Dined here based on a recommendation from a colleague. It is located in the Fairmont hotel near the waterfront & is spacious & airy. We decided to order from the tasting menu & it did not disappoint. Each entree was a piece of art that was thoughtfully prepared from the presentation & garnishes to the combination of the right pairing of accents to highlight the taste & texture of the main. The bread appetizer was warm & buttery, had to resist filling up on it. Favorites were: Chicken amuse bouche - so very tender & too pretty to eat Gazpacho with basil sorbet - chip garnish provided a nice light crunch & the basil sorbet provided a cooling sensation, could've eaten it just by itself in a bowl Halibut in smoked buttermilk - tender, not fishy & light milkiness/creaminess from the buttermilk, the herbs enhanced the neutral taste of the fish Butter infused candy cap mushrooms - light caramel tasting foaminess, quite the experience Service was thoughtful & attentive without hovering. The Botanist is located in the Fairmont Pacific Rim hotel toward the north side of Vancouver. It's ranked as the 19th best cocktail bar in North America. We had a few exceptional cocktails served by a mixologist and a few good glasses of wine served by the sommelier (I think he was a sommelier, not sure), both of whom were passionate about their drinks and service. We tried the Cabernet Franc and Pinot Noir as I don't typically drink a Cabernet Sauvignon on its own and we didn't order food. We also tried a custom made tequila drink with a hot pepper kick to it. The bar itself has an interesting design though it is directly off the hotel space, no real separation. The outdoor area was closed for the evening. I do think The Botanist deserves a high rating but the need to rank cocktail bars on an arbitrary scale is a bit unnecessary (we love to rank everything nowadays, I think it makes the rankers feel special). There are so many great cocktail bars all across our continent, really what's the difference between cocktail bar ranked #9, #19, or #29 for that matter. They're all good. read more

Restaurant in Fairmont Pacific Rim, a beautiful five star hotel near waterfront in Downtown Vancouver, BC. Lovely environment with both open vibrant dining room and semi private areas good for business meetings. When you arrive, get there early as they have some very nice bar and couch seating to enjoy wine or cocktail before dinner. Food was excellent. We had scallop, octopus and beef carpaccio appetizers. We couldn't even find our waiter at some point and had to flag down a different one. To be fair, he was way too busy with a lot of tables, so its more of a management issue than the servers fault. We recently made reservations at Botanists and was pleasantly surprised by the delicious brunch and the wide range of menu selections. The quality of food was very good and the cocktails were on point. The service was excellent with our food being brought out in a timely manner and the items on the menu were explained to us. The Tagliatelle is just heavenly. Creamy pasta heaven. No negatives just fan-freakin tastic. First time I ordered it, I shared with a friend and we both were battling a little bit (to get the bigger fork full). Second time I refused to share and my date and he ordered his own. He loved the mushroom "soil". I loooove the depth of flavour the textural dance and the fact that is the THE BEST VEGGIE PASTA IVE EVER HAD. Perfect bite, perfect fresh pasta with everything you'd want to accompany it: This is a flawless example of how mushrooms can replace meat as a base for a cream sauce and produce something just as flavourful as a carbonara. I pray they never take this off the menu. The cavatelli is completely different texturally and is satisfying in a different way. Chewier crunchier, more of a contemporary pasta experience. You can definitely tell the chefs put effort into both dishes, and exercised different skills in these two pasta plates. Side note both times the wait staff were informed, helpful and a pleasure to chat with. My only down note is architectural, the washroom is a maze to find, and always prevents us from drinking more when we visit. I highly recommend for the special date night, or girls night....I frankly would probably even dare to dine alone, since the service is excellent and the food is heaven. Ps. We had breakfast at the botanist every day as well as we stopped for drinks one evening. I love everything about this place. Selection, decoration, service! Egg Benedict with crab and salmon both were our favorites. Don't skin detox juices, we tried them all. Pistachio croissant wins the almond one but both were delicious. Crispy potatoes on the side is such a great addition. Fresh fruit bowl is pricey but it comes with home made whipped cream and fresh berries (specially during winter). We also had amazing coffee there and gravlax and avocado toast were both amazing. This is my favorite place for breakfast in Vancouver! Came to this beautiful restaurant for dinner and breakfast the next day while staying in this hotel. The chefs tasting menu for dinner was really amazing. It can be customized for any allergies as well (I had it without seafood). The cocktails are beautiful (recently voted #2 bar in Canada) and they are very on theme. The room is beautiful and the vibe is perfection as well. Breakfast was also fantastic, with friendly sunny staff and lots of options to fit any dietary needs. The view here snd the way the room is filled with sunshine in the morning is just wonderful. Came here for a birthday brunch and were overall very impressed! We ordered