Ive been in NM a few months and can easily say the food here is worse than any other state ive been in (yes there are some good restaurants, but the average random takeout experience is rough) People must be desensitized because 4 stars for this place is wild. Brisket sandwich - plain old cheap grocery store bun that was not heated, toasted, buttered, or changed in any way. Best BBQ i have ever had, the man working the truck seems stern. However the food itself is absolutely amazing. Slow smoked for 8 hrs and you can taste it. Everything was juicy and super duper tender, i have never had ribs ACTUALLY fall of the bone. The choices of BBQ sauce just adds so much. Plus they have green chili. The ambiance doesn't matter the service doesn't matter. Cause the second you smell that meaty meat BBQ smell. All of it is worth it. We are pretty disappointed with the food we had in New Mexico on this trip. But this place was really good! Too bad he was there when we went back to look for him on July 4th. Oh man! I smelled it before I saw it! A big red truck parked in downtown Santa Fe. There were people in line and looking hungry. I had to see what was cookin. It was the famous Santa Fe BBQ and the "Meat Man" was at work. A lot of the hungry lunchtime crowd were clamoring for the Texas-sized Turkey Legs. Hwever, I was in the mood for a pulled pork sandwich. And the BBQ corn? So good. Also on the menu: angus beef ribs and pork baby back ribs. It is this love of New Mexico flavors & a taste for some hearty BBQ that makes Santa Fe BBQ so good. According to their website, the business "combines the native flavors of the great state with the slow-smoked traditions of the South, creating a uniquely New Mexican-styled BBQ." Visited truck on 6-26-20. Salmon sandwich had 4 pieces of shattered clear plastic in it, thin and with sharp edges varying from 1/2 " to 1" long which I nearly swallowed. Cole slaw smelled like cheese, we threw it away. Ribs were so so, not smoked enough, but thoroughly cooked. Brisket was expensive, $20 a pound, for the quality. No price was posted for any meat by the pound. Do not recommend and we will never return. read more

Great food and friendly service. Have been meaning to stop by for a while and I'm glad I did. They're cash-only, and I said I just had $20 and asked him to just give me however much that would buy me. It got a hefty sampler plate of shredded beef, pulled pork, brisket and a half rack of ribs. He put sauce of my choosing all over and sent me on my way. The brisket, pulled pork and shredded beef were really good! All super moist and fell apart in my mouth. The pork my favorite. The fact that I even had to chew the shredded beef at all gave me pause but it was just more chewy in comparison to the other stuff - in normal life it was super tender too. The ribs I was so-so on. I eat ribs every chance I get (my faves in town are Ranch House), and these were a little tough and not quite smoky enough for my taste. But they were still good, and I know that batches vary so I'd be willing to give them another chance. Ribs would have bumped it down to 4 stars but very friendly service brought it back up. We never miss this food truck when we're in Santa Fe. I had the brisket sandwich with green chili AND hot BBQ sauce = the taste of happiness, no need to add salt or pepper. Here's my tip to you neat eaters (like me) out there: do not, repeat, do not attempt to pick up this sandwich! It's better to use your fork to dig into the meat, chili and sauce, and then tear off pieces of the bread to sop up all the delicious juices oozing out of that bad boy.
