There is so much to say about this little bar in Windsor. First when I moved here with my partner and this was the first place we tried in town. We were greeted by two incredible bartenders Eliza and Zack and a general manager Cole that have now become close friends of ours. The vibe was great (no TVs, amazing), service was quick, the drinks were delicious, and the food-while bar food-was acceptable, and the staff were so friendly and fun. We established a weekly bar night routine to come in and see the regulars and these workers. I looked forward to it, and made great friends. But then the general manager wasn't there anymore and our bartenders left too, and all we had left were two amazing bartenders Ed and Sam. They have now been carrying the burden of the lack of staff and they are the only reason we have kept coming back at all. They try so hard to make everyone comfortable and happy, and are two truly wonderful people. But it all went downhill from there. We took a gamble the other night and went in on a day we never do, and they recently hired a new bartender Dani, who greeted us with low energy and a somber tone. That's fine, not everyone loves their job, but within 5 minutes of meeting us, she told my partner she didn't like the song playing in the bar because it mentioned a transgender person in a relationship (and no she did not say it like that, she said derogatory offensive outdated terms) out of the blue! We are a queer couple! We did not invite, initiate, or try to have any type of conversation like this and she just says that to them? Spreading hate to a stranger unprompted? I was shocked and disgusted. Ed and Sam are two wonderful, welcoming bartenders that have been nothing but kind to us, but this is not the William Oliver's I know. I love the vibe of this little bar. It is so cozy, warm, and welcoming. I was absolutely ecstatic to see they had multiple vegan items on the menu and felt very included. The staff was very attentive and friendly. I will say my tacos did come out cold which was a little bit of a bummer. I feel like I wish the jackfruit was seasoned more and cooked in the bbq sauce to offer a little bit more flavor. Otherwise great experiences. read more

My girlfriend and I came in for dinner. We were both very impressed with the food and service. Our waitress and bartender were both very friendly and amazing. They have a good selection of beer. And let me say if can't find a whiskey you like you have issues. They have to have at least 400 different whiskeys. They specialize in their pork. I had a pork plate and it was so delicious. I will definitely be back. The restaurant is very clean and nice. It is the type of place that you would just like to come and stay a while. One of the best restaurants I have been to in a while. Got here last night with friends for a quick bite before headed out to watch a play. Very unique place famous of its Bourbon and Whiskey selection. At 4:30 pm Saturday they weren't busy at all. We just moved to Severance and been here twice already in a month. We went during off hours so the service was prompt And the servers are really nice and engaging! A great little local pub that prides itself in providing local beers and liquors. We got the "I'll have the pig" which is a few slices of pork belly, bacon and pulled pork with a lovely dill pickle. I also ordered a house salad which was nice with the jalapeño ranch. Please bring some blue cheese dressing to the menu! Love the place. Cozy and friendly and the food is really good! Being from Chicago I grew up with hot dogs and deviled eggs surrounding my basinet. When your baby teeth started coming in the taste of the vodka dipped bottles soothed the pain and built tolerance early. So when I say I can drink at pro level, I've been training all my life. When I look for places to feast there are two hooks that get me every single time, dogs and eggs. I'll see them on the menu, say "fuuuuuck" then see what the ambiance is on the inside. If it has bougie craft cocktails, that's strike three, I'm grabbing the keys and heading that way. William Olivers was one do the first spots I've tried being back in Colorado. I waited so long for my Mac and cheese entree that other people at my table had already finished their food by the time it arrived, and when it came out it had less macaroni than a mac and cheese side dish that was ordered by the table. It's an incredible experience every time we come here! The management is top notch and we always receive amazing service. Recently we found out they are offering whiskey tastings and classes! We went to William Olivers last Friday night for dinner and a couple of drinks. They had a great atmosphere that was welcoming, and a great addition to Windsor businesses. We do think it's a bit odd that they discourage people from calling, and a few other things they are negative about on their website. No calling is not something I would be advertising, no calling no happy hour looks negative on your website. Our grandkids liked the selections on the kids menu, and we enjoyed the dinner options on the adult menu. There are even a few gluten-free and vegetarian options on the adult menu. I had the BLT sandwich and although I love crispy bacon, my bacon was a bit too black and crispy but the balsamic glaze on the sandwich was delicious. The whiskey options on Friday where you can roll a die to see what your discount will be is a fun feature. Overall, we had a great time and we will be back although it seemed slow on a Friday. We hope they're doing some advertising to get more people in there. We didn't even know they were there and we live in Windsor and they said they've been open for seven months!
