Our party of 3 thoroughly enjoyed Botanist. The resistant ambiance was excellent, with modern natural vibes permeating throughout. The food was excellent, with all dishes being beautifully presented and above average to excellent in quality. I loved my bison tartare and lamb. The service was the real standout, especially by the sommelier who recommended some amazing that were not otherwise on the wine by the glass menu. It was a real pleasure to dine at Botanist and fully expect that they will get a Michelin star rather than merely being recommended on the Guide.
Service from the first interaction was spectacular! Came to the restaurant straight from the airport, so had my carry-on and backpack with me. Arrived a bit earlier than my reservation time, so the hostess asked me to take a seat in the front lounge area while my table was being set up. She asked if I wanted a Welcome Drink of sparkling wine, but I let her know that I don't drink, so she assured me that there were other options for me since Brunch comes with two drinks. A few minutes later, she came back and asked if she could check my bags in for me, which was so helpful!!! I was then taken to my table and warmly greeted by Jess. She explained that there were two options for the Brunch menu -- 2 or 3 courses. She then asked what drink I would like and when I mentioned that I don't drink alcohol nor anything carbonated, she mentioned that she could get a mocktail without soda or I could get coffee/tea/juice instead. I was already ready to order having taken a look at the menu before my visit, so she promptly punched it in, and my first course came out soon after. Beef Tartare was a good portion and tasty. The lobster in the Benedict was cooked right! Not rubbery at all and egg was the right amount of runny. The dessert was also not too heavy, so a great way to end off the meal, alongside the green tea I ordered. Did not feel awkward or out of place as a solo dinner. There was also a DJ playing music the whole time, so it made my overall dining experience an excellent one.
fourth time at Botanist and 2nd at their bar! I had the cuban eight, it's earthy and aromatic, good balanced with rum. My friend got Rojina hightball, clear texture, sweet with signature Santori whisky taste. The miso caramel chocolate mousse was definitely my favorite! Especially the black sesame semifreddo, love the creamy taste! Better experience than last time:)
Late brunch at the Botanist on a Saturday. The place is known for their tasty cocktails but they also have a nice brunch with 2 drinks included. You are greeted with your first drink, a glass of sparkly wine, you can make it a mimosa with some orange juice, they also offer grapefruit juice to add in. With your glass in hand you head to your table to choose your brunch dishes. The menu is standard, you can get a starter, main and dessert or just starter and dessert. The price difference is not that big so we chose the 3 courses. To start I had the beef tartare, it was very nice. The BF liked his truffled mushrooms on toast. I really liked my main, the torched salmon. Loved the sauce and seasoning. The BF had the lobster benedict which was also lovely. One cocktail is included in the menu. I ordered the Pacific Rim gin and tonic. It was amazing! The BF had the Me time, also very good. Clearly an amazing choice of cocktails. To finish, the desserts were amazing. Really beautifuly executed. Very good place for a date or a boozy brunch with familly and friends
What a beautiful and delicious spot for a great brunch. Every course was amazing- I started with the charcuterie board that was excellent with a good complimentary cute of champagne and 2 nice it's of orange juice in case you preferred a mimosa- very nice touch! Y lobster eggs Benedict were perfect and the strawberry milk ice cream was spectacular! Loved my dessert! Everyone was perfect!!
I had a wonderful visit to Botanist, a beautiful and friendly bar inside the Fairmont hotel on the Vancouver waterfront. Bartenders here really know what they are doing and are fun to talk to. I had a delicious champagne drink infused with bergamot. Or maybe I had two. Also had a good cheese plate and some great conversation. You need to stop by this bar if you're ever in Vancouver. It does not disappoint!
Had city course lunch set - steak + pan seared steak. Wife loved the squid, thought it was okay Steak was pretty good - onion jus + fried potatoes were really nice Drinks - cactus kiss and bergamot bubbles, latter was especially fragrant Service was attentive and prompt Ambience wise - great decor, nested in Fairmont hotel - nice upscale vibe
The bar at Botanist is one of my favorite bars to visit whenever I'm in Vancouver. It is located in Fairmont Pacific Rim hotel. Even if you decide not to drink or grab a bite there, it's worth checking out the hotel. The bartenders are always personable and attentive. Looking forward to returning to try out their main menu. So far I've only tried the desserts and those have not disappointed.
