I took 18 kitchen knives