    We just moved to Severance and been here twice already in a month. We went during off hours so the service was prompt And the servers are really nice and engaging! A great little local pub that prides itself in providing local beers and liquors. We got the "I'll have the pig" which is a few slices of pork belly, bacon and pulled pork with a lovely dill pickle. I also ordered a house salad which was nice with the jalapeño ranch. Please bring some blue cheese dressing to the menu! Love the place. Cozy and friendly and the food is really good! The servers are very friendly as well! This is gonna be a regular dig for us! Very close to home and a quaint little rustic/modern Main Street pub!

    Being from Chicago I grew up with hot dogs and deviled eggs surrounding my basinet. When your baby teeth started coming in the taste of the vodka dipped bottles soothed the pain and built tolerance early. So when I say I can drink at pro level, I've been training all my life. When I look for places to feast there are two hooks that get me every single time, dogs and eggs. I'll see them on the menu, say "fuuuuuck" then see what the ambiance is on the inside. If it has bougie craft cocktails, that's strike three, I'm grabbing the keys and heading that way. William Olivers was one do the first spots I've tried being back in Colorado. To this day, the way the eggs were presented was the best I've ever seen. Sadly I couldn't take home the crystal serving plate! I can't wait to try Deviled Egg Company in Texas!

    Best food in Windsor for the price! The bartenders are very friendly and know how to make a delicious cocktail.

The sandwich is simple in appearance but explodes with flavor upon the first bite, sending rainbows and shooting stars across the palate. I only wish I had exercised more self-control to capture a photo before devouring it. Pro tip: ask for extra BBQ sauce, crafted in-house, which elevates the experience to new heights. William Oliver's also caters to non-vegan diners with a plethora of enticing options. The ambiance is convivial, featuring a dartboard and other games for a fun-filled visit with family and friends. On those picturesque Colorado days, the outdoor patio provides the perfect setting to enjoy your meal. In conclusion, William Oliver's earns a resounding 5 out of 5 on all counts. Be sure to say hello to the well versed team; Cole, Todd, Kim, Moon, Malachi, and Charlie, seasoned in the best customer service, conversation, and just simply wonderful human beings striving to make your visit the very best and most memorable it can be. Tell them Seth sent you. My only suggestion to the talented epicurean scientists at WO (chefs), would be to consider adding a vegan dessert. (Wink) It is imperative to highlight their extraordinary selection of spirits, beers, and wines which span the spectrum from the elegantly simple to the most distinguished, award-winning offerings. This curated collection ensures an unparalleled experience for even the most discerning connoisseurs. When in Windsor, CO, also noting another location close by in Fort Collin's, CO, to visit William Oliver's is an absolute must.     Don't like cold food, we ordered the jackfruit dish, tacos, sandwich. Both were cold . Expensive, didn't taste very good. Staff was nice

    Amazing atmosphere and food. Love the tequila. It's a great place to unwind. Like the manager and staff. Very attentive and caring.

    Great dogs and atmosphere. Didn't get to try the whiskey because we were there for a work lunch but would guess that's pretty great too.

    Many thanks to the kind owner who graciously gave us a tour on Saturday (when they don't normally…read moredo tours) after our flight was super delayed and we couldn't make our Thursday tour we had scheduled online. It was probably one of the best distillery tours I've been on, he was so knowledgeable about spirits in general, you could tell he was passionate about making a quality whiskey. Not only did he talk extensively on whiskey, but all other spirits - vodka, gin, tequila, bourbon v. rye v. irish v. blended whiskey. Why we can't call something "tequila" in the U.S. because it isn't made in Mexico. It was more of a insightful tour of spirits and then talked about his specific distillery. You can tell how much he cares. The spirit tasting at the end was also insightful - taught us how to smell the whiskey, from top to bottom and how it smells different. Compared the un-barreled to the barreled whiskey, it was just a great distillery tour. Thank you! The tasting room is small, and the location is relatively out of the way of most things, but the bartender was very kind and showed us the MANY menus. If there is a piece of advice I'd give, it's condense your menus so it's not so overwhelming. I was also surprised that such a purist has so many sweet drinks on their menu - pudding, girl scout pairings, etc. Maybe just for Easter and holidays? Give this place a try, much better than NOCO distillery.

I thought I had progressed taste bud wise to a whiskey tasting but as it turns out my cool factor isn't there yet. Instead I settled on a whiskey cocktail that was quite delicious. I had wanted a Kentucky mule but they were out of ginger beer which was a shame so I went for a whiskey sour. Their cocktail was a winter version with some spiced simple syrup that while tasty, I would have preferred to not have the cinnamon notes. I ended up passing my flight over to the hubs and our friend and they were most happy indeed. The staff was really nice and definitely into their craft.

I did enjoy it, but was only there about 10 minutes, and I'd just need to go back and spend more time. Anyway, I was visiting nearby and saw this on the map and rode a bike over. Really cool little drinking "court" inside the garden shop. Cool ambience and vibe. I was there early on a Sunday and was the only one there, but I liked the feel of the place. Service was friendly. I tried one beer and got a 4 pack of the distillery's fairy root beer to go. (Fairy Root beer = their house made absinthe + their house made root beer). I am not a big fan of absinthe (the licorice notes), but I had to try this. The two elements go really well together, and I must say the combo grew on me, the more I drank it. The distillery and brewery here sell their different items for purchase, beers and spirits. I would have bought more items, but I had limited space in my suitcase. If I lived nearby, I would be back. They don't rely on drinks and vibe alone though, the service is what really makes this place special. Every server we have had has been attentive, fun, and sweet, and really transforms this into a "third space" that Windsor benefits from as a community. If you're lucky you may even get a visit from Rajah, the Queen (aka, shop kitty). Please just make sure you check the hours before you go - they aren't really open the hours you might expect for a brewery/distillery. We've had a few disappointing evenings rolling up after work to find out that they were already closing. It's worthwhile to find the time while they are open to visit!