(4.5/5) I've been to Botanist a few times prior and enjoyed every time, especially for the wonderful service and ambiance. The restaurant is located in the Fairmont Pacific Rim and has one of the most gorgeous interiors I've ever seen. As per its name, there is lots of greenery inside with beautiful lighting and artistic accents on the ceilings. We came in to celebrate my gf's birthday last Saturday. As my friends were running late, I started with a drink. The drink program here is famous and I didn't expect anything less as my cocktail (what the flower) was fresh, zesty, but fragrant and sweet. The server was quite busy during this time, but when my party arrived, he immediately stopped over to take our initial orders. We started with a few appetizers. The pan seared scallops were accompanied by these delicious crispy and flakey potatoes. The grilled octopus was tender with the perfect amount of chewiness and paired nicely with the creamy polenta. The beef carpaccio was recommended by our server, but I do think I've had better elsewhere. It was beautifully played and I could see the ingredients made for fine textures, but I may just prefer a bit more acidity. My vegan friend also ordered the cauliflower. I got to try the vegan xo sauce and it was delicious! One thing I really like about Botanist is their ability to incorporate many varieties of garnish and side ingredients to make a perfect garden of flavours and textures. This elevates the dish and sets it apart from other places. After the appetizers, the server stopped by with some bubbles as a birthday treat and to fill the awkward pause between appetizers and dinner (the restaurant was quite busy that night). We were appreciative of the gesture and thought it was very sweet! As main courses began to flow in, we were surprised at how the dishes satisfied both our eyes and our taste buds. Among the dishes, the sourdough crusted chicken really impressed me. Although the chicken looked dry, it was actually moist and flavourful. I liked the truffle flavour and sweetness of the burdock. Another interesting element came from the duck breast. We believe it was mushrooms that had been sliced into paper thin pieces to imitate pasta. This was unique and interesting, but also quite enjoyable. My vegan friend ordered an off menu item and she described it as sautéed mushrooms and onions formed into a ravioli with some gravy sauce. It was good, but nothing outstanding. We finished our meal feeling very full. Dessert was a hill we had to climb over. We ordered 2 desserts, one vegan and one regular. The server suggested the squash and pear terrine as we didn't want something too sweet. Oh how amazing it was! The outside was made of a thin cookie that reminded me of a specific egg roll snack I used to enjoy. Inside contained the subtle sweetness of the squash cream. And finally, mushroom ice cream to finish! The ice cream was mostly sweet with a subtle aftertaste of mushroom that I can't quite describe, but it's definitely a must-try for more open minded and adventurous dessert lovers. The final bill was hefty, but the experience, precision, and care put into every element of the night made it worth it for a once in a while splurge. Beautiful food, drinks, and ambiance - what more could you ask for!
The botanist was refined from the moment that I walked in; exactly what I look for when going out. I was lucky enough to be seated in the booth right next to their huge open kitchen. It truly became part of the experience, being able to meet into all the different stations and watch the chefs at work was such a pleasure. The best part of my meal was the lobster risotto. It was creamy and rich. You could tell that the ingredients were fresh and natural. There was a high level of detail, quality, and creativity from the kitchen. They definitely seem like they're gunning for Michelin star and with their standard of service, I hope that they get it.
Had such a great time! We had made a reservation, thinking it was for the bar. But their cocktail bar is first-come, first-serve. Reservations are for dining. So we ordered a couple small bites, while waiting for seats to open at the bar. Their appetizer sourdough bread was amazing! Made in-house, and a sizable loaf. Beef carpaccio was delicious. My husband and I were fighting for the last bite, haha. Flavors were incredibly well-balanced. Scallops were ok. Think they tried to do an Asian tom yum flavoring, which didn't work well, imo. Took away from the scallop flavor. Now, the experimental cocktails are where it's at! Pricey, but worth. Because these were some of the most elevated drinks with lovely small bite pairings we've ever had! Really, what an experience. And I wanna go back just to try the rest of the cocktails. ;)
Incredible. If I have anything less than complimentary, it would just be about their choice of artwork in the private dining room. A little bizarre. That aside, every dish was perfect, the timing was spot on, and their wine and cocktail list was extensive. The service was impeccable, but we had the private dining room with a fixed menu. Highly recommend!
Cute spot with a private room. Delicious breakfast here. Clean and tons of greenery. Good cofffee and solid breakfast. Worth a visit or for hotel breakfast. Reasonable prices for a fairmont. Bacon was American bacon. Eggs are decent portioned seemed like 3-4. The toast was the best by far. Slightly moist and really tasty with butter!
Went to brunch with my friend for my birthday! The set comes with an appetizer, main, coffee/tea, and a beverage. For the appetizers, we got avocado toast (without cheese and butter to make it vegan) and burrata salad (which I loved!). The salad was mainly cheese it was so creamy and melts in your mouth. The olive oil and salt was such a good dressing. The avo toast was pretty good too, the spread itself was flavoured very well that it almost tasted like cheese?! For mains, we got the mushroom eggs benedict! This was pretty good too. Lots of potatoes I was so full at this point. I got a latte and then their mocktails, which were very refreshing. This brunch set is on the expensive side but on special occasions, it's okay to splurge! It's such a lovely space, I loved their decor. Very modern and pretty. Also, the staff are very accommodating to my friends dietary restrictions! So they were able to make it vegan. PS. My friend told me that they have SO much more vegan options for dinner. Brunch seemed to be a lot more limited.. read more