the homemade burrata salad and the cheese and charcuterie to start, and the crab and avocado benedict and the pulled lamb spaghettoni as mains, with the tropical fruit vacherin to finish. We also ordered the indigo harvest and velvet morning cocktails, which were included in the $62 brunch set along with two glasses of sparkling wine. The cocktails were vastly different but both delicious. I would recommend the indigo harvest if you want something fresh and fruity, and the velvet morning if you want to start your day with a boozier starbucks latte. Both starters were made with extremely fresh tasting ingredients and the dessert's tartness was perfectly balanced with the sweet meringue which came with it. I am taking away a star as I was quite disappointed with the crab and avocado benny. It must have been sitting out for a while as the avocado was brown when it arrived, and the egg was poached soft instead of medium as I had requested. I also found the peeled tomato that came with the dish a bit strange. The state it arrived in and the flavours of the benny itself were a letdown especially compared to the amazing starters we had beforehand. The crispy potatoes were the saving grace of the dish and I ended up leaving the rest of the benny and simply having my poached eggs with the potatoes. However my partner stated confidently that the pulled lamb spaghettoni was the best pasta he ever had, and I attest that the flavours as well as the consistency of his dish were top notch. Our server Jackie was very sweet and attentive, and made our experience memorable. There were minimal wait times and we were seated promptly upon arrival, and the bathrooms located in the building were clean and had hands-free doors which was greatly appreciated. We came in for dinner (without a reservation as we mixed up venues) but the team was super sweet and managed to accommodate us! The restaurant is GORGEOUS, there is a beautiful private large table that you can book which is great to know for future private events. The menu is small but perfectly curated. At the moment we can't have starch, excess oils/fats and dressings or alcohol and our server was so sweet and really did her part to ensure the kitchen know our modifications. We were still able able to enjoy the salmon (it was so beautifully cooked- I've never seen such bright colour inside a salmon and it just melted in youth mouth), scallops- delicious and a great portion, roasted cauliflower (SOOOOoO good, my bf doesn't like cauliflower and he devoured this dish), and the Caesar salad (which the kitchen used a lemon vinaigrette on for us instead). Went solely because of being ranked #24 on the Best 50 bars in North America. Apparently the lunch cocktail menu is different, with a whopping selection of 4 cocktails. The exquisite sounding Duck Duck Goose? Flew away. Raincouver Cocktail? I guess it was a dry day. Opted for the Me Time cocktail and what should have been a simple Botanist dry martini. Me Time was overly sweet and unbalanced. It had potential with its unique flavor and clarified processing, but if this was a milk punch based cocktail...then it was a swing and a miss. The martini order came with some awkward interaction, with the waiter seemingly not understanding the request and the bartender needing to double check whether to use olives or a lemon twist. If you're better than half the top 50 bars in all of NA, surely you could manage a classic. There was no bonding with this drink. The food came with decent presentation, but was average at best. The Sablefish and beef tartare were solid. The burger was tasty, however there was an over abundance of undercooked fries. The artisanal cheese reeked of marked-up grocery store offerings. Overall this was a let down. Laughing and shrugging off direct negative feedback about your cocktails shows you don't care, nor are you willing to learn. read more

Five star prices ... matched with five star dining. Success. Walk into the Fairmont and take the dragon stairs ahead of you up to the mezzanine. The restaurant will be on your left ... check in by the Taschen sign. You'll likely be led past the bar on your right under a looong warm origami light fixture to your table. You'll eventually pass a piano, and if you're lucky you too will enjoy the Mario Bros theme song played live during your meal. This was our final dinner leaving Canada after a week at Whistler and we couldn't have picked better. But what we didn't pick was our food. Opting for the chef's choice aka "We'll take it from here" we enjoyed a seven course meal over the span of a couple of hours. Now... I think this actually only comes with six courses but we also ordered the lobster and the chef fit the food into the sequence in a way that worked - each dish becoming bolder in flavor than the last. I won't say that I loved every course. But there were several that were incredible and I definitely enjoyed the experiences that each one brought ... from flavor, to texture, to novelty. While we didn't go with the wine pairing, we did enjoy some wine and cocktails with our meals. I gotta say - don't leave here without trying the botanist marine martini. Came for a weekday lunch and made the reservation online which was easy to use. With online reservations, some restaurants now charge a deposit but glad Botanist didn't as one person from our party was unable to attend due to illness. Right when I knew our numbers would change, I called the restaurant and it was directed to the hotel reception as the restaurant doesn't have their own number but the hotel was able to take care of the change and we were seated at