Okay. I originally gave it four stars in the winter because the seating was not ample but I have boosted it up to five stars for a few reasons. 1. I am completely addicted to their iced coffee, which I have experienced since the weather turned. 2. Their outdoor picnic area is very nice as well. 3. I purchased their bread as a gift and received a growler of beer as a return gift (must have been pretty yummy!) 4. The girls behind the counter are SO NICE. Even when they are breaking your heart and telling you they are COMPLETELY SOLD OUT OF EVERYTHING EXCEPT LOAVES. . Guys. This is serious. We were feeling like a pastry brunch and were too far from Guglhupf, so we decided to find some good pastry in Raleigh and stumbled upon Boulted Bread. This is definitely not your run-of-the-mill bakery-- you can tell that all of the pastry is baked fresh in-house and of very high quality (e.g. being able to clearly see flaky layers of puff pastry in some of them- impressive!). We got a ham and cheese croissant, a savory bread pudding, a chocolate puff pastry, and a peach bread pudding. They were all very tasty, but the peach bread pudding was a clear winner. Peach is an unusual ingredient in a bread pudding, but it works so well! We will definitely get this again next time. Tip to make this a five-star experience: Our only complaint was not being able to warm up the pastry since we were eating in. This can be easily remedied if the bakery installed a common use microwave so that people can warm up their food if needed. read more

Everything I have ever tried at Boulted has been amazing. I used to live on the same block and what I miss the most is Boulted Bread runs in the morning! My favorite is the savory bread pudding or ham and cheese croissant. My boyfriend loves the bialys. I have taken my mom here when she is in town visiting and she says the croissants are better than what she remembers getting in Paris. I can't believe how amazing this place is!! I mean so amazing that I would maybe fly to Raleigh just to go here to get some carbohydrates and delicious bread products. My college roommates and I were on vacation and rally together and went here for breakfast on our last day. We ordered the regular croissant, the chocolate croissant, a thing with onions and poppy seeds, Chess pie, and maybe for other things as well. We ordered and then I went back in to get one more thing that we hadn't tried because everything else was so good. The croissant is to die for! The chess pie is out of this world, the chocolate croissant, literally everything that touched my lips was the best thing that I've ever eaten. I lived in France and I've eaten at lots of places and this place is by far in the top three if not the top place to get delicious baked goods. read more

Boulted is an industrial modern bakery on the southern edge of downtown Raleigh. For me, it's the perfect place to pick up a nice baguette to accompany dinner and maybe a couple Escazu chocolate pastries for dessert. It's also a great option on the weekend to have brunch with a pastry and some fresh Counter Culture coffee. Since they've opened, they have expanded hours to 5 days a week and you can often show up later in the day and still have a great selection. One of our favorite places to grab breakfast downtown! We are on a quest to try all of their beautiful offerings but always seem to get hung up on the morning bun. I can't look the morning bun in the eye and pass over it. The morning bun is warm, sugary magic and the perfect way to start a Sunday. We've tried several other things that are also amazing and my husband usually grabs a savory bialy, because he's all about balance but a morning bun is a solid meal. -Awesome place to grab a late weekend (or weekday) breakfast! Although the space is tiny, there is indoor seating as well as picnic benches outside where you can admire the mini garden of hops and fresh produce grown as ingredients. -The coffee here is excellently nutty and fruity, but is a bit acidic. I'd recommend it hot over cold personally. -Food wise, everything here is yummy, but I'd say the ham & cheese croissant is the flagship item. We also really loved the seed bread, which tasted a lot like the best bread meets those addictive sesame candies. They have a nice selection of classics like quiche and choc croissants and some original creations such as an okra tart. My guess is that many items they are seasonal, which is the only way to go. -Everything about the vibe is very hipster, but the staff were super extremely nice and I loved that Boulted seems to attract all types of people from all over the city, from bikers to families to college students :) read more

