiness from the bacon went perfectly with the creamy broth and the tender seafood. I can not recommend this enough if they have it on the menu. I had the Rasta pasta and my wife had the Mahi Mahi. Both amazing. The prawns where perfectly cooked and paired amazingly with the pasta and vegi's. The sauce was light but full of flavor. As for the Mahi Mahi it was one of the best cooked fish I have ever had. Perfect texture, not dry but still firm and flavorful. To end the night I had to try the rum cake. I was expecting the thick, heavy rum cakes I've had in the south. Instead it was light, fluffy with a nice crunchy exterior. Which was great because it held up to the ice cream on top(not that it lasted long enough to melt) with a delicate drizzle of caramel sauce to enhance the entire dessert. The perfect end to a great meal. I will say we did wait a while for our meal but I honestly didn't notice. The front of the house staff is as amazing as the chef. I watched the three of them almost run around that restaurant all night to ensure that every guest was taken care of. I never felt that we where ignored or left alone. Even our water never go below 1/2. A lot of that was due to our waitress Karli. She was amazing and on point all night long. This is one of the first restaurants that if yelp would let me go to 6 stars I would. If you find yourself in the Edmond's are and are looking for an amazing meal I highly recommend Calypso. If I where still working in restaurants I would beg to learn under this chef. read more

I always hope that when I am going out to eat that my expectations are met for two things: The food and service. I don't care how expensive a restaurant is and will order anything I want, but I want a server that takes care of me and delicious food. Ambiance and music are a plus, but the two above are non-negotiable. My partner and I visited Calypso as it has been on our list of restaurants to visit in Washington. The location itself is close to the water, but the restaurant was very low key in its decor. It seemed like a hole in the wall. We were seated by a nice waitress who was hosting and serving. She would check on us multiple times during our meal but the bartender was our server. Because he was busy and stuck behind the bar, I asked if she would be our server instead and offered to move to her section. They both eventually took turns serving us but my stars are for the service only. The food here is INCREDIBLY bland I was shocked. We ordered a few items from happy hour, and skipped ordering entrees because of how bland the happy hour food was. We grabbed the corn bread, ribs, conch fritters, and jerk hot wings. I swear to God nothing in this restaurant uses salt. The wings were coated in a dark sauce heavy with cinnamon but ZERO salt. I almost sent them back but my partner attempted to eat them with gobs of blue cheese to make up for the lack of flavor. Conch fritters weren't crispy, and instead they had a rubbery outside. I'm thinking the dough was over worked. Also, no damn salt. But the aioli it came with was great and I started dipping everything in there for a semblance of flavor. The ribs were huge, and tender, but jfc why aren't they salting their food? We ended up leaving to split a crab roll at Market because we know their food has FLAVOR. This restaurant is a huge skip. Coming to this restaurant is definitely not a mistake. I will say that you should probably make a reservation if you want to sit at a table. I didn't end up doing that but was able to sit at the bar in the back of the restaurant. Everyone who works here is so kind and welcoming. One of the owners even serves as a hostess and comes around to check in on people and is so personable. The wait staff were so kind and the bartender made us feel very comfortable. Honestly, it felt like there was an entire community established in this restaurant which was really refreshing! The food was mind blowing. Every dish we got was absolutely amazing. The food is definitely a Caribbean style and the drinks are fun and fruity, though you could order whatever kind of drink you want since it's a full bar. The jerk chicken was so delicious with a somewhat sweet taste. The jalapeño cornbread with honey butter was my absolute favorite and one of the patrons let us know they serve it with gravy as a biscuits and gravy dish on Sundays for brunch. What a treat! The owner and staff are lovely, laid-back, and welcoming, and we relaxed as soon as we walked in. Love the vibe, and we had a great time having dinner at the bar. First, the drinks. Piña Colada is righteous--and huge! Big thumbs up for the Madras and Bahama Mama, too. They use salvaged and thrift store glasses, which makes all the colorful and delicious drinks extra fun. We were excited to try the conch fritters, since that's something we grew up with on the Gulf Coast of Florida--very good, and a taste of home. The slaw that came with them was zingy and yummy, too. (Not sure about the dipping sauce that didn't really add much, but with the creamy slaw, it was kind of unnecessary anyway.) We also got the corn bread, which is exactly to my tastes--moist, a bit sweet, and crunchy on the outside. (I should have taken some home, though, because the portion is large and between that and the piña colada, filling!) For dinner, we ordered the Mahi Mahi and the caesar salad with Rockfish. The fish was the standout in both cases--especially the mahi, which was fresh, a large portion, and cooked to perfection, with a perfectly seasoned crust and moist flaky insides. The exterior (white facade) blends in so well that this charming restaurant in Edmonds is easily missed. The "patio" appears to be the best place to enjoy a good meal or otherwise a table on the left against the wall and away from some of the too hurried and busy with loud tableware waitstaff. Our three course meal stood out in that dessert easily topped the appetizer and entrees thanks to its good and interesting flavor, size and appearance (the rum cake). The restaurant is very nicely decorated reminiscent of island life with a cool vibe. The atmosphere demanded a relaxed approach which some of the staff didn't seem to match, flying by constantly in the relatively compact space. The cocktail menu is creative and the wine and beer list has something for everyone's taste it seems. Flavors and freshness in the beef and fish entrees seemed to be somewhat lacking despite enticing menu descriptions. Overall it seemed that based on the restaurant's description and other Yelp reviews expectations were a bit too high. Ok. I've been to Calypso twice now, and both times were special. The food tasted great, with great flavors, and the prices were reasonable. I had a 'Painkiller', while my bride had a glass of wine. I had the 'Rasta Pasta!' and my bride had the Mahi Mahi (see pictures). Last night, we had the carrot soup with ginger! Yum. The waitress was very friendly, and made sure we were enjoying ourselves. The ambiance was fun, but not obnoxiously so. I would go here any day over some of the swanky, overhyped restaurants in Downtown Edmonds. It made me want to co to Mexico. Food? We started with the Jalapeño cornbread - toasted, with soft butter. Yum! I would come back just for this. It should definitely be on your "must try" list. For a main course, I had the Mahi Mahi - which comes with a nice creamy risotto and asparagus, and topped with a tomatoe salsa. The fish was forgettable - it was ok, just nothing special. The risotto was nice and creamy and the salsa tasted really fresh. The front of house was a little disorganized. But there are only a few tables inside. All the ingredients within the hash were in nice chunks, grilled veggies along with roasted potatoes shedded tender beef and a great soft egg on top.
