    Wonderful drink with bergamot and sparkling wine

    I had a wonderful visit to Botanist, a beautiful and friendly bar inside the Fairmont hotel on the Vancouver waterfront. Bartenders here really know what they are doing and are fun to talk to. I had a delicious champagne drink infused with bergamot. Or maybe I had two. Also had a good cheese plate and some great conversation. You need to stop by this bar if you're ever in Vancouver. It does not disappoint!

    The bar at Botanist is one of my favorite bars to visit whenever I'm in Vancouver. It is located in Fairmont Pacific Rim hotel. Even if you decide not to drink or grab a bite there, it's worth checking out the hotel. The bartenders are always personable and attentive. Looking forward to returning to try out their main menu. So far I've only tried the desserts and those have not disappointed.

    The botanist was refined from the moment that I walked in; exactly what I look for when going out. I was lucky enough to be seated in the booth right next to their huge open kitchen. It truly became part of the experience, being able to meet into all the different stations and watch the chefs at work was such a pleasure. The best part of my meal was the lobster risotto. It was creamy and rich. You could tell that the ingredients were fresh and natural. There was a high level of detail, quality, and creativity from the kitchen. They definitely seem like they're gunning for Michelin star and with their standard of service, I hope that they get it.

    Cute spot with a private room. Delicious breakfast here. Clean and tons of greenery. Good cofffee and solid breakfast. Worth a visit or for hotel breakfast. Reasonable prices for a fairmont. Bacon was American bacon. Eggs are decent portioned seemed like 3-4. The toast was the best by far. Slightly moist and really tasty with butter!

    We went for a brunch birthday! It's a lovely green and high end place in the hotel for an event. The drinks were honestly a little sweet but the staff were funny and kind. We got two drinks with the set menu. The beet starter and spicy salmon with potatoes are pretty good. Desserts were not too sweet too. A bit pricey but good experience

    Had such a great time! We had made a reservation, thinking it was for the bar. But their cocktail bar is first-come, first-serve. Reservations are for dining. So we ordered a couple small bites, while waiting for seats to open at the bar. Their appetizer sourdough bread was amazing! Made in-house, and a sizable loaf. Beef carpaccio was delicious. My husband and I were fighting for the last bite, haha. Flavors were incredibly well-balanced. Scallops were ok. Think they tried to do an Asian tom yum flavoring, which didn't work well, imo. Took away from the scallop flavor. Now, the experimental cocktails are where it's at! Pricey, but worth. Because these were some of the most elevated drinks with lovely small bite pairings we've ever had! Really, what an experience. And I wanna go back just to try the rest of the cocktails. ;)

    Incredible. If I have anything less than complimentary, it would just be about their choice of artwork in the private dining room. A little bizarre. That aside, every dish was perfect, the timing was spot on, and their wine and cocktail list was extensive. The service was impeccable, but we had the private dining room with a fixed menu. Highly recommend!

