Saw the review about how this place was generally imitating fancy but missed the point of it and I can say that is spot on the mark. My spouse booked the res under our last names, they can reach out if they want to try and invalidate that like they did the other guys review. It felt like I was in the movie "The Menu" except the guy from Parks and Rec (Moneyyy pleeeaasssee) was in charge. Good: -they have a bubble gun that they happily used to add smokey(dry ice?) bubbles to any drink and that is fun. We loved it. -they were able to Keurig some coffee for me -Itemized bill Bad: - The tour of the kitchen was fun and intense but I couldn't help but wonder how people constantly walking through a kitchen without hair coverings was up to health code. - super tacky decor, wall accents that ended mere inches from a corner when it could've just went around the corner instead of standing out. Weird furniture at the entrance. Ceiling is painted office ceiling tiles. Scuffed floor. Weird 180* televisions over the men's urinals, but they were turned off for some reason. -whisky tasting section (for investors only...) with nothing exciting on the whisky list. -50ft from a Mc Playplace (yes, McDonald's). -used sharpie labeled spray tube to give "odor of scotch" to a drink, table side. Labeled "scotch scent" -"I don't take your order... I guide you through a culinary experience". All items are a-la-carte. So yeah, you're definitely taking my order. -wife asked for medium to well steak(she's a recovering vegetarian, don't blame her). Steak was bloody as heck. Sent back asking for well. Came back... bloody... but seared! -pork was undercooked, which is how they recommended... wild -three different people tried to refill my water and asked if I had placed my order -server said something like "I broke my thumb so now I'm using this pad to put your order in but normally I'd just remember it..." it was confusing but she was earnest so no worries. -all three of the hosts at the door were wiping powder off their noses as we left -walked out directly into the blazing Fresno sunset. Like right in your face. Sat down on a weird couch on astroturf until spouse got out.

C'est magnifique! Have you got plenty of money burning a hole in your pocket? Head on over to Bulle-the epitome of a fine dining experience. The lavish decor includes a huge vintage mirror, plush booths with lumbar support, and several great lighting configurations. and the luxury doesn't end with the bathrooms. Low key vocal jazz music plays in the background. We ordered Belvedere 10 martinis with caviar $45. Worth it! French Onion dip-lightly whipped-with huge potato chips $19. Crispy Farm Egg-beautifully presented in a radish and carrot flower-the star of the night. $36 And the 10ounce ribeye-medium rare-a must. $245. Maybe you'll be fortunate enough to have Monica for your server. I'm fairly sure the owner, Tom, will drop by your table to shmooze a bit. Thanks Tom, for making it a great evening for us!

A carrot ginger cocktail & melon sorbet

Last Wednesday, I had the chance to attend the FAR Officials Selection event hosted at Bulle -- one of Fresno's newest fine dining experiences. And honestly... the venue itself deserves its own moment. Bulle is bringing a completely different level of dining to Fresno with its modern California cuisine, elevated presentation, and intentional ingredient-focused menu. Executive Chef Max McCarthy comes from Michelin-recognized kitchens including Quince and Le Jardinière, and you can absolutely feel that influence in every detail. We only experienced the hors d'oeuvres during the event, but it gave us such a good glimpse into what they offer. My favorites were the filet mignon lettuce wrap, the potato bite topped with caviar, and the melon sorbet + blueberry ice cream -- which the staff happily let me have 4+ more servings of because it was that good. The hospitality honestly stood out just as much as the food. Everyone was incredibly welcoming, attentive, and excited to introduce us to the different cocktails and unique flavor profiles they offer. One of the bartenders even explained that most places locally pour about 1-1.5 oz in cocktails, while Bulle serves 2 oz pours -- more comparable to the cocktail culture you'd find in New York. I was even able to get a mini kitchen tour, which made the experience even more memorable. Seeing the attention to detail behind the scenes and the passion the team has for what they're creating made it easy to understand why Bulle is already making such an impression locally. Some notes: parking is plenty since it it located in a good sized plaza. This is definitely more of a place for adults-only, not exactly catered for young ones if high-chairs or other accomodations are needed. The space is very beautiful and a perfect date night or night-out spot to sip and enjoy thoughtful bites. I will be coming back for a full meal next time.