This is, by a notable margin, THE best restaurant I've tried at this Michelin-star-y price-quality tier in Vancouver (I tried a handful of others during my 2 weeks in Vancouver). It's always been a delight to travel and visit places partially just to see the sorts of craftsmanship and creativity when people combine ingredients with technique, and the Botanist has delivered this in spades. I got the "We'll Take It From Here" (118 CAD) with wine pairing (60 CAD) and every every taste was a delight. Spoilers ahead - it was great going into this without expectation, so read the courses at your own peril! ===set menu spoilers=== Bouche plenty amused, 1&2: a ceviche atop nori cracker, incredibly balanced. Had an excellent, drinkable white. Hearty bread with a soft center and rich, artisanal butter. Salad: fresh produce-of-the-day tossed with a balanced citrus vinaigrette. I mean... it's a perfect salad coming from a restaurant that calls itself the Botanist. MOST AMAZING Appetizer: incredible dish of tender scallops atop roasted corn, floating in this buttery sea foam. This is prob the best dish I've had this year and is a surreal showcase of local ingredients paired with what I assume is New Canadian style -- I've never had anything quite like it. If you're not doing the set menu, PLEASE AT LEAST ORDER THIS DISH SOMEHOW. Protein 1: halibut atop a split pea reduction and some other veggies. Perfect execution, mild character. Protein 2: roasted duck with a savory tart. Again, good execution, just not super exciting. Not-a-dessert: an exquisite water buffalo ricotta drizzled with honey. Simple and elegant, perfectly showcasing the textures and qualities of both. Dessert: deconstructed berry crumble with a sorbet -- prob a stylistic choice, but they chose to finish the meal clean, versus kicking your ass with some heavy cream or dark chocolate thing. Refreshing and delightful. read more
I had an amazing experience dining here! We got the garden table which is good vibes and next to the live piano. Both the cocktails and the food were awesome. Their cocktails are some of the best I had. Definitely deserve one of the top spots on this best cocktails list I looked at. For food, we got scallops, this tartare pizza thing, duck, and lamb duo. All were so amazing! I definitely will come back. Highly recommend! read more
This restaurant is located within the Fairmont Pacific Rim hotel. Had a reservation for one, but as I arrived right at open, I don't think I really needed one. However, the restaurant did start to fill up shortly after, so do make a reservation in advance if you want to dine during prime time! I got to sit right by the kitchen, which has an open design, so I got to see all the action! What I got: - sparkling water - glass of pinot noir: Can't have duck without the wine! - salt roasted beet salad (manchego cheese, pecans, maple syrup, compressed pears): I was a little confused when this came out, as it was covered - I mean, COVERED - in shaved manchego cheese. But after shifting some of the cheese, I uncovered the beautiful beets and pear pieces. Lovely salad to start my meal. - dry-aged duck breast (roasted onion, tamale, salsify, red mole): This is the sole reason I wanted to come here, and it certainly did not disappoint! The crispiest duck skin around the perfectly cooked medium duck breast. A little pink in the center, indicating perfect temperature. A texture balanced between juicy and crispy that was impressive - I would come back just for this entree. A lot to eat by myself, but so worth every bite! I had excellent service from start to finish during my dining experience here! Would highly recommend during a visit to Vancouver! read more
Pretty elite ... Loved the painting on the wall, the live music on the bottom floor with the piano. Def a great vibe. Wagyu burger slapsssssssss. Def recommend going a lone if you wanna look like a boss: edit: Service was incredible. Super patient server. 5/5 read more
Love love love this place. Definitely recommend it if you are in the mood for a fancy brunch. The ambience is so pretty and the food is delicious as well. The set courses with multiple options make this brunch a unique tasting menu experience. All the food we had very delicious (mushroom toast, croissants and eggs Benedict) and the portions were pretty generous as well. We definitely had leftovers to take home. Overall, wonderful brunch place in Vancouver. read more

