I was on my way to Sonic but made a last minute U-turn to check this place out..and I'm glad I did. I ordered the burnt ends, pulled pork, chicken, and ribs with two sides: coleslaw and potato salad. Food was overall good. I would go back. They're in a little strip mall with very little parking. You'll go up to the main desk and order your food. They'll give you a number and then you'll pick out where you like to sit. Things that we liked were the ribs. Definitely get the ribs. Sides that were good beans and corn on the cob. Fries were fries- nothing special. Potato salad was good, but was different than I normally eat. It was more of a white potato salad. They have three different barbecue sauces for you to choose from. burnt ends were very dry. I do not recommend getting this. Turkey was just OK. Or flight got canceled so we decided to go into town and try a place we had never been to. The family running the place was super friendly and working on a deep clean since business was down. It was 2 in the afternoon so lunch rush was gone. I got the cowboy sandwich which was good. The pink sauce has a nice horseradish kick to it. You know the kind that hits the back of your throat before seeing your nostrils on fire. The amount of meat on this sandwich was unreal. You could have made two sandwiches with it. Small place in an unassuming strip center. The place was fairly empty at lunch time albeit two tables of diners and someone picking up takeout. I had the two meat combo, burnt ends and ribs with coleslaw and fried okra. The baby back ribs (2) were good with a proper bite and meat that cleanly came off the bone. There was a light smoke on the ribs but not a noticeable smoke ring. The burnt ends seemed over cooked and dry rather than sticky or slightly saucy. The flavor was good but they were chewy. The fried okra was over cooked. You couldn't spear them with the plastic fork provided. The coleslaw was okay with a slightly pink mayo-based dressing with a hint of horseradish. One thing I found off putting was the barbeque sauces on the table (mild, spicy & gold) were cold. I'm sure they were refrigerated overnight but I would have expected them to have been brought out soon enough so they would be at room temp by lunch. They seem to have raised their prices recently so the price of the two meat plate was increased by $1.50 each for the burnt ends and ribs. Brisket was an up charge of $0.50. Pretty good food....if you can ever actually catch them open. Signs will be on and say open and theyll see you in the drive through and will run through and turn all the lights off two hours before close and close right in front of you as you're waiting. Always closed at random times and will close on you even when you're there. Actually ridiculous. Wouldn't recommend unless you want your time wasted. Being from Texas and passing through Springfield, MO on the way back home we decided to give this little BBQ joint a try. We were very impressed with the brisket; a nice smoked flavor without being dry or tough. The smoked turkey was also on point this particular evening. I didn't care for the brisket burnt ends. They were fatty, more so than normal, and the bark really didn't offer much flavor. I know a good burnt end is hard to make, and I probably have high expectations, but these don't do it for me. As far as sides, they too were top notch. Some of the best fried okra I've had in a while; really looked like they were cutting and breading it fresh in the kitchen. Solid corn meal breading with the perfect amount of salt to bring out the earthy taste of the okra. Overall, I was impressed with this bbq joint. It provided enough "home" to carry me through the night and back to Texas the next day. It will be on the list of places to go back to next time we are passing through. read more

Walked in to see the only worker sitting next her boyfriend which was enjoying the bubba BBQ. With the first time being there we waited by door until we were addressed to come to the counter to place our order. I wanted ribs and to our surprise oh I'm sorry we are out of ribs was told to us. I informed the girl that why we were there to have. As we were being informed That there were no ribs available there was an order for a door dash order to inform the client that there were no ribs as well. June 3, 2024 and we came for one last dinner (off to the airport in the morning). We split a 3 meat platter. The okra was obviously fresh and was enjoyed. The ribs had a tasty/mellow (no bite/not spicy) rub and fell off the bone. The sausage taste like a slightly smoked kielbasa (nothing special). The pulled pork had a fabulous flavor. The pit beans were wonderful, and my wife was thankful. Nobody saw her, licking the inside of the container. We did not try or use any any of the sauces/barbecue sauces. They serve Pepsi products and have a few bottled beers. The blackberry moonshine was very good. The staff was great and we enjoyed sharing a few laughs. There was also 2 TVs. This place is AMAZING! I didn't think anything could beat Nashville BBQ, but wow!! Everything was amazing! I had the ribs, cole slaw, mac and cheese and potato salad, the beans must be amazing bc they were sold out when I arrived, everything was unbelievable!!! The staff are the nicest ever as well, treated myself and my service dog the best ever. I had a big day of driving 11 hours today and needed a solid meal and this was the place to go! A small place, so at first I was a bit hesitant. I ordered the Southern Belle, a sandwich with pulled pork, cole slaw and a gold bbq sauce. It was the best BBQ I had my whole trip. We drove from Las Vegas to St. Louis and back again using two different routes, so that is saying something. I tried ordering similar things at other BBQ joints, and they just didn't stack up. Bubba's is pretty solid. Not the best BBQ you will ever have, but it is tasty for sure. I am not from Springfield, but I could assume it's one of the best BBQ places in town. Had the burnt ends and sausage with macaroni and sweet potato fries. Sweet potato fries were easily some of