    Recently I went back to Botanist for the second time after about six years. The duck breast had been a dish I've been thinking about ever since, and I was so excited to see if it was as good as I remembered. Located in the Pacific Rim Fairmont Hotel, Botanist is a beautiful restaurant in a beautiful hotel. From the second you walk in, you get transported to a dimly lit dining room, with modern and sleek architecture and greenery everywhere you look. Although this vibe may be intimidating, the staff from the hosts to the servers are extremely hospitable and kind. When we sat down our server was very friendly and helpful with recommendations and descriptions of anything unclear on the menu. For drinks, I went for the Roji Highball. The drink was good, but not great. There wasn't anything super outstanding about it, but it was refreshing and citrusy while still having a prominent alcohol taste. I was surprised to learn that Botanist ranks 26th in the 50 Best bars list for North America. However, I believe there is a different drink menu in the dining room versus the bar, and I don't know if these menus are strictly enforced. In terms of food, we started our meal with a few slices of rye bread and butter. The butter was great, but I wish the bread came out warm and a little fresher. It was actually slightly under room temperature which was a bit off-putting. The ratio of bread to butter was also off, with significantly more bread than butter. We had to ask for a little more butter. For our starter, we went with the pan-seared scallops. From the second I saw this on the menu I knew I wanted to order it. The concept was unique and stood out to me as something I needed to try: tom yum broth with western style seared scallops. The scallops were amazing. They had a very subtle initial bite while having a delicate chew afterwards. Perfectly cooked. The tom yum broth was also good. Nice and tangy, with a slight kick, and a pleasant herbiness. However I had some issues with the overall dish. The dish is very temperature sensitive, and the tom yum is served separately table-side. Even with this effort, I thought the broth came out a little too cold, also slightly under room temperature. Of course if it is too hot, the broth is overpowering and ruins the taste of the scallop, but if it is too cold it's also distracting and unpleasant. Because of this, it also felt like I was enjoying the two components separately. They were both good on their own, with the intense flavor of the broth being its saving grace, but did not come together to compliment each other in the way I hoped they would. Even if the broth was warmer, I still think there might've been too much of a clash between the tom yum and scallop. I would have liked a little creaminess in the tom yum, as it would add a nice richness to bring the dish together and make the tom yum feel more like a sauce for the scallop instead of a broth severed separately. The whole reason why I went back to Botanist was because of the duck. And after my first bite, I was elated to see that it was just as flawless as I'd remembered. The skin is so perfectly crispy, not too crispy, but melts together beautifully with the tender and moist duck meat. The meat is so soft, it's more tender than most filet mignons. Although the duck is dry-aged, there is no funky flavor or gaminess. The flavor remains very pure and juicy, perfectly complimented by the light brown butter sauce. The portion of duck is very generous, and comes on top of mushrooms, red cabbage, and spätzle. All of these components contribute nicely to the dish, but the duck remains the star of the show. To this day I still believe this is the best duck I have ever had and will continue to compare all ducks I have in the future to this. Overall I had an amazing experience. The service was attentive but not too in your face. There was plenty of attention to our water glasses always someone to ask if we were enjoying our food while still giving us our space during the meal. Although the meal in its entirety wasn't perfect, the duck breast is really special, and something that I will remember for a long time. And while other dishes are still interesting and delicious, I would highly recommend a trip here just for the duck. Botanist is a beautiful restaurant that really leaves a lasting impression from the atmosphere to the service to the food.

    We came here for my birthday dinner and this place is gorgeous. Plants everywhere and lots of nice, small touches. There was even a pianist during dinner! Our waitress was incredibly friendly and kind and really took the time to explain the courses to us. We did the tasting menu with wine pairings. Everything was delicious with the exception of dessert, though I found the portion sizes were on the smaller side. The wine pours were incredibly small, even for a tasting menu. The price is rather extravagant so this was definitely a once in my life experience.

    Named one of the Top 50 Best Bars (North America), this place deserves the accolades. I went here a few minutes after 5pm on a Saturday and there were a few parties already seated at the bar, but we were seated immediately near the center of the bar where we get to see all the action. It gets busy quickly within 30 minutes of opening. Bar is walk-in first come first served, while the reservations are for the dining room. We tried the first 3 experiential cocktails and the What the Flower as recommended by the bar list. We also got a foraged mushroom tagliatelle from the dinner menu that was phenomenal - pasta was al dente and the flavors are bold and rich. All experiential cocktails come with a food pairing bite and a non-alcoholic spumante for palate cleanser. Water of Life No 1 - Pale Blue Dot - my friends call me Mr Worldwide with my travels, and I was largely appealed by the globe glass, so I decided to try this. This drink has herbal notes and blue in color from blue algae. It looks like a science experiment. "The world is your oyster" as they say in the menu, which directly matches the food pairing that comes with this drink - an edible oyster shell (cracker) with caviar which is quite good. Water of Life No 2 - Ring of Fire - my favorite of the 3 in presentation and flavors. This one has the volcanic effect from the dry ice and the cup has a hole in the middle, shaped like a volcano, for the amplified effect. Surrounding is some material that can catch on fire so when it is torched, it has beautiful small dots of fire moving around resembling lava. I loved the fruity and strong flavors of the drink, and the pairing is a wagyu that is juicy and tender in itself. Water of Life No 3 - Raincouver cocktail - one of the more popular ones and the one that first caught my eye. This was is very mild and a bit watered down, but still has the complex notes that come with the experiential cocktails. The foam is a cherry blossom infused foam that condenses into the cocktail. The placement of the foam was a bit poor so a lot of the infusion dropped to the table. But it was my still my least favorite of the 3 due to the flavor profile. The pairing is a fried chicken bite that is quite good, but a bit overpowering from the delicate flavor notes of the drink. What the Flower - I was drawn to the electric daisies which are just buzz buttons (the flowers that numb your mouth if you take a bite, and it changes how your mouth perceives certain flavors). It did not evoke the jumping or pop rocks or tingly effect so I was a bit let down by the drink. It might be a bit more subtle but I didn't notice at all. Service is good as the bartender took the time to explain the cocktails and did wonderful presentation and show of the experiential cocktails.