Beet salad 5/5 for presentation and taste
    Nicole L.

Overall, a solid 3.5/5. Decor, tour, bread, cocktails and vegetables were 5/5. Temperatures of all food served were perfect; salads were cold, hot dishes were smoking hot. All proteins cooked to medium perfection. Protein entrees were 2-3/5; they were all well cooked with great presentation, however massively lacking in flavor. Perhaps they are relying on the aging process to do all the work, which it did in terms of the tenderness of the meats, but they need to dress it up with more flavor. This was the biggest disappointment since the entrees are the pricy items on the menu. Smoked vegetables that came with the salmon was better than the salmon itelf. Wagyu was tender but not as savory as most wagyu. Aged Buddha duck was tender but just tasted like duck, again needed some flavor. The dots of sauce on the entrees were beautiful but not enough to flavor the dish so it didn't bring the dishes together. The entrees brought overall score way down since that should be the star courses of the evening. Decor and experience 5/5. The restaurant tour put a very nice personal touch to start off the evening. The Wine cellar is only 1/3 full and all the boxes on the floor made it look messy, which is a huge contrast to the beautiful decor of the rest of the restaurant. I'm sure they are still working on that since they haven't fully opened yet. There was sea bass being aged, but we were sad that I was not available to order on the menu. The bread and cocktails 5/5. All food and drinks were very photogenic. The bread was one of the best flavored dishes of the night. Cocktails were also delicious. Kumamoto oysters (2/5) were the smallest I've ever had and there was a sauce on top of them, but it was not memorable. It wasn't cocktail sauce and didn't have much flavor. The beet salad was a 5/5 and also one of the most flavorful dishes of the night. Great presentation and good mix of textures and flavor. Duck confit 2/5. I love duck and will order it every chance I get. If I was doing a blind taste test, I would've thought this was a mildly flavored smoked pulled pork based on the flavor and texture. Very disappointed. As a huge foodie, I hope their food continues to improve, because the aging and cooking method and presentation are perfect, but needs flavor to tie it all together so it's not a wasted effort on perfect pieces of meat.

Bulle arrives in Fresno with the kind of polish, ambition, and quiet confidence more often associated with restaurants in New York, San Francisco, Miami, or Los Angeles. My wife and I dined there during its soft opening and left not merely impressed, but genuinely astonished. To find a restaurant operating at this level in Fresno feels, in the best possible way, improbable. What stands out first is not the size of the menu, but its consistency. Bulle does not rely on excess or endless options. Instead, it offers something far more compelling: a kitchen whose dishes repeatedly exceed their own descriptions. For diners who have sought out celebrated meals across the United States and abroad -- in Japan, France, Italy, Portugal, and Denmark, among other places -- that is high praise. Bulle belongs in that company. Chef Max more than lives up to the early enthusiasm surrounding the restaurant. We began with the Ossetra caviar, an amber caviar served with milk bread, chives, shallots, crème fraîche, and egg mimosa. It was a graceful and luxurious opening course, elegant without feeling performative, and especially well paired with a brut rosé. Our second course revealed even more of the kitchen's range. My wife ordered the uni rice, a dish that demonstrated both restraint and technical precision. Uni can be unforgiving in careless hands, but here it was handled beautifully. The flavors were composed and balanced, while the crisped rice atop the foamed uni butter introduced texture and contrast that made the dish feel layered, thoughtful, and complete. I chose the California mussels, which arrived shelled -- a welcome departure from the usual presentation. The green curry lent the dish a bright, fragrant lift, bringing warmth and aromatic complexity without overwhelming the natural character of the mussels. It was a small but memorable example of how carefully the menu seems calibrated. For the main course, we shared the seared duck foie gras and the A5 Wagyu coulotte. The foie gras, paired with poached pear and duck jus, was rich and deeply savory, its intensity softened and sharpened at once by the fruit. The coulotte was cooked to a perfect medium rare and accompanied by blue cheese fondue and a shredded potato rösti, a combination that felt indulgent yet deliberate. Together with the red wine we selected, it made for a main course that was both luxurious and remarkably composed. Dessert brought the evening to a close on a high note. The shaved ice, served over a bowl of magnificent marshmallow vanilla ice cream, channeled the nostalgic brightness of an orange creamsicle while remaining fully refined. Topped with a torched Italian meringue crumble, it offered coolness, sweetness, texture, and just enough theatricality to make it feel like a true finale rather than an afterthought. What makes Bulle so exciting is not only that the food is excellent, but that its excellence feels consequential for Fresno. Meals of this caliber are often something people travel for -- requiring flights, carefully arranged reservations, and entire weekends built around a single table. Bulle offers that same sense of occasion close to home. To have a restaurant this thoughtful, this polished, and this delicious in our own backyard feels like a rare gift. It was, quite simply, the best meal we have had anywhere in years.