Wow - what an experience tonight at Botanist! Drove up for the weekend from Seattle specifically to try out this restaurant. Ambiance was superb! All staff was on top of their game. Never had to wait - always attended to. From the friendly greeting at check in, to the many servers who offered to assist throughout the night. There was a professional piano player who was fantastic - truly gifted. There was such an energy here. We sat in the garden, it was pretty and went with the theme so I get it, but it gave us cafeteria vibes with the tile floors and felt separated from the rest of the restaurant - seemed nice in theory but I couldn't help wanting to be at another area looking out at the twinkling lights on the trees outside. This place is fancy - and we were ready to go all out and be surprised with an evening of chefs choice tasting menu. It was six courses. You can customize to your diet - we did regular and pescatarian. The menu has many vegan options so I think they would be very accommodating toward that if you are vegan. Complimentary bread and butter - it's amazing and local! The wine was great but we didn't care for the cocktail and ended up getting an old fashion and it was really good. All in all - really impressed and had a lovely time treating ourselves to a night in Vancouver at Botanist. I really want to share that the star of the night was the dessert. The mushroom marshmallows gave me a whimsy of peeps for Easter but much more elevated and the main dessert was probably the best dessert I've ever had. I was told this chef is Chef Kate and her team. Chef Kate is extremely talented and I would recommend coming here for the dessert alone. Thank you! read more
The food here is amazing. I have come for brunch and dinner and neither disappointed. The menu changes seasonally but you can't miss. This time I got the lobster, the beets and one of the desserts. I was so happy with my choices. read more