the best I've ever had. The BBQ sauces at the table were pretty solid too. i have only ever left 5 star reviews for restaurants but I just had to leave this review to let others know. My husband ordered a 2 meat combo plate and I wasn't hungry so I ordered a basket of sweet potato fries. They brought his meal out and it had my fries on his plate and said those are your fries on his plate. This little about of fries on his plate was my basket of fries and I don't even get my own plate? His burnt ends were nothing resembling burnt ends and his pulled pork was like mushed up meat. The appearance inside is awesome but when you look close enough, it's gross & dirty; the floors on the main floor & inside the restrooms are in dyer need of a good machine scrubbing. Just not a fan of this place! They had all these local beer signs lit up on the outside ( like mothers and maybe a boulevard one ) but only offered some sad gross beers in cans sitting in a barrel of ice, not very appealing. Staff was teenagers who were very loud because they turned off the music and could here all their not no nice conversations in the back. Ordered 2 meat platter with 2 sides (mac n cheese and fried okras). The only thing that came out hot was the fried okras. The max and cheese was tasteless (as was the okras) and had unmelted shredded cheese sprinkled on top. Brisket and ribs were cold and dry. The Texas toast seemed to me to be nothing special, just toasted white bread with barely a pat of butter. All in all doesn't live up to the 4 stars for sure. It barely earned my 2 stars. This is the first installment of my rating and ranking of all the BBQ joints in Springfield. I ordered the 3 meat platter with beef, pork, and ribs. Beans and Mac N cheese for sides Supposed to be the best ribs in the Ozarks. Ribs: very tender and juicy , good smoke ring, they were lacking a little on flavor. They required sauce. I don't normally put sauce on ribs. Brisket: nice smoke ring, very tender and not too much fat. Also needed a bit of sauce. Pulled pork. Tender, juicy, with good flavor. It stood on its own. Also went very well with both the golden and spicy sauce. Beans were nothing special. Doctored up pork and beans. Mac N cheese was good and cheesy. Dining area was clean and well laid out. Service was very good. They have 3 sauces, sweet, spicy and golden (Carolina style. The golden was the surprise as I don't generally prefer mustard sauces but it was a nice addition to the pulled pork. The sweet was a good sweet sauce. I didn't hate it but it didn't blow my socks off. The spicy sauce reminded me of a basic off the shelf bbq sauce with some black pepper added. After finishing my meal I think I figured it out. It's the smoke that is missing. I have to assume it has to be the variety of wood. Everything had good smoke rings. I didn't try the fried pies because the flavors they had didn't appeal to me. Came in with the lady for a nice dinner out. I go for the Wings with Garlic and Parmesan. The lady goes for a meet plate with Brisket, and smoked turkey. We both had coleslaw for our side. The wing were not my favorite. They were smoked and while juicy had a texture that I didn't care for. Would have liked to have seen the fat rendered a bit more but that is just me. Garlic Parm flavor was there but the garlic oil didn't have a lot of flavor. So for me a miss. The Lady's brisket was nice, tender and smoky. Same with the turkey. Had a great lunch at an old college friends Bbq joint! Cool vibe, friendly staff.Food came out quickly, fresh & hot! Plus the restaurant itself was very clean! The sausage was good. There are lots of bbq place in Springfield and this one is one of the more unassuming and laid back version. It's in a little strip mall, next to a Waffle House.It's decorated in a cute, homey, comfortable way (according to my wife) and the service was friendly and helpful. My wife's burnt ends and brisket were tender and juicy and my wings were meaty and perfectly cooked. Bbq is never cheap but I dont mind paying when the food is good and this plve is excellent! Ordered a fried pie and was asked if I also wanted some Cinnamon Ice Cream. I did, paid, and waited for the food. Once the pie came there was no ice cream on the plate, so I asked about it and the waitress said she couldn't find an ice cream scoop. She said she'd look again and walked away. Minutes went by and I eventually walked up to the counter to ask again about the ice cream. I was nonchalantly told, "yeah sorry, couldn't find a scoop". I asked about a refund on the ice cream and was then told the price of ice cream is built into the price of the pie. If a restaurant is unable to deliver on availability of food or something I paid for, I'm understanding and able to show grace - but the fact I had to ask about it twice and wasn't offered anything to make my experience better is unacceptable for any business in the service /hospitality industry. read more

Still the best place in town for ribs, and sweet potato fries, but other than that meh.. I really struggled not to give this place at least 4 stars for ribs alone, but there were just too many other issues I had with my recent experience here. One being the price leap! It seems they have added $3 to everything since I was in.. Basic combo meal "2 meats, 2 sides, "no drink" will set you back $13!!! That's not a horrible price for BBQ but it's far from inexpensive. Second issue staff seems a bit cold, and not attentive to customers; such as drink refills, or needing something. They make you pay before you eat so it's extremely hard to judge how much to tip since they expect you to do so before you get waited on. It's as if staff are in the zone of taking orders, deliver food, clean tables... Third complaint my corn was ice cold, and my meat lukewarm... Obviously it can't come fresh out of the smoker, but meals were flying out of the kitchen extremely fast! A little quality control will go a long way. Lastly the bathrooms looked like a truck stop. Dirty floors, nasty toilet, and a running sink; I was shock to find soap in the dispenser.
