We stopped in Saturday mid day and we had a blast. Tried their gin, rye, and single malt. Settled on the single malt. Tasty stuff. The rye needs a few more weeks. We have a set of tiny hands. Peels of laughter with Daniel and Jade.

Great atmosphere with a great vibe. Small intimate tasting room. They do a gin and a rye whiskey and make a bunch a great cocktails and highly recommended a visit here for anyone who likes craft nano distilleries or anyone who wants a unique drinking experience

So good I forgot to take a picture until they were gone...

We were riding bikes by this place and stopped in, welcomed by an amazing knowledgeable and friendly bar keep...the gin and whiskey is fantastic and the drinks are fantastic. Plus, railroad earth playing on the radio was not too shabby ;)

    Great company !

Seated quickly when we got there. The place was packed and the staff still managed to be attentive and friendly without rushing us. We ordered the Brussels sprouts for the table (good portion) and three of the 15" pizzas: Pepperoni, The Jimbo, and The Pesto. Plenty of food, went home with leftovers. The Pepperoni was the standout for me, rich flavor, the kind you keep going back for. Drinks were a strong point too: good wine and cocktail list, and while there's no full beer list, they had a decent IPA on hand. Vibe surprised me. For how busy it was, we never had to raise our voices to talk across the table. Indoor and outdoor seating, full bar, ample parking. Works for couples or a group dinner. Get the Pepperoni, grab a spot on the waitlist before you head over, and sit on the patio if the weather cooperates.

Ace Gillett's -- The Best Speakeasy Vibe in Fort Collins…read more Ace Gillett's is one of our favorite spots in Fort Collins -- a fun, underground bar with true speakeasy vibes. Cozy booths, dim lighting, live music, a full bar, and genuinely delicious food make it the kind of place you want to linger. We love coming here with friends and sharing appetizers: flatbread pizza, fries, Brussels sprouts -- everything is consistently great. We've celebrated our daughter's 21st birthday here, and celebrated our new home here. It's perfect for date night, girls' night out, or a cozy, relaxing evening with live music. One of the best things about Ace Gillett's is how flexible it is. As my husband and I say, it's an "every evening place" -- you can splurge on an incredible full meal or spend $15 on a happy hour drink and an appetizer. It works for any occasion and any budget. And the location is unbeatable: tucked beneath the historic Armstrong Hotel in the heart of downtown Fort Collins. Super convenient if you're staying there, and a wonderful spot to add to any night out. Highly recommended.

Prices weren't bad and it also has a piano bar but that's only open on certain days. Although I was surprised, it wasn't more packed for a Saturday night. Many thanks to the kind owner who graciously gave us a tour on Saturday (when they don't normally…read moredo tours) after our flight was super delayed and we couldn't make our Thursday tour we had scheduled online. It was probably one of the best distillery tours I've been on, he was so knowledgeable about spirits in general, you could tell he was passionate about making a quality whiskey. Not only did he talk extensively on whiskey, but all other spirits - vodka, gin, tequila, bourbon v. rye v. irish v. blended whiskey. Why we can't call something "tequila" in the U.S. because it isn't made in Mexico. It was more of a insightful tour of spirits and then talked about his specific distillery. You can tell how much he cares. The spirit tasting at the end was also insightful - taught us how to smell the whiskey, from top to bottom and how it smells different. Compared the un-barreled to the barreled whiskey, it was just a great distillery tour. Thank you! The tasting room is small, and the location is relatively out of the way of most things, but the bartender was very kind and showed us the MANY menus. If there is a piece of advice I'd give, it's condense your menus so it's not so overwhelming. I was also surprised that such a purist has so many sweet drinks on their menu - pudding, girl scout pairings, etc. Maybe just for Easter and holidays? Give this place a try, much better than NOCO distillery.

I thought I had progressed taste bud wise to a whiskey tasting but as it turns out my cool factor isn't there yet. Instead I settled on a whiskey cocktail that was quite delicious. I had wanted a Kentucky mule but they were out of ginger beer which was a shame so I went for a whiskey sour. Their cocktail was a winter version with some spiced simple syrup that while tasty, I would have preferred to not have the cinnamon notes. I ended up passing my flight over to the hubs and our friend and they were most happy indeed. The staff was really nice and definitely into their craft.

Starting off with the good - the service was good. The manager had a lot of positive personality. In general, the service staff is trying their best and there's no negative attitude. Great ! The ambiance was nice. Business appropriate , date appropriate. Nice night out level. However, the food. The most important part of dinner. Sadly, it was a bit disappointing. - meatballs: tasted processed. Not made from scratch. It may be the blend or the seasoning or both, but this was not something worth ordering at all. 3 small meatballs. A bit on the dry side. - the mushroom appetizer. Hardly any mushrooms on the middle of the fried outside. Really it was a shell of fried outside breading and very little of what resembled the taste or texture of mushrooms. Pass on this. -fungi pasta - this wasn't bad, but not a standout. 3 stars. Probably the best thing I ordered. - short beef ravioli - I'm not trying to be critical or harsh but this tasted like something I can buy as a microwaveable meal at Trader Joe's. Huge disappointment. If I needed a nice place to discuss business , I may go in to get drinks and light food. But if you're a foodie , or remotely emphasize food as an important part of a meal, I would probably pass, at least for now.
