Live in Severance for 4 years now and I have never been to Bruce's bar. Today is Tuesday. Decided to meet a friend here for dinner for the first time. We arrived at 5:30pm and the place is pretty empty and quiet. Probably because it's only Tuesday. I heard this place gets packed on Friday evening and Saturday evening. I don't mind the quietness. As soon as we walked in, I thought the place has a nice vibe to it. It looks very clean and the ambiance is nice. We decided to sit at the bar. The bartender's name is Jason. He was friendly and professional. He took our order. I thought their menu selections are pretty decent for a dive bar. I ordered the Bacon Cheeseburger with tots. My friend ordered the wings with dry rub and fries. Our food came out fast and hot. I thought the burger was tasty but the burger patty was a little bit overcooked. I asked for medium meat temperature. But i still enjoyed the burger. That tater tots was crispy and delicious. My friend said the wings were very good. The bartender was very attentive. He keeps checking on us to make sure everything was ok. This is the first time I've eaten here and I will definitely come back. read more

The service is great! My wife and I have been going there for a few years. I think we've tried everything on the menu-it's all good.

Tonight was not the best visit. Arianna as the bar manager was not great at resolving issues. She came to my table and berated me for expressing an issue with service. My server was not very attentive as she was at other tables. I expressed that with my server and she was not very happy with it, understandable. But the way Arianna came to the table to "resolving" the issue was not professional at all! She was not very understanding of the situation. This is a shame, as we frequently visit this establishment. I understand my lack of supporting this business won't effect the business, but I hope my review helps shape the way issues are addressed! I will continue to support other local establishments in the area, but I'd stay clear of this one until they get training for management! Also, yall need to fix the bingo callers mic. My kind of Bar. Completely unpretentious, an island of sanity.......aaaannnddd.....serving Mountain Oysters as their special. With cocktail sauce of course. These are sliced glands, aka, bull testicles, deep fried, served with French fries. Typical harvested in cattle country where bulls must be converted to steers for a wide variety of reasons associated with beef. They are very tender and have almost no flavor, so the fry coating flavor is important. I found it rather bland, and had to rely on liberal dipping into the cocktail sauce. Ambiance is Real Modern Western Bar. Service is.....exactly what I expected: efficient but not enthusiastic. They're workin' folks, and don't have time to wear happy faces to make you feel good. read more

I came here twice in September 2020 & August 2021 to try Rocky Mountain Oysters. They came with fries with a dip very similar to cocktail sauce. I actually remembered these ones tasting quite a bit like fried calamari. I have found a better place in Fort Collins (The Colorado Room), and their's had more flavor and tasted like fried liver. I've been to "Bruce's" several times since moving to their area a couple of years ago. I have to start by saying, I really dig it. The only reason I don't get a chance to go there more is because generally, in my daily travels, I'm going the other direction. I can genuinely say that i've never had an issue there at all. The staff has always been very polite, and courteous, the food is always of good quality, and there seems to always be people there, it's a busy little place. This is a nice bar that I think is somewhat of a biker bar but I've lived in colorado for damn near a decade & had never tried bull nuts. I tried the rocky mtn oysters & they were great, & we sat outside on the patio & slammed cold ass beers & dined on bull testicles. Inside folks were seated at the bar right next to each other & it reminded me of what times were like before the fake ass chinese kung flu virus. Pretty quick table service & wait staff from what I noticed, didnt have to wait much at all when I needed another ice cold beer. I sure as fuck would & most likely will come back here again & try some more shit from their menu cause Im sure its all really tasty, so we're gonna eventually find out how good everything else is read more

I think this bar is pretty good, kind of fun to hang out in and good enough food, but I was just really disappointed in the prices! seven dollars for a big beers is a bit much, it was only Budweiser nothing fancy but I like a simple beer sometimes but I'd have to be pretty thirsty for seven dollars it's not that great of a bar. We come here often. It's a NOCO staple and always good bar food. A plus that it has a pool table. They do nickel and dime you a little. If you opt for tots instead of fries, it's a $3 up charge. Adding a few pickled jalapeños to a burger is a $2 up charge. I mean, aren't fries and tots essentially the same? Frozen potatoes no matter how you look at it. We will still come here. Just won't get any dang tots. Last thing. A cheeseburger is $12.99. A bacon jalapeño cheeseburger is $14.25. So adding bacon and jalapeños adds an extra $1.26. I have been going to Bruce's for several years, but never again. Worst experience ever the other night. Paid my bill/tip only to find out they charged me an additional 18% tip for two (2) people. When questioned they said there was a note on the menu, which is not the case. Regardless, they accepted no ownership of the matter and the owner/manager just walked away with no further explanation. If you go, ask for an itemized receipt (which they didn't bring until I asked for one) and check the tip/upcharge. I won't do business with dishonest people. read more