an "updated" table instead of the awkward extra setting and chair upon arrival. Initially when our numbers changed, I also looked online to see if we could change our reservation time but the only availability were either a very early/late time however, upon arrival at our restaurant and even within the 15-30 minute window after we were seated, the restaurant was very empty.... I ordered the black pepper crusted king salmon and the dish was divine. Usually when dishes are named "crusted" the crust can be thick and separated from the meat however, the black pepper was very refined and encrusted the entire salmon. It was very black pepper and exactly how I wished every other restaurant did theirs when they name a dish with "black pepper". The daikon was presented in more of a noodle-like style mixed with the buttermilk and dill broth, the dish exceeded by expectations. Definitely a dish I still talk and think about to this day. We ordered scallops, salmon entree and the lamb shank. The seafood dishes were amazing. The broth that came with the salmon had a unique tangy taste that was difficult to describe but paired well with the salmon. The lamb shank unfortunately was my least favorite. For an elevated dish, it was a stew of lentils, and I don't think lentils should be an accompaniment to an elevated dish. Just makes it gritty and doesn't have good flavor... overall disappointing. I stopped by Botanist on a Friday evening at 8:00 p.m. and the bar was packed! We were lucky enough to get seated at the library next door. Drinks here are very well made. It's no wonder why this place was listed as number 6 on a list of top bars in Canada of 2022. Botanist's list of awards and accolades goes on and on. I got the Lost in Translation - japanese whisky, eau de vie, imperial oolong tea, coconut, amargo chuncho, and it was a alcohol forward but balanced drink. Coconut notes were very subtle. We were craving some after dinner desserts and the desserts here were stunning. Each dessert looks like it comes from a Michelin starred restaurant: so many different creative components. It tasted straight out of the garden. Which makes perfect sense being named the botanist. We created our own dining menu; which the waitress kindly coursed out for us. We started with the beet and burrata salad. My boyfriend who doesn't eat beets was licking the plate. Next came the wagyu carpaccio, sliced thinner than paper. Topped with a parm flavor and little crunch, providing both flavor and texture. For our third course we ate the scallops wrapped in duck prosciutto perhaps my second favorite bite of the night. The play on texture and flavor what this combo provided was mouth watering. As the fourth course we had lobster, topped with a lobster bisque table side...do I really need to say more. We went to the botanist while vacationing and it was so amazing! We are not folks who eat at fancy restaurants very often, but the staff treated us kindly and helped us decide what to order. We decided to order family style so we could try many different dishes, and all of them were great! They were not only beautiful but tasted amazing. For the appetizers, we got avocado toast (without cheese and butter to make it vegan) and burrata salad (which I loved!). The salad was mainly cheese it was so creamy and melts in your mouth. The olive oil and salt was such a good dressing. The avo toast was pretty good too, the spread itself was flavoured very well that it almost tasted like cheese?! For mains, we got the mushroom eggs benedict! This was pretty good too. Lots of potatoes I was so full at this point. I got a latte and then their mocktails, which were very refreshing. This brunch set is on the expensive side but on special occasions, it's okay to splurge! It's such a lovely space, I loved their decor. Very modern and pretty. One of our favourite restaurants ever and it never disappoints. The decor was elegant but natural and it is a great place to consider for a special occasion. This dry aged duck dish symbolized the fall season and totally encompassed all the things you look for in a great dish, color, texture, flavour, plating. Everything played a key role to compliment the duck. The seasonal fall produce was well prepared and the garnish of liver pate cannelloni totally stole the show. 4.5 stars. I came here for a light dinner and lunch. Gorgeous decor and fantastic service. Note that several dishes (charred octopus, salmon tartine) have pickled onion slices which were two overpowering in one bite. I would recommend cutting them up. DINNER Chart octopus is excellent. I especially like the potato gnocchi which add another layer of texture in this dish. The pickled onion was a little bit too pungent. Make sure you slice them to parts before eating this dish. Burrata salad: beautifully presented. The first couple of bites were delightful. But then my palate got fatigued was the richness of this dish as i continued plowing through it. Best to share. Tantalus Riesling - delightful try Riesling from Okanagan valley. It's in particularly go super well with my dishes but still liked it on its own. BREAKFAST: Salmon tartine was the best dish. Brightly colored and fatty salmon whose flavor was it enhanced with dill caper and pickled onion. Again, slice the pickled onions Smash avocado toast was poached egg. This dish is hard to make it super delicious. However, the restaurant did start to fill up shortly after, so do make a reservation in advance if you want to dine during prime time! What I got: - sparkling water - glass of pinot noir: Can't have duck without the wine! - salt roasted beet salad (manchego cheese, pecans, maple syrup, compressed pears): I was a little confused when this came out, as it was covered - I mean, COVERED - in shaved manchego cheese. But after shifting some of the cheese, I uncovered the beautiful beets and pear pieces. Lovely salad to start my meal. - dry-aged duck breast (roasted onion, tamale, salsify, red mole): This is the sole reason I wanted to come here, and it certainly did not disappoint! The crispiest duck skin around the perfectly cooked medium duck breast. A little pink in the center, indicating perfect temperature. A texture balanced between juicy and crispy that was impressive - I would come back just for this entree. A lot to eat by myself, but so worth every bite! I checked in with them at 9 and they sat us... only to forget about us AGAIN. Our server commented about how our area was a bit hidden and she tends to forget about it. Are you for real?!?!? The salmon dish was way too salty and the steak dish was fine but nothing special. It is not worth the wait or the cost. The one good thing about this place is they serve Fife sourdough bread which was delicious. We had way better food, service, and overall time at Riley's. I'm never coming back here. read more

I always have a few reservations being a vegetarian and going to places with fine dining, tasting menus, upscale dishes, etc. However, I can confidently say that our meal at Botanist completely made me dismiss all of those worries/doubts. We made a reservation at Botanist for dinner pretty much on a whim. A few things on the menu stood out to both of us but once we arrived, my husband decided to throw caution to the wind and opt for the tasting menu --- chef driven with some dishes on the menu and some off menu. Our server assured us that they could do a vegetarian version pretty easily but I'm not going to lie, I was pretty scared. Tasting menus as a vegetarian usually either mean that I'm going to get stellar, well seasoned food or lackluster under-seasoned vegetables that pale in comparison to my husband's omnivore offerings. I decided to go out on a limb with him and had no regrets whatsoever. We started the meal with the most amazing bread from Fife Bakery, a sourdough with good crunch and great flavor accompanied by cultured utter. Next was an amuse bouche -- popped tapioca chip with veggies for me. It was good but not mindblowing; very reminiscent of an Indian chip/cracker type dish I'd grown up eating. Next we had a sunchoke soup that was d e l i c i o u s. I was ready to lick the soup bowl and definitely dunked some bread into it. We moved on from there to the cauliflower with vegan XO sauce; once again, good dish that could have used a touch more seasoning on the cauliflower itself but balanced overall. My next course was maitake mushrooms with sunchokes, truffle, and the richest little consomme on the plate. Once again, when I tell you I was ready to lick the plate, I truly mean it. This dish had such a good umami to it, I was dying. Then the piece de resistance, the cabbage roll. I'm going to be real with you, I literally wouldn't have ordered this off the menu because so many other things caught my eye but it was INCREDIBLE. Asian flavors in the perfectly spicy, tangy kimchi broth; eggplant with the most concentrated savory flavors. I was ready to weep. We thought we were essentially moving into the desserts but were surprised by two consecutive dessert type dishes. The first was a mushroom marshmallow inspired dish that blew both of our minds. The mushrooms had been cooked down into a butter of sorts then reconstituted into a marshmallow that was toasted on the top. Such a creative use of the ingredient and a great balance of savory and sweet. (FYI this did have gelatin but they did make sure that I was ok with it before serving it to me!) The final dessert was a pistachio cake with an orange creme and a berry sorbet with pistachio crumble. Good lord it was delicious and I was so full but there was no way I was leaving even a little dollop of sorbet on that plate. We were so incredibly full by the end but it was absolutely worth it. My husband loved his meat/seafood dishes and was raving about the duck for days afterwards. I don't think we can go back to Vancouver without dropping by this place again. He tried the spirit free drinks which he ADORED (usually gets the short end of the stick when he gets alcohol free drinks but said these were the best he'd ever had) and I had cocktails which were equally as good. The tasting was $178 CAD per person with the option of a wine pairing or a champagne/premium wine pairing which was an additional $110-220 CAD respectively. I decided to pass on the pairing since we already had some yummy drinks as above. We ended the meal with a little shortbread cookie to go. Being vegetarian, I am usually so frustrated by mistreatment of vegetables and non-meat/seafood proteins. However, the team at Botanist definitely treated all of their dishes with equal respect and created innovative, tasty meals for all palates and dietary preferences. And for that, I cannot thank them enough. All in all, this was a memorable meal tucked into a beautiful little restaurant at the Fairmont. The noise level was really not that bad because you are tucked in towards the corner upstairs and not super close to the lobby lounge/bar. A knowledgeable server & sommelier add so much to a meal. Larry was top notch & our meal was beautifully prepared & presented. Sablefish, cavatelli, wagyu carpaccio & the apple desert were stars of the show. Creativity looms large and they do a wonderful job pairing flavors to enhance each bite.