I took a special somebody here for her birthday, the service was immaculate. The food tasted really good as expected. The whole dining experience was truly amazing everything from the way the place was set up. That drink menu was crazy and also an experience. The menu changes so it's exciting to come back and try more. Will come back 10/10.

great experience here! When you first walk in it feels like a restaurant you would find in LA. This place just opened up and I have to say the food and drinks are amazing. Definitely a lot of drinks you can choose from that won't steer you wrong. Owner and staff are very friendly.

As you enter, the lobby is very nice, the hostess checks you in and takes you to your table. Reservation recommended. The restaurant is beautiful. The ambiance is romantic and lounge like. Each area thoughtfully thought out with exquisite pieces. As you enter to the main room you'll see to your left dry aged duck and beef. They also have fish alongside displayed in the case. There is also a lounge room you can rent out for 30 mins or an 1hr. The order: we started off with some sparkling water, our drinks are 2 order of the Third Window Belgian Style Witbier which my husband and I enjoyed. On the house, we got their Bulle bread that they fermented for 48 hrs and then on the 3rd day roasted on their hearth and served with butter. I also ordered a zero proof cocktail the Nymph's Glow that I loved. Moving into our starter items, we had the Gem Salad 8.5/10 savory and citrus. Next the Ora King Salmon Tartare 10/10 you have to try this one. My favorite of the night. The chip is made of rice and salmon roe, very rich in flavor and the tartare itself was decadent. Third, the Duck Confit 7.6/10 beautiful display but flavor profile overall was alright. Lastly, we had the A5 Wagyu Coulotte 8.9/10 there was not a lot of marbling with this Wagyu but nonetheless it was a great entrée. The beef was cooked medium, tender, good flavor, with blue cheese fondue and beef jus. There was a period of time after starters were done that took some time like 20 mins until we got our entrée which I feel was a little long. Service I will have to say pretty up there. Our server Monica (captain) was super attentive making sure that each dish presented was explained. She went over the menu quite thoroughly with us. We were checked up on when it comes with refills and taking any finished plates away. Quite a nice experience honestly. I would give service 10/10.

    Smoky old fashioned
    Erica L.