This a great place off the beaten path with a colorful history all it's own. I must say I do not go to Bruce"s for the notorious Rocky Mt. Oysters. I typically enjoy a buffalo burger, beer ,onion rings or fries and leave the Oysters for the rest of the crowd. If you ride motorcycles and like to take the back roads or highway, Bruce's is a great stop for lunch or dinner no matter how you get there.... read more

This is a pandemic-specific review. I was at Bruce's Bar today (my dad's idea) and was disappointed to see that this place was not requiring masks, not even for its employees. Although this restaurant is located in a conservative county, they should be doing the right thing (no pun intended haha). Bruce's Bar has been featured on national TV. I did a fireball promo here a month or so ago and I'm so glad I did. Bruce is such a nice guy and cares about his employees. You can tell that a majority of the customers are regulars and know almost all of the employees. Very fun atmosphere that reminds me of home. I didn't get a chance to eat while we were there but everything that came out of the kitchen looked and smelt AMAZING. So glad this place is open. I will definitely be coming back! read more

Big spot with lots of parking out front in a tiny CO town. Definitely can see this being a good spot for a road trip stop or the occasional visit from one of the Northern Colorado towns near by. This place definitely has the small town feel which is nice for the occasional change from what you might be used to, especially since Colorado has been booming with transplants for the last few years. This place has the Rocky Mountain Oysters down. We shared a combo variety and it was awesome. They also have fun burgers made from yak or elk. I had the yak and was impressed. Don't forget to add the bacon and jalapeños! Definitely worth checking out, especially if you've never tried Rocky Mountain oysters. read more

We went for the Rocky Mountain Oysters but found a good burger place instead. The Oysters were greasy and chewy, definitely undercooked. The burgers were cooked correctly and tasty but not exceptional and certainly not worth the drive. read more

Just an update, apparently the help at this place gets pissed about bad reviews. Was "complimented" by *name changed to protect the guilty*, who said, "Not a chance in hell", whatever that means. Looked up her profile and saw "0" friends and "0" reviews, looks like she opened a Yelp account just for little 'ol me! Also got a private message from this lovely lady, goes something like this: "Hey Raoul, you should be REALLY embarrassed,apparently you didn't see the other 150 people in there,you were so HIGH maintenance and had the nerve to ask for separate tickets for a table of 5 AFTER you all finished eating,and yes I was you're server! Good luck next time!" FWIW, we asked for separate tickets at the very beginning of our unfortunate experience here. In fairness, the place is kinda big, maybe there really WERE 150 people in there, but honestly, I kinda doubt it. I love it when a member of the help accuses me of being "HIGH maintenance". We saw this gal a total of twice while we waited over an HOUR for our f***ing food, she spared no effort to let us know that she was far too busy to get us another drink, and basically communicated to us that we were a big PITA. I guess I touched a few nerves with my spot-on review of this establishment, truth hurts, I guess. And since I'm not the only one who wrote a review like this, I would suggest that it is y'all who have the problem, not me. I have a suggestion for the waitstaff at this place: Rather than running down the people who spent their hard-earned money at your place of employment, why don't some of you take a hard look at yourselves and the way you conduct yourselves? I had low expectations going into Bruce's due to its location and the fact that it is mostly a divey, biker bar. However, Bruce's managed to be worse than my low expectations. I am a server and I really do understand what being busy is like. They were definitely busy and WAY understaffed and underprepared. And I really believe this is what contributed the most to us having a bad experience. We sat at the bar and asked for waters with our beers. We got the beers and never got waters. The ice bin in the bar was right in front of where we were sitting so the waitresses would set their trays on the bar right in front of us to load their drinks and leave dirty cups right there too. When the waitress took our order, she did not ask how we wanted our burgers cooked or which of the three sides we wanted with our burgers. They automatically cooked them to about medium well (i would have liked my elk burger medium rare) and she automatically brought us all shoestring fries and we wanted a salad and waffle fries. It took about 35 minutes to get our food. Understandable for how busy they were, but like I said, they could use some more staff. The waitresses were also grumpy and cussing and complaining right in front of customers about how busy they were. Last but not least, they finally got a new waitress in when we were almost finished and she complained to a regular customer about how sick she was. Glad she wasn't going to be handling our drinks or food. We spent $67. ($56 bill and $11 tip giving them the benefit of the doubt) But we won't be back. read more