Phenomenal brunch experience in a soothing atmosphere with a great vibe. From beginning to end, this is what a premiere brunch should look, feel and taste like. Service was top-notch as were the brunch cocktails: Well balanced and tasty. My wife claimed this meal was in the top 2 or 3 that she ever had...and I was hard-pressed to recall any better. Pro-tip: Get the raspberry curd croissant! read more

Lived up to the hype! From start to finish our experience was perfection. We had Chris taking care of us and we were in very good hands. He completely made the experience for us. Chris was so helpful with drinks and food. I am so upset I don't remember the name of our sommelier, he was wonderful and totally went above and beyond. I was worried the drinks would be too floral for me, however, I found them to all be very mild when it came to the floral notes. The food was everything you could want in a contemporary fine dining restaurant. Every bite we had was exquisite. Nothing was out of place or missing. Our table enjoyed the Wagyu Carpaccio, Charred Octopus, seared scallops to start and the duck, steak and lamb as our entrees. Not one of us had any issues with our meals. The bread and butter were also delicious, I will definitely be driving out to that bakery to get some of the bread for our home. I would highly recommend for any of your special occasions or really any occasion. read more

Years ago, we walked by this restaurant and I promised myself I'd come here when I return. Here I am, finally leaving a review I've been looking forward to. The staff at the Botanist is thoughtful, attentive and very kind. The #1 rated bartender in there world designed the cocktails here. No wonder this is the BEST espresso martini I've ever had. We came out to celebrate my sisters birthday. It was a whole weekend celebration. We got seated immediately. I recommend making reservations. We did the 3-course menu each. Our server was kind to surprise our 3rd guest with a complimentary glass of white wine. It was delicious! We ordered pastries (house made jam is to die for), burrata salad (so fresh!) for our first course. Our second course was the Benedict, which literally melted in my mouth, and the lamb dish. At first, I couldn't understand what this dish was all about. The moment I tried it, my eyes grew big. It was mouth watering and flavor out of this world. This dish deserves to a standing ovation. Both desserts were unique and delicate. What I enjoyed most was the ambiance, views and scenery indoors. It's like a garden. So beautiful and exactly how I want to spend my Sunday afternoon. Thank you for making our first experience so memorable. We will be back. read more

We saved Botanist for our last meal in Vancouver and very happy we did. The food here was beautifully made and truly delicious. A veggie foodie's dream. We started with burrata salad that was creamy but not too heavy and topped with perfectly fresh vegetables--I remember being most impressed by the flavor packed in the carrots. The octopus was definitely worth it. The halibut was light, buttery, rich, and well-portioned. The chocolate cake is accompanied by kisses of charred chocolate that have to be tried to understand. I think my drink was the Meadowland Tonic, easily the best cocktail I've had all year. read more

An exceptional night with excellent service. Had a dinner for two. Botanist is great for business dinners or a night out with friends or a spouse / date. Filip was our server and he was attentive, friendly, and personable. Recommended: - Go for the cocktails. Much Needed Escape, Lost in Translation, and Council of Trees - all fantastic. - Starters: loved the Grilled Octopus and the Duck Prosciutto wrapped Scallops. We also had the Smoked Carrot salad, which we enjoyed. - Entrees: I had the Pork Chop in the Mole sauce. The sauce is delicious. The dish used to be a duck instead of a pork chop. The duck was better, but the pork chop was still good and the portion was a good size. My guest had the vegetable ragu, ricotta salata, pine nuts, basil, CAVATELLI - and loved it. - We had three desserts (yes, three): highly recommend the WARM PEAR CRANBERRY TART and the APPLE PECAN CAKE. The four chocolate squares, we would recommend passing in in favour of the aforementioned. Thank you Filip for the awesome suggestions and guidance. Wishing you and your wife all the best. We will be back. read more
Botanist is one of the most beautiful spots I've visited I love the interior and decor, as well as the amazing service we had. We came for their weekend brunch which consisted of choosing an appetizer, main, dessert, as well as sparkling wine and a handcrafted cocktail to accompany your meals For the price we paid which was $62 per person, it was definitely worth it since you also got sparkling wine and a cocktail of your choosing. This spot is definitely a must visit if you're looking for upscale brunch, for a girls day or to take someone special. Reservation is a must which can be done easily online. IG: Ayenomz read more