I don't write many reviews, but when I do, they are almost exclusively because I want to share overwhelmingly positive information. Unfortunately, that is not the case from our experience at Bulle last night. I had been reading articles for months about the opening of the restaurant and how it was supposed to be a Michelin-level fine-dining experience in Fresno, which sounded like a perfect way to celebrate my birthday. I will start with the positives. The staff was very nice and attentive. I mentioned early on that I had a nut allergy, and every single person who brought a food or a drink to me proactively commented that there were no nuts in what I was given. It wasn't necessary, as I was confident my server knew, but very appreciated. The smoked old fashioned was very smooth and tasty. My husband also really enjoyed his cocktail, but I can't remember the name. It is on the top of the cocktail menu. The bread was also very good. It was super light and airy. The herb dust was a great addition. Moving on to the not-so-awesome stuff. I made the reservation for four people. When we were shown to our table, it was only set up for two diners. I could see someone arguing that noting that as a negative seems overly nitpicky, but again, this restaurant is being advertised as a super-upscale fine-dining experience. It just seems like an easy detail to get right. I had to tell our server that my reservation was for four, and she sent someone over to finish setting the table. In terms of decor, the restaurant is pretty inside. I thought the lighting was nice, and my friend really liked the lit-up tree. The tour was unexpected, but not unpleasant. We were sat at a booth off to the side that kind of felt like the "time out table." It felt separate from the restaurant's fun area and was more sparsely decorated than the rest of the place. Our friends only had a plain wall behind our heads to look at. My friend got the oysters, and she said they were in desperate need of citrus. They were, however, very pretty with the beet foam. We got the French onion dip, and it was just okay. The texture was fluffy, which was nice, but nothing about it was very notable. They give you like 4 giant chips, which was only enough to consume about half the bowl, so the rest went to waste. I got the wagyu. The meat was tougher than I expected of a wagyu, but it was seasoned well. I expected small portions, but this portion was shockingly small. I had maybe four ounces of beef. I did really like the vegetables. It had grilled bok choy, endive, and one carrot. I did not care for the potato cake at all. The sauces on top were quite good, but the inside was oily and just fell apart, like it needed a binder or something, and definitely seasoning. My friend had the gem salad. She said it was nearly inedible because of something grainy in it. She said it was like chewing on sand. Both our husbands got the sea bass. While the sauce work on the plate was quite good, their fish was unbelievably overcooked. I mean absolutely hammered. The skin was inedible. Neither of them is the type to send something back, but honestly, they really should have. Also, the menu said the fish was salmon, but our server said they didn't have salmon yesterday, and it would be sea bass. Sea bass is fine, but having the menu not updated seemed weird and another thing that is like, huh, given the upscale fine dining framing of this establishment. Lastly, I noted in the reservation that we were celebrating my birthday. I did expect that to be acknowledged in some way. It didn't have to be a dessert or anything, but maybe a flower on the table? A happy birthday fist bump from the owner? I don't know, something. We came here for my birthday to celebrate and have this "experience" I have been reading about, and we just didn't get it. I am glad I can cross this place off my want-to-try list, but I am disappointed we did it as my birthday celebration. While the staff was warm, pleasant, and attentive, nothing about dining at Bulle felt special. Most of the food was just not up to par. I expected the food to be among the best I had ever had, but it was not, at all. Especially at that price point. Our meal was over $300, and had it been amazing, it wouldn't have bothered me. My husband and I appreciate good food and have tried many of the great options, fine dining and not, that Fresno/Clovis has to offer. I have had dozens of better meals at Five, Saizon, Le Apertif, The Palms, etc. I don't really see us going back, unless it vastly improves, which is a bummer. It would have been cool to have an extra special place to go for birthdays and other celebrations.

We went for a second and third time!!!! Food is savory and appetizing. We enjoy the relaxed ambiance. Yes we as Fresnan families are not used to high class up scale restaurants like the okd school ways. Dress CODE is a must to leep the vibe they are trying to give. THIS place os to have an experience better than vegas in Fresno. Is my opinion. I fully support it Kids and adults will enjoy. Para todas las familias hispanas este lugar es ROMANTICO y la comida es única. Se requiere que vayan bien vestidos para la experiencia que van a tener. Creanme. Lo van a disfrutar y conmemorar. Perfection!