I went to school at UNC back in 1994-1997. My friend Doug introduced me to Bruce's back then, as we were on a budget. So, he found all kinds of 'All-u-can-eat' places. Bruce's had AYCE on Thursdays and Fridays. At first I was hesitant, knowing what RMOs were. But they are delicious. We went quite a few times. I even went solo (since my girlfriend at the time refused to eat them, even though I told her there were burgers and steaks too.....what a prude b***). Anyways, since I left Greeley, I can't find a place that serves RMO's. I went to a few places in Denver...eh. Nowhere in Arizona. Used to be, but they stopped serving them. Went back to Colorado this past Summer, and Bruce's was a MUST. Got Doug (he's still in Greeley, after all these years) his wife, and another couple to head out to Bruce's. I'm so happy they re-opened, and I tried 3 different kinds of RMO's. I liked the Cajun a lot. But you can never go wrong with original. The place was packed, so hopefully they'll be open for years to come. I've never tried anything else on the menu, but I'm sure everything is excellent (seeing how it is in cow country) and fresh. This bar used to have great food and great service years ago. So tonight I took my family here, as I moved out of state and wanted them to have great food and service. Unfortunately, the service and food was horrible. We waited 2 hours, the rocky mountain oysters were over cooked, took the waitress 15 minutes for beers, and appetizers. When I asked to speak to a manager, the waitress became very rude and gave me attitude. After another 30 minutes for waiting to get our ticket, that was over 300.00, I asked for the manager again, she said there was nothing more she could do(8.00 off the bill) and that the manager wasn't coming to talk to me. I will not be back to that drunken, shit hole. Who only has 1 waitress for entire restaurant? And too add 3 nights before we tried to make reservations and were told they dont take reservations. read more

Bruce's is open again after a couple years of being closed due to the death of it's founder. Everything has been cleaned up, painted and is still serving great bar food (tasty burgers) and their world renowned Rocky Mountain Oysters. The onion rings are damn good too. I've been coming here for years and was pretty disheartened when I heard they closed. After a phone call today to confirm they were open again, lunch was had and enjoyed. The crowd is pretty much the same - predominately (friendly) bikers and the people like myself who love to stop in now and again for my RMO fix. I'm so happy. read more

Buffalo Oysters were tastier than the regular Rocky Mt. Oysters, the texture was better, the RMO's were a bit chewy. And it was pretty unanimous across the table that the mashed potatos were Yuck-O ; too much canned gravy, too much salt, and the texture overall was that they were flaked. I got a baked, I figure you can't do too much to a spud. Prime rib could have been a lot better. They couldn't seem to get the cooking order right: I asked for medium rare, it was more like medium. My husband's MR was more like WD, and our friend's medium was more like well-done. Th side veggies were good, they even had yellow carrots== Pretty sophisticated for a po-townie bar. Service was spotty. She was friendly enough, but she said she'd be back with horseradish for us...and wasn't. She did have a few friendly suggestions when we were ordering. But I have to say, the Texas Toast was completely Yumm-o! The Beer Battered Onion Rings stole the show tho', I'd come back just for those. Heh, I started out giving this place 3 stars, but after re-reading this review, I think they deserve only 2. A Colorado legend. If you've never had oysters (not the aquatic variety), there's no better place! I prefer the beef but most of my group liked buffalo. Often times lamb fries are available too. If you stray from the oysters to something less...reproductive tract...you'll find decent bar food but nothing to write home about. There's not much else in Severance so their town motto is "where the geese fly and the bulls cry". If you're in the Greeley or Fort Collins area it's worth the stop. read more

This place is great and is a throwback local bar where people do a really good job. They're famous for their oysters and they are really good, taken a lot of out of state family there and they are all surprised how good they are. When they get busy (which is quite often) they tend to be a little slow with the food but those at the bar are always working hard. Play a little pool or jump on the shuffleboard to kill some time and you will enjoy yourself and the food, plus a brew! read more

Not very welcoming on the outside but it's a pleasant surprise on the inside. It's a typical dive bar with pool table, small bar area and a bunch of locals. The menu looked good with different meats like yak, elk and buffalo. Oh, and you cannot forget the main attraction (to me at least) are the rocky mountain oysters(!) both buffalo and cow. I got both the buffalo and cow because it's likely the first and last time that I'll ever order them so I had to try each one. A little strange, a little chewy and a little addictive. Pretty much anything you batter and fry will be fine. I'm sure that an old shoe with some beer batter will fry up nicely, but I digress. Overall, I would say go and try it. It's worth it. Oh, and don't be like this nummut who came in right after me and told the waitress that he wanted to put bull balls in his mouth.