This place was amazing. The ambiance, the food, the service. I ordered the salmon, which was amazing, torched to perfection and raw in the middle. Scallops were also amazing, also perfection. And I borrowed a bite of my dinner mates pork chop, holy mole. So delicious. Beet salad (not pictured) was also refreshing. And the dessert was such a decadent surprise - was expecting the typical cake with chocolate mousse topping etc, but no, this came in cute little cubes each concoction with its own home. My dinner mates didnt want to order it but they were also pleasantly surprised too. Oh and the drinks, my blue moon mocktail was nice, fruity, but a bit sweet. It actually would have been good mixed with my Perrier. Highly recommend overall, would return. read more

We came for brunch. You can choose between 2 courses for $62 (apps/main or main/dessert) or 3 courses for $68. We opted for the latter as $6 for a nice dessert is a deal. Our server was fantastic and gave us really good recommendations. : Poetry in Motion: It's a sweeter drink which I appreciated. Very tasty. Verdant Vista: The most well-balanced drink. It's a bit heavy on cucumber but we both thoroughly enjoyed it. Burrata Salad: I love the textural elements of this salad. There's soft, creamy burrata; chewy smoked beets; crisp radishes; and olive crumbs. Beef Tartare: The bread was a bit too dry for my liking but the flavours of the entire dish were still good. : Bartender's Whimsey: This is a 'drink of the day'. On this day, we had a Spicy Mandarin Gimlet: a clarified milk punch that looks clear, smells like mandarin, and tastes spicy when you drink it. I haven't had anything like it before and it probably had to be my favourite drink due to the technique and taste. Velvet Morning: A creamy and rich espresso martini made with tequila instead. Crab & Avocado Benedict: It's light on the crab, but generous with the avocado. Eggs were perfectly soft poached and potatoes were good too, but could have been crispier. Steak & Eggs: I loved how the potato was prepared: super crispy and flavourful. The salsa verde was fresh and the steak was well prepared as well. You can choose how you want your steak and eggs prepared. Milk Chocolate Hazelnut Mousse: They were all good but very, very rich. Tropical Fruit Vacherin: The only thing I didn't like was the meringue (?) which was way too sweet and a bit overwhelming. Everything else was incredible and had the perfect balance between sweet and tangy. Overall, between the good food and friendly service, we had a great time. read more

thanks to covid i have waited abt 2 years to be able to try this restaurant out for my bday dinner. thank you a for being my company for the evening. arriving at the restaurant and checking in was smooth as ice. i got a warm welcome and a "happy birthday" once they realized it was my actual bday. we were given a 4-seat table but opted for a smaller 2-seater closer to the window - we didn't want to occupy such a large table with just the 2 of us. a and i, ofc, did our homework and reviewed the menu. we decided to do the "we'll take it from here" aka the tasting menu. our server, avital, was super awesome thruout the evening - she was helpful, cheerful and knowledgeable. she also wished me a happy bday and didn't sing at the end when i got my dessert (contrary to a's wishes). for drinks, a had the rosé and i started with the meadowland tonic. my drink was light and refreshing; the thyme twigs def adds a nice aroma to the drink - it hits you at every sip. we then had the le vieux pin cuvée violette syrah - it was a nice match to both the seabass and the striploin. now onto the food! the tasting menu consists of 5 courses and substitutions can be done. both a and i don't eat lamb so we got striploins as the substitute. we also wolfed down 4 plates of the fife bakery bread and house made butter - it was just THAT good. wagyu beef tartare with caviar was the appetizer. presentation was nice but we both found the tartare to be lost in the cheese foam. the potato nest on top was very crispy and added a nice contrast to the soft texture of the beef tartare. cold pea soup with truffle foam, almond crème fraiche and artichoke. this was a sight to behold as the pea soup is poured after avital introduced the dish. the pea soup was essentially like biting in a pea, and while peas are not my fav - this soup was palatable. the artichokes added a sweetness to the dish - it helped to cut the richness of the truffle foam. the one that i would pick on is the nori crisp - i found it to be too fishy. seared scallop with shiitake served as the dish before our 2 mains. the artichoke provided a crisp to the overall dish. the scallop was nicely done and i really enjoyed the shiso pepper sauce/paste - a nice kick but not too much. charred seabass the crème de tigre was the highlight of the night. we both thoroughly enjoyed this dish. the sea bass had a nice charred, smoky taste. when combined with the sauce (coconut milk and parsley-heavy, it added a nice savoury taste to the rather bland fish. the radish and onions added a tang to balance out the richness of the fish oil. we loved this dish the most out of the menu. then came our other main, the striploin with celeriac gnocchi, blue foot mushrooms and rapini. the striploin was on the smaller size but it was done so well - it was perfectly seared, juicy and moist. the peppercorn sauce tied everything together. i didn't like the earthiness of the rare blue foot mushrooms, and same with the light bitter aftertaste of the rapini. the gnocchi was crispy yet soft in the inside. we were then given a palate cleanser - water buffalo ricotta with wildflower honey and a pinch of salt. we were both surprised with the texture of the ricotta - it was very creamy and it felt we were having yogurt! the wildflower honey def steals the show - so fragrant and sweet. lastly, the dessert - with the added touch of a bday candle for yours truly - was madagascar vanilla cream pudding with cardamom crumble, rye donut and carrot sorbet. i was a bit taken back with the carrot sorbet but i actually liked it the most out of this dish. the sorbet was very fruity - orange/citrus note heavy. avital told us to have all 3 things in one bite, which we did. the dish reminded us of fall and pumpkin spice lattes. the cardamom crumble along with the rye donut def helps to create this. the botanist experience was truly exceptional and spectacular! i enjoyed my night so very much and i look forward to coming back on another special occasion :) read more

