I went and had a freckled ginger beer. N/a ginger beer strawberries and mint forgot to ask the brand of ginger beer but good and strong, super refreshing. Then i had the ceasar on hh it was good sized and had a ton of garlic and some caper and small peices of pepper which all ended up going so well..it is THE BEST ceasar ive ever had. Nice thin peices of parmesean, they didnt skimp on anything. I am meeting a friend there tomorrow so i can try the tacos and probably the ceasar cause im now addicted! The food was amazing! We had the scallops appetizer and the steak and blackened rockfish for dinner. Everything was soooo good, especially the scallops! Wow, very delicious! For some reason when the husband said "Caribbean food" my brain thought "hole in the wall" -- and there's nothing wrong with that, but this place is way nicer than I had imagined! Very nice dining space and atmosphere. more importantly, the food was quite elevated for what I initially thought we'd be getting and we were definitely not mad! Don't sleep on the watermelon salad, it was refreshing and tasty. And the server was delightful, I really wanted the scallops but as an appetizer realized it wasn't going to be filling enough, so she immediately offered to add a side of something and gave me options. She may have created a special snowflake in me because the risotto was SO good with the scallops I might want to order this from now on if they let me! Husband had the pork tenderloin, also very well prepared with a really flavorful sauce. And finally, the rum cake was incredible. Quite a large portion so glad we shared. The food is delicious... we have had almost everything on the menu, some of our favorites though are the seared scallops and Caesar or watermelon and tomato salad, the filet and the mahi mahi. Food and drinks were great--tried the Rasta pasta with the jerk chicken and it had a lot of flavor! Main complaint is the food took 45 minutes to get to the table. It wasn't just our table, but the people who were already sitting when we got in had their food arrive at the same time as ours. Someone said "let me check on your food" and then didn't hear anything for ten minutes. One minute before the food came out they said sorry the kitchen is backed up--it would have been nice to hear that and just communicate what was going on because it seemed like our server didn't really care. Once we finished we had our empty plates sitting on the table for ten minutes--no one offered to box my food and I had to flag someone down. Server also came to the table twice with an empty water pitcher and then left my water glass empty? I am grateful for what seemed to be the manager for checking in on us and another server who did end up boxing my food eventually. I love their food, cocktails and cool decor. The servers are great too. Comfortable with a modern Caribbean vibe but without the usual tropical cheesiness. We were here the first day it opened and it just gets better and better. I grew up eating conch fritters in the Keys and these are the best I've ever had. Excellent place to get some delicious Caribbean flavors, which are very hard to find in the area. They do not pretend at offering the flavors and spices of Caribbean food, they definitely bring it. Had a variety of food items, and pretty much liked them all. I was excited about the cocktails, but they were not to my liking. To my taste, they were a bit of the booze and mixer variety instead of the hoped-for booze and juice variety. Plenty of people enjoy the drinks, so this is just a matter of personal preference. This is a new place in town so I decided to give it a try. Everything from the food, service, drinks, and ambiance were perfect! I had ribs to start and the Blackened Rock Fish for an entree. The ribs fell off the bone and were seasoned perfectly for my liking. The fish had just the right amount of spice and was served on a bed of Jamaican style rice and beans that paired perfectly. Calypso has become our favorite little spot in downtown Edmonds. The food has always been consistently delicious! We've tried much of the menu, and have never been disappointed. Carly and her partner in crime, Jennifer, have always taken very good care of us. They're awesome! The place has a relaxed, upscale casual, mildly Carribean vibe to it. There's a nice little bar area if you want to just grab a festive "Tiki drink" and a snack. Some of our favorite dishes have been the Conch fritters, the Conch chowder ( freaking delicious!), The spicy sauteed shrimp, with the delicious slaw, the pork loin, any fish, and the curry goat. I really don't understand all the stellar reviews, we must have caught them on an off night. My jerk chicken was actually raw on the inside. The seasoning included in the rub is really good, but the chicken wasn't cooked enough. The sides were just...bad. We waited over an hour to eat as well, our server was slammed to be fair, but it was an hour from ordering to actually eating. To wait so long for such...bland food, was a huge let down. The best app we ordered was the jalapeño cornbread- However, the watermelon salad, the wings, the risotto- I wouldn't bother with. There are lots of stellar restaurants in the area! I'd give this one a pass, then again, I like nice tasting food so if you don't care very much then this might be perfect for you. read more

Take out from Calypso in Edmonds was incredible! All of the suggested dishes from owner, Michael Scott Chambers, did not disappoint. A watermelon, tomato, olive and feta cheese salad sounded odd, but each of the textures and flavors totally complimented one another. The curried goat was reminiscent of this traditional dish as it is served in Jamaica. Perfection! I tasted my husband's blackened rockfish, and really wanted more from his plate! Came here for a dinner with my friend on a Wednesday night. We were seated right away and given our menus. We shared the jerk chicken Caesar and I ordered the shrimp Rasta pasta. The jerk chicken Caesar was good. The jerk chicken isn't spicy and had a nice spice blend. I could really taste the five spice. It paired well with the Caesar salad. My pasta was equally enjoyable. It's a cream based pasta with veggies and shrimp. The flavor was very good and the portion was plenty. The only thing I didn't like was the choice of pasta. They used large shell pasta for the dish which made it hard to eat. I would have preferred a penne or a rigatoni. Overall the service was great and the food was yummy. I would definitely check this place out if you're looking for a new dinner spot in Edmonds. read more
