I'm sorry to say that I was disappointed. The soup seemed to be watered down coconut cream. Not appealing. The Drunken Noodles had no liquid sauce. Dry and sticky. Excellent, warm, and comforting curry. I felt like crap so I wanted a hot soupy dish to make myself feel better. The green curry brought me back to life. I must confess that last week I had HORRIBLE Thai food and I was hopeful this Thai truck experience would wipe away my sadness after bad food. I am excited to report the news that Bo's Thai has given me pad Thai happiness again. So flavorful. So fresh. Perfectly cooked and plentiful. Tofu Pad Thai was really nice. Super delicious from this food truck. The dish was steaming hot, they asked if I wanted my Pad Thai mild, medium or spicy. A delicious little Thai food truck. The service was quick with everything made fresh to order. They even have little plum candies to take, yum! The food was delicious and hit the spot. We got Pad Sẽ Ew and Pad Thai both medium spice. The Pad Thai had a got spice to it but not too strong for this white girl! The Pad Sẽ Ew didn't taste spicy even at medium. But I preferred slightly over the Pad Thai because the veggies gave it more flavor. Delicious all around. There is seating behind the food trucks. I have finally found a Thai place that is delicious and authentic! I've tried a few places in Santa Fe and this is the first time I was immediately convinced I'm coming back for more. They were quick to take my order and the food came out relatively quickly. I only waited maybe 10 minutes! As soon as I got to my car, I had to dig in. Flavor 9/10 I asked for hot and ended up adding more chile flakes just because I knew it wasn't going to be as spicy as I like Noodles were perfectly chewy, while the veggies added a nice crunch to the dish The shrimp want my favorite, so next time I'll be sure to try the chicken! I had such high hopes from all the other reviews but I felt like I was misled. If this is the best Thai food this area has, then I feel really sorry for all you folks who haven't had better Thai food. It's a cute food truck, but the pad see ew was so one-note. It only tasted of dark soy sauce, like noodles you'd make at home if you had no other sauces--no complexity at all. No wok hei on the noodles either :( Honestly, I think it may have been the worst pad see ew I've had, which I know is harsh, but I was super disappointed. I hate to rate it so low but it definitely could've been better! I hope their other dishes are tastier. read more

If you want authentic Thai food in Santa Fe, this is your spot! I unfortunately didn't get a picture of the Pad See Ewe, but it was so good with perfectly cooked noodles and a true medium for spice. The green curry with tofu was my next favorite. It was full of veggies and delicious jasmine rice to accompany it. The papaya salad is only available on Friday's so I had to give it a go and I really liked the addition of dried shrimp. It gives it a boost of umami that I've been missing in Asian food here. Have been eating here every day I get the chance! I've been waiting for a high quality Thai option in Santa Fe and this is it. Newest addition to the food truck lot on Old Santa Fe Trail. I've tried a few items already and all have been very good. So far I've had Pad Kee Mao, Pad See Ew, Fried Rice, Papaya Salad, Spring Rolls, Thai Iced Tea, and the Basil Chicken with Jasmine Rice. Good portion sizes for the price and freshness of food. Spicy level can be adjusted on request. I usually take home to share with my partner. Looking forward to trying their curries. Wow, what a gem!! We walked up the this food truck in the rain to get some Thai food and it was totally worth it. I had Pad See Ew with tofu and it was really flavorful. If we lived here, I would go here a couple of times a week. The prices are reasonable for Santa Fe. The only suggestion I would make is for them to have some cold spring rolls made with rice paper, in addition to the fried ones. But, this is indeed a nit. One thing I don't understand about this entire food truck area is why there are no tables on which to eat. With so many tourists in Santa Fe, and these trucks in easy walking distance from the Plaza, it would be nice to be able to eat your food right then and there and not have to take it back to your hotel. Of course, that wouldn't have worked the day we were there since it was raining. Go see Bo and get some authentic Thai yummy food! read more

I've seen this food truck for awhile now, and being a HUGE fan of Thai food... and with the lack of Thai food in Santa Fe, I knew I had to check it out. I went today and ordered the Pad Thai with shrimp. The place must be popular because I waited for my Pad Thai, there were several people lined up waiting for their orders. It's consistently one of my favorite Thai restaurants in Santa Fe yesterday I had chicken pate, a pork patty, Penang curry, shumai, spring rolls, and always delicious. My wife and I got to-go from here yesterday and got it early (for our dinner) so it sat for a few hours. But, I am glad to report that our experience was solid and good. We are generally not enthusiastic about the state to Asian food in Santa Fe (there are a few exceptions); so we were ready to be once again, disappointed. But not here. This is pretty good Thai food, it "travels well", has substantial portions (Thai food is so pricey these days!), well prepared with what seemed like homemade noodles (?) and good portions of protein per dish. We will go back if they keep up the quality; and hope for an eventual brick and mortar outlet once life returns to some kind of normal. read more

I ordered a sun-dried pork/sticky rice/cucumber dish Last Tuesday. It was among the 5 worst meals I have eaten in decades. Using chopsticks on the hard brick of sticky rice was impossible. Then I broke 2 plastic forks trying to get a bite. Got my Swiss army knife out of purse and gave up after sawing about half a bite off. The pork was tooth-pullingly tough and its only discernible flavor was 'grease'. The 3 cucumber slices were good though they couldn't be enhanced with the tiny cup of hot sauce due to the latter being about 50% salt. How on earth do they stay in business selling such awful stuff for $14? read more

The Pad Se Ew and Panang curry are spot on, and the curry is nicely spicy and flavorful with more subtlety than just being incredibly hot (looking at you, Thai on Canyon). I tried the Shu Mai and liked it, but I need to go back for Pad thai and some other things (Papaya salad!) and then it is quite likely this will be a 5-star review. First time customer. Ordered the Penang Curry with chicken because they had no pork. Also ordered the Spring Rolls. Never got the Spring Rolls because they forgot. Curry sauce thin, heavy on the cocoanut and sweet with few chicken strips and few peppers.