We went to Botanist for breakfast and were beyond impressed. So much so, that we came back the next day - and ended up ordering the same items (and I am usually someone who always wants to try new dishes, if that says anything about how delicious they were). The Salmon Tartine seems like a relatively simple dish, but the sourdough bread blew me away, and I loved the way the tangy neufchâtel, pickled onions, and capers complemented the salmon. My hubby loved his crab and avocado eggs benedict, and the breakfast potatoes were perfectly crispy. Also, the raspberry croissant was beyond perfect and is not to be missed. Our server, Mihaila, was as sweet as can be, and gave us some great recommendations for other things to do in the area. The restaurant itself is beautiful, and we hear that we'll need to return for cocktails. read more

I came here for dinner recently. I enjoyed the plants in the restaurant and the overall decor. In terms of food and drink, I tried their Lost in Translation, Lamb Rack and Lamb Belly Duo with Tomato Fondue, Puffed Grains, and Lamb Consommé, and Salt Roasted Beets with Balsamic Vinegar, Goat cheese, and Walnuts. The Lost in Translation was a bit strong with a tint of sweetness to it. The Lamb had a variety of texture to it: The belly was rare, tender, a bit fatty, but not greasy. The rack was rare/medium rare with my preferred balance of meat to fat. The rib piece was lean and nicely grilled to fully cooked. The Tomato Fondue helped cleanse the pallets a bit and added a slightly different flavour to the meal and the Consomme added more flavour and complemented the meat. The beets were really sweet and nicely cooked. The balsamic vinegar, goat cheese, and walnut all complemented this dish. read more

Of all the places we visited in Vancouver, Botanist was the one I most looked forward to visiting. After enjoying both brunch and for drinks here I can happily say they did not disappoint in the least. The restaurant is located on the second floor of the classy Fairmont Hotel right by the water. When you walk in you are immediately transported into a crisp clean and modern garden sanctuary. The hallway leading to the main dining room had private rooms with plants cascading down the walls and a long bar with pastels complimenting the contemporary black chairs an metal accents. The main dining room is stunning with floor to ceiling windows with no ubiquitous intention for diners to look out and enjoy the view, but instead the soft gauzy curtains help to create the transformation of your surroundings. The windows allow a gorgeous soft natural lighting into the restaurant which compliments the gentle pastels, the array of plants, and the clean modern decor. Our service both times was excellent even though the night we were there for happy hour we were tucked out front in a small nest of chairs. Each time our servers were very attentive and aware of what gluten free items I could have. For breakfast I enjoyed a crab and avocado benedict on gf bread, it was delightful. The husband enjoyed his eggs with bacon and crispy potatoes which were all cooked to his liking. When we stopped by for drinks over the weekend, we devoured the pork belly which was beautifully plated. Everything really exceeded expectations. From atmosphere to plating to food quality, it was like dining in and eating a work of art. A delicious work of art I might add. read more

