It is made of mung bean which gives this clear noodle look and quite chewy. The flavor is a good balance of sweet and savory but not spicy at all unless you tell them to. Wife had their spring rolls and kids had drunken noodles no spicy. They are very accommodating with all sorts of requests like no eggs no onion no garlic etc and wanting soft tofu rather than fried tofu. I saw how many new specials they have plastered on the window and inside entrance, I knew I had to bring my parents over this Sunday! We came in today and order the crying tiger. We do wish it to be rarer for more soft texture but the flavor was great. My parents liked the ocean in love with the lobster tail, shrimp, and scallops over spiced veggies. The BBQ pork ribs was another safe choice of mild and savory Sweet flavor while the meat was tender. I didn't try the tom yum shrimp fried rice but my parents liked it as it has coconut flavor and it was literally a mountain of fried rice! Spicy though and I had to refrain while letting my GI heal from recent injury. Upon placing the orders, the owner quickly came out to see if it was really us! We ordered the Fried Tofu to share and then I got the Pad Se Ew and my friend got the Pad Thai. Our food came out within 10 minutes! Fried Tofu (5/5): This was very tasty! Wasn't sure what to expect with just fried tofu, but it was crispy on the outside and soft on the inside and I liked how it was coated in sauce. Pad Se Ew (5/5): Delicious! I ordered it at 3/4 spice, and it was perfect spice level. It had plenty of heat and flavor, and I didn't need to add any extra chili or seasoning. Humongous portion size! Friend did mention that it would have been nice if their Pad Thai came with a lime slice but she enjoyed her meal. Overall, great food and customer service and excellent bang for buck. I'll definitely come back the next time I'm craving Thai food in Folsom!
