I consider myself a Mexican food connoisseur, and frankly resent that I'm writing such a glowing review for a restaurant so far from Mexico. But this was genuinely some of the best Mexican-inspired food of my LIFE! As a vegetarian, Mexican food tends to be hit or miss when it comes to creative meat substitutes. Blue Agave chose fried avocado tacos as its offering, and WOW. They were truly amazing. Life changing. Well spiced, the right amount of filling in each taco, and the avocado itself was perfectly ripe and fried well without much residual grease. Not only that, but the side beans and rice were incredible. The portions were generous and spiced magically- I could eat just the beans and rice as a dish on its own. I was also astounded by how the grilled corn sauce was thick and saucy, but tasted EXACTLY like elote- some kind of culinary magic. This place may be slightly pricier, but the food portions are large and I cleaned my plate and left feeling stuffed. My companions couldn't finish their beans and rice, and if I didn't think I was going to explode I would have cleaned their plates, too. I'm glad I don't live in FoCo or else I would go broke eating here. I cannot recommend it enough, especially those avocado tacos. I will be dreaming of them for years. The restaurant was a little jammed when I visited and some might find the atmosphere overwhelming, but I would say it's absolutely worth it. I think it took 45 mins from the time we ordered until the time we got our food, dessert was *slightly* better at about 30 mins. I think we were there for almost two hours, if not more because of the long waits. There were PLENTY of empty tables, so it wasn't packed, but still took forever. For the foods: Coconut shrimp tacos- good but the tortilla wasn't cooked and fell apart and the habanero creama will absolutely throat punch you if you were not expecting it Chicken teriyaki- good flavor, the Brussels sprouts were the best part of the dish. Shrimp skewers-just ok. Braised short rib enchiladas-hubby thought these were amazing, huge chunks of tender short rib that melts in your mouth. It was really good. Tres Chocolate Brownie-Underwhelming at best, feel free to skip this. The blondie- DELICIOUS. Get this one. Served warm, and has that kind of brownie gooey center. It's perfect. Had a reservation for 6:30 but things broke out way and we called to move it up. Jasmine was SUPER helpful and got us moved up. Birthday dinner for our daughter in law. We were seated promptly with Jasmine's help then Conner swooped into serve us and serve he did. Drinks arrived promptly and the Weld Works Juicy Bits was as great as it's always been! We ordered the house made Guacamole which was good but not spectacular. Dinner orders included the Stuffed Rellano, En Fuego Tacos, Tequila Lime Chicken, and Sweet & Spicy Summer Scallops. Everyone RAVED about their meals. My scallops were incredible! Even the Chipotle-Mango Glazed Brussel Sprouts were amazing. Don't normally talk about Brussels sprouts like that!!! Since it was a birthday dinner we did indulge ourselves with Peanut Butter Chocolate Mousse and a Tes Chocolate Brownie. Stellar! All in all a truly great birthday dinner. I like the ambiance, artwork at almost every booth. There were these pretty looking iron made pineapples over our booth. The seats are very comfortable. We ordered the coconut shrimp and the sauce was very tasty with a tangy spice. My friend ordered a Lamerá posa cocktail and it was well crafted and delicious. I recommend the warm chorizo corn dip. It's served with warm tortilla chips. It's the perfect starter to your meal. I also love that they have Mexican Coca Cola in a bottle. My friend ordered the fish tacos with mango salsa on the side and served with rice and beans. I ordered the grilled salmon that comes with a Chili Lime Glaze / Serrano Avocado Salsa / Ancho-Orange Tossed Arugula / Sweet Heat Balsamic Reduction / Arroz Fresco / Grilled Summer Vegetables. Overall a good and light meal. The arugula was flavorful and complemented the salmon perfectly. It might've been my favorite part of the dish. The food. Omg! Tunarita appetizer has an awesome presentation and even better flavor. My husband inhaled his steak burrito with chipotle cream sauce- he's still raving about it. I have the salmon Caesar - also excellent- great flavor, cooked perfectly and overall quite refreshing! We ate here last Sunday night 6/28. I had researched restaurants online before our trip and made a reservation. As it turns out I don't think we needed the reservation but one never knows when planning a trip. It was a very cute restaurant, very centrally located by everything else. The food and service was great. The food seemed very fresh, the chips and salsa were great. We did not drink alcohol or have dessert, however ALL the desserts sounded amazing, we were just too full. It was alright overall. On