Came with my family for the Christmas brunch - three courses with 2 alcoholic drinks at $86pp ($20 more than a typical brunch). Everything was delicious, the ambience was beautiful, and service was friendly and attentive. Drinks: We started off with mimosas all around - which was not light on the sparkly! -Spindrift 3/5 - just tasted like a citrusy IPA. Could not appreciate the rum. -Eggnog (holiday drink) 5/5 - super yummy. It was sweet but not overbearing -Espresso martini 5/5 - very well made; smooth & coffee forward - I could do many of these -Blueberry mocktail - 5/5 - forgot what this is called but it had blueberry and thyme. Very refreshing Appetizers: - Salmon tartine 3/5 - of all the apps, this was the least impressive. It was fine and well made, but not memorable - Beef tartare 5/5 - melt in your mouth deliciousness. The smoked egg on top added an extra hit of sharp umami that worked great with the toasted bread - Polenta w poached egg 4/5 - perfectly cooked with great texture and flavor, but nothing too special Mains: - Lamb belly poutine 3/5 - I was very excited about this one but it fell short. The lamb belly pieces were cm-sized and pretty dry and the fries were too deep fried. Good flavor though and the eggs were perfectly poached - Prime rib 4/5 - Good cuts of meat, came out medium rare. Tender and juicy. Included mashed potatoes and a root blend that were both quite tasty - Lamb leg 4.5/5 - One of the cuts was super tender and juicy (which may have made the other one less impressive!). Same sides as the prime rib - Crab & avocado benny 4/5 - very crab forward and moist. Each bite was well balanced. Desserts (all 4/5): So beautifully presented! Each of these were too pretty to eat, and a great play on textures, flavors, and trial & error in finding your own balance of flavors - Hazelnut mousse - Fruit vacherin - great if you like tart things - Citrus cake - did not taste the citrus in here but it was lovely read more
I loved this place! Great service, friendly staff and food that was not only delicious, but beautiful! Only thing I wasn't pleased with is the plating fee of $5 per person if you brought a cake for birthday celebration. The decor is beautiful, elegant and lush. Kind of like being in an enchanted english garden. I had a full brunch course. It came with 2 drinks. The first is a bubbly, 2nd is one of the 3 signature cocktails on the menu. They are known for their unique drinks and they did not disappoint. I had the season's renewal. It was amazing! They even stamp the ice with their logo. It was beautiful. The course also comes with 2 plates. One each from morning stretch and late riser. I had the beef tartare from the morning stretch and I savoured each and every bite as it had many flavors. For my late riser, I had the crab and avocado benny. It was amazing and perfectly made. I enjoyed this plate to it's full potential. I will definitely be back. read more

A very unique dining experience from the beet steak -- yes a beat seared to perfection that while a vegan dish somehow took on the flavor and texture of a steak -- to a remarkable actual NY Strip that was exquisitely prepared and almost melted in my mouth! The pan seared scallops with romanesco, duck prosciutto, bordelaise, and watermelon radish, were the most delectable scallops I've ever had anywhere. My only suggestion is make this an entrée option on the menu please! Now there was a cocktail on the menu worthy of mention: "Poetry in Motion" aptly titled. This cocktail was memorable! Premium Vodka, grapes, lemon, ELDERFLOWER & RHUBARB! Absolutely spectacular! Finally, save room for a light but decadent dessert-- Citrus Olive Cake!!! read more

Beautiful ambience and food presentation. Service is also good, although it looked like the restaurant was a bit understaffed during rush hour lunch service. Overall we really enjoyed all of the dishes and the good service. read more
