I've had a set of Henckel 4-star knives for years and they had never been professionally sharpened. After our move to CA, we decided it was time to find someone as they had really gotten quite dull from repeated use. I found Sean on Yelp (thanks Yelpers for sharing your great experiences). I contacted him and got a rough estimate for sharpening a set of 21 knives. I thought the price I was quoted was very reasonable so decided to move forward. Sean's normal turnaround time is 24 hours, but with restaurants opening back up for limited dine-in service, he was quite busy and said it could take a bit longer. No problem for me as I was in no rush. Drop-off and pick up was easy-peasy. He has a drop box so everything can be done at your convenience. He will text instructions for drop-off when you decide to move forward. His location was near the fairgrounds so again not a terrible inconvenience to travel to him. My knives were done the next day. Both my husband and I are thrilled with the results! When Sean placed the "caution - very sharp" sticker on the box, he wasn't kidding. They are better than brand new! What a lucky day being in Jerome's market in Carmel Valley when walking out I ran into Sean sharpening knives..After talking to him and him telling me he's sharpened knives in over 80 restaurants and hotel kitchens..I was sold.. He lives conveniently to me and has a very innovative way for us to leave the knives at his house.. He has a lockbox right outside with a combination lock.. You leave the knives there.. AMAZING! Sean is wonderful. Shows up at your door to pick up your knives and comes back a couple of hours later with the sharpest knives EVER! We have never used such sharp knives. I try to have my knives sharpened once a year for home use before the holidays. It's a lot easier to slice the turkey or prime rib with sharp knives.