We had the opportunity to attend the Toca Madera Winemaker Dinner at Bulle Restaurant with another couple, and it was exactly what we needed after a long week! From the moment we arrived, the staff made us feel welcome. We had the chance to meet the winemaker, Shayne Vetter from Toca Madera, along with Mac from Bulle, who guided us through the evening. Mac was incredibly knowledgeable, passionate about the wines, and took great care of us throughout the dinner. The four-course meal was absolutely delicious--we all agreed it was a 10/10. I ordered the salmon, and it was hands down one of the best I've had. Crispy on the outside, perfectly moist on the inside, and full of flavor. The cocktails were just as impressive! We all ordered something different so we could sample a variety, and every single drink was outstanding. The presentation was beautiful, and they tasted just as amazing as they looked. One thing I'd recommend is to go with the expectation of slowing down and enjoying the experience. This isn't a place to rush through dinner. We didn't mind the pace at all--it gave us the chance to relax, enjoy great conversation, and soak in the beautiful atmosphere while savoring every course. Sometimes it's nice to forget about the clock for a while. After dinner, we sat at the bar for a nightcap and had the pleasure of meeting the owner. He shared the vision behind Bulle and all the thoughtful details that went into creating such a unique and beautiful space. You can tell there's a lot of passion behind every part of the experience. Overall, we had an amazing evening. Between the outstanding food, incredible wines, creative cocktails, attentive staff, and welcoming atmosphere, Bulle Restaurant exceeded our expectations. We left full, relaxed, and already looking forward to coming back. Highly recommend!

We kept hearing about this place. Got a reservation on a Saturday evening. Let me tell you, they delivered on everything From the moment we walked in, we were welcomed and our "journey" began. The walk to our table was a small tour of the restaurant. We were shown the different areas and special parts of the restaurant. Finally seated, Ashley guided us thru our dinner. Very helpful and specifically, she knew every dish inside and out. The menu isn't big but that's what makes it great. Simple menu. Excellent execution We ordered a couple of cocktails. The martini and whiskey sour. Both great with a non-traditional fell to each cocktail We ordered the in-house made bread with the amazing butter. For starters, we went with the Crispy farm egg and the eggplant. Both were delicious. The crispy farm egg was an experience on its own. We got it and we're trying to figure out how to attack it. That's when the owner Tom came to our table and gave us a crash course. Great dish. Easily the best bit of the night For our entrees, we went with the lobster and wagyu filet. both great, sauces on both plates were scrumptious. The chef came by our table to introduce himself and it was great speaking with him for a short moment. great touch. finally for dessert, we went with the banana dessert, which was a homemade ice cream with a banana and Grand Marnier topping. great flavors and the perfect amount of sweetness. to finish the evening, we were given a quick tour of the kitchen by Tom and small token of thanks with two small chocolate truffles with orange zest. simple yet magnificent. just like the rest of the meal This wasn't your everyday meal. It was an experience. Let the staff take you on their vision Execution and delivery was superb. Great job by all of the staff at Bulle

From the moment we arrived, it was clear this restaurant lives up to its reputation. If a place…read morerequires reservations, you expect a memorable experience, and that's exactly what we received. The service was warm, attentive, and genuinely welcoming. We were made to feel comfortable from the start, and every interaction with the staff was professional without ever feeling overbearing. They were knowledgeable about the menu, happy to answer questions, and made the evening feel effortless. The fresh pasta is the undeniable star of the meal. You can immediately taste the care that goes into making it in-house, with a perfect texture and beautiful bite that elevates every dish. The seasonal Corn Agnolotti was outstanding. The sweet corn filling was vibrant, fresh, and showcased the quality of the ingredients. The flavors were delicate yet well-balanced, allowing the natural sweetness of the corn to shine without overwhelming the palate. It was a simple dish executed exceptionally well. The portions were thoughtfully sized, allowing us to enjoy multiple courses without leaving the table feeling overly full. Every plate was beautifully presented, and the quality of the ingredients justified the price point. Overall, this restaurant delivers exactly what you hope for from an elevated Italian dining experience: exceptional handmade pasta, refined flavors, attentive service, and an inviting atmosphere. It's clear the team takes pride in every detail, and we'll gladly be returning.