a scale of 1-10... Chips & Salsa: 7/10. Chips were delicious. The salsa was spicy. Doesn't hit you until like 30 seconds later. Wish we got warned Tacos Al pastor: 6.5/10. The pineapple was super fresh. The corn tortillas were delicious. But there wasn't too much meat and other toppings. Nothing super special. Sangria swirl: 6/10. It was super sweet. We stopped in here for lunch before heading to Social. We liked the variety of menu offerings. Blue Agave Grill did not disappoint! We had the check-in special Corn and Chorizo dip, which was a blend of sweet corn and spicy chorizo in a cheesy base. And then we had the Black and White Nachos. O.M.G. Amazing flavors, and each nacho had a little baby shrimp. This is the way to do nachos, IMO. A simple presentation of loaded chips. No need for a giant pile of chips. We also had the street tacos. Three generous helpings of yummy pork carnitas. Again, marvelous combination of balanced flavors. Our server, Jeremy, was GREAT. He explained that this is a "from scratch," kitchen, so that modifications could be made for allergies or whatever. This was excellent news, because we were able to ask that spinach not befoul our glorious nachos. Jeremy was both personable and professional. He knows the menu thoroughly and took the time to make recommendations and answer questions. We will definitely return on our next visit to FOCO, or perhaps try the Denver outpost. read more

Great option downtown Fort Collins located at the art museum building. The place is very busy and has a wait but the bar area is open seating. The food was good and the service was excellent. The prices are reasonable in today's standard for what you get. They have Guacamole with twists so we went with one of those and it still tasted pretty conventional, I hope they make it taste less conventional. We planned to have dinner there before a show at the Aggie. Surprisingly the Nutcracker performance was down the block and the place was packed with a 90 min. wait. We managed to snag a couple of bar stools and had dinner there. I don't recall our servers name but she was a joy, in spite of the crowd. Margarita's were great! I have come here a couple times for dinner since moving to the area and it has never disappointed. Servers are always friendly and welcoming, food is always delicious, and the location in Old Town is hard to beat. My favorite dish I have tried is the Pork Carnitas. With the dish you get multiple pieces of slow roasted pork laying in a delicious green salsa and tortillas and black beans on the side. I would say menu items are a bit more on the pricey side, but the quality of the food and the service certainly make up for it. What a lovely restaurant! The main entrance is located on the side of the Museum of Art's building so you have to look for it. Once again, the food was amazing and the service was wonderful! Katrina took such good care of us and guided us to some new items - the chorizo and corn appetizer dip is fantastic! Paired with the classic margarita and you have a great start to your evening. Pork carnitas stole the show, along with seafood enchiladas, perfectly grilled vegetables, and happy hour guacamole. The manager stopped by and chatted about our meal and other things. We had a small wait for our meal but honestly it worked out because of all the small shops near by. As far as food goes we started with the margarita flight and mango guacamole which were both amazing and some of the best gauc I've had. For meals we got the coconut shrimp tacos and an enchilada. My family and I moved here a couple years ago and have been eyeing this place since. We had family in town this week and got the chance to finally try it out. First of all, our server, nick, was a total pro. Also, the dining space was spacious and comfortable. The black and white nachos app was spectacular. Ordered chicken tacos for our toddler and she ate almost all of it. They were giant by the way. Mother in law had one of their specials, blue corn enchiladas. She loved every bite. Wife had the blue agave tacos. She's also real picky about fish. I had a bite. They were fantastic. I had the adobo pork burrito. It was, hands down, the best burrito I've ever had. 100%. The balance of spice and the sugars from the chili sauce was absolute perfection. The tortilla almost had the texture of filo dough. Pork had a tender and juicy bite - but was peppered with those small crunchy bits that you pray for in any pulled meat. I cleaned the entire plate. If I had to critique something for the sake of not saying it was literal perfection, it would have to be the jalapeño margarita I ordered. It was good, but a bit spicier than expected or hoped for. The tequila was infused with jalapeño so it wasn't just a 'hint.' We're moving out of state next month and our only regret since being here is not eating here weekly. Good for you, Fort Collins.