I don't really know what I'm missing.. Maybe places like this just aren't my style. Seemed like everything we ordered was pretty dry and not very tasty. I was really hoping they'd have bagels. Why are there no good bagel joints downtown?? I ordered the ham & cheese croissant which seemed to be seriously lacking in the ham & cheese department. Mostly just a big dry croissant. I also ordered a cinnamon bun type deal. I could tell just by looking at it that it wasn't going to be the hot & gooey type that I typically like, but I decided to give it a chance. Kind of left me disappointed. My girlfriend had been wanting to go for a long time and by the end of eating our food asked me if maybe all of it was just old. Dropped by this bakery Friday morning to pick up some local carbs to indulge in with my hubby. I was a little bit surprised at the location, as it is in a sketchy area and some interesting peeps were wandering about. Ordered a loaf of Levain, Seeded Rye, and 2 Chocolate Croissants. The croissant was bigger than my fist and filled with a generous portion of Escazu dark chocolate. Buttery layers that flaked off with each bite -- it was the best croissant I've ever had! The Levain loaf only survived 2 days, as my husband and I made excellent BLT's on toasted slices of it. It's tang is similar to sourdough, but a bit more bitter. The loaf was difficult to cut and the outer coating is chewy. Toasting definitely helps lessen the tang. The Seeded Rye is super thick and hearty, moist, and chock full 'o crunchy seeds. It has a little tang to it and it's perfect with melted butter or a pimiento cheese spread. It's hard to cut and I don't recommend putting it in the toaster, as the bread crumbles. Definitely will be back to sample the weekend selection of pastries + quiche, as well as the baguette, seeded Levain, and ciabatta! read more

I haven't actually been to the storefront, but Boulted Bread makes an appearance every weekend at the Western Wake Farmer's Market! Here, they have a pretty nice selection of pastries, but it's their loaves that steal the show, especially the seeded rye! If you're as much a fan of German loaves as I am, you will absolutely love this bread! It's nutty, dense, and when stuffed in a brown paper bag, easily mistakable for a brick. That may sound like the worst critique, but when it comes to German seeded loaves, I'm convinced that the heavier the loaf the better, and the closer the resemblance to a brick...! Loaded with flax, sunflower seeds, and sesame, it's definitely a heartier bread, and a little goes a long way. Thankfully, this loaf could last up to three weeks if wrapped in plastic and stored in the fridge; however, considering how great it is...I'm sure it won't come even close to lasting that long! If you're out and about in Cary on a Saturday morning, I would definitely check out their stand at the farmer's market! And if you're not, hit up their bakery in Raleigh! Also the chocolate croissant and another dessert I can't remember (had sugar sprinkled on it). All were fresh, tasty and delicious. Coffee was good and the ice tea I ordered was infused with berry flavors and was tasty as well. Watching the fresh bread coming right out of the oven to the racks were cool. This bakery is so delicious! Their croissants are the best that I have ever had. My parents, brother, and boyfriend also say that Boulted Bread has some of the best croissants ever. They are so buttery and flaky which does mean a bit messy, but I don't care. Other favorites of mine are the Morning Bun which is pretty simple -- a sweet, flaky pastry with a little bit of orange flavor. The chocolate chess pie/tart is divine. And, don't forget the bread. The bread is some of the best around. I love supporting local businesses, and this business is definitely worthy of support. One of my favorite weekend activities is to take a long walk around downtown or the historic Boylan Heights neighborhood with a stop at Boulted Bread. Boulted Bread is a small bakery and coffee shop near Boylan Heights in Raleigh and they make some of the best breads and pastries in Raleigh. I am very impressed with their bread and the seeded levain bread reminds me of German bread with the hearty flavor and heavy texture. The baguettes are very crisp and fresh with each time I get one it is still a bit warm and oven fresh. When you drive down from Boylan Heights, you will see the colorful mural on the side of their building with a few outdoor benches. The shop is very small and they have a few seats inside and then the counter and kitchen in the back where all the baking happens. Everything is made fresh in the bakery and the menu is simple. You have to try the morning bun and the cinnamon sugary sweetness is just heavenly. Most recently I tried a croissant pastry filled with apricot jam and it was also the perfect amount of sweetness an the crispy croissant flakes just crumble on the plate. The staff is very friendly and very proud of their creations. I follow them on social media and Instagram is a great place to see what they are baking and when they go on vacation. Definitely check them out when downtown and you can take a nice walk from Boylan Bridge through the housing area and end up at Boulted Bread. They are closed on Mondays and Tuesdays yet are one of the only bakeries open on a Sunday. I also go to Western Wake Farmer's Market on Saturdays and you can find the same gentleman selling Boulted Bread items there on a weekly basis. It saves me a trip downtown and a great way to find their breads in Cary. They serve their bread at some of the best restaurants in Raleigh (Standard Foods, Mandolin, Stanbury, etc) and I love when a restaurant pairs up with the local bakers and farmers to serve their best creations. read more

The bakers are sooooo skilled with pastry dough! Once you've tried the best bread in the Triangle--daily choices are levain, ciabatta, French baguette and a seeded rye--make your way through each pastry delicacy. Their croissants and star shaped fruit Danishes are so buttery-flaky. Same for their apple turnover. Heavenly good! I have been to France twice and have always searched for the same buttery croissants when I return home. That search ended today. The croissants may be a little pricey but they are worth every penny.