    This was probably my 3rd visit to Botonist over years of travel to Vancouver. I just love this restaurant. Will continue to come back each time! The food is just as delicious as it is beautiful. The service was outstanding and attentive - although they really need to change the women's dresses. They look straight out of handmaids tale series which doesn't exactly match the restaurants hip, modern vibe. We get a table right next to the kitchen and it was really fun to watch them prepping food. Great experience. The cocktails are worthy of a visit all in their own!

    beautiful restaurant inside the Fairmont. great place for a lunch date or date night! came with friends the first time and knew i had to take my husband the next time we were in town. both visits, the service was spectacular. loved the intricate details from the engraved logo on their bread plate to the menu "clip" of their logo silhouette. their drink program is amazing and is seasonal just like their menu. ordered: - pan seared squid - didn't enjoy the chorizo/spices, but the squid was perfectly cooked and tender - crusted salmon with spaghetti squash, pumpkin seeds, ginger buerre blanc - sooo good! perfect cook on the salmon - moist and succulent and perfectly crispy skin. loved the textural contract of the crunchy pumpkin seeds. the ginger worked perfectly with the rest of the "fall" dish and brought warmth and a sense of coziness. literally a (fancy) hug on a plate. - lobster risotto - al dente, creamy, and good amount of lobster -got a prickly pear w ginger mocktail - so delicious and refreshing can't wait to come back for brunch!

Even found an old Kellogg's individual cereal box display like one we had in my parents diner in Ontario, that was very cool! The service was spot on with our two servers working in unison to get waters, tea, orders, delivering food, cleaning up like a well oiled team. They even have old fashioned milk shakes and an Hamilton Beach machine to blend them up. WOW, nostalgia. The food came out quickly and was cooked exactly as we asked, and it was plentiful and a solid breakfast for the price. My potatoes were a little greasy, to me, but everything else was perfect. The bacon, three slices, of good quality and perfectly crispy as ordered. We will most certainly return to The Templeton when downtown again. Our hotel close by, not so much, but this little gem, unquestionably!

Black beans didn't seem fresh but then again I'm not a black bean expert, rosemary potatoes were crispy with a moist center. The retro vibe was 5 star, I was expecting retro .25 drinks and $5 breakfasts but alas inflation is an unstoppable monster in our everyday lives.

Nothing standout as so amazing to deserve 5 stars, but consistent and tasty. I did have a reservation which they charge $10/person for, purely for donation to a charity and does not contribute to your meal at all, and also nonrefundable. While I find this somewhat annoying, I dont blame them for doing this from a business standpoint. They always have a lineup so there is no shortage of customers for them. There is no reason they need to deal with the headache of a ton of reservations. On the flip side, they honoured my reservation in a very timely fashion and I bypassed the line, so props to them for doing that part right. If you have to park, then you may find street metered parking or use one of the nearby paid lots.

Unlike chain diners in the area, this is one of a kind. If you're into equal parts quality, friendliness and nostalgia, definitely give it a try!

The cheese in poutine was cold :( . Not melted. Wtf Subtracting from the experience : The staff working was nervous and softspoken. Which is completely fine. But he genuinely seemed like he didnt want to be there. Perhaps he was overwhelmed or it was his first day working solo. The next patrons tried to ask what his favourite thing in menu was and he wouldn't answer. Felt bad for the kid. The place was clean. The decor is still cute. Definitely our farewell meal there. Sad to say its no longer a fave for us. I have so many GREAT memories there.

Service could have been better - I pretty much had to get my server's attention when I wanted a pop refill and the bill. But the portion size and food quality was impressive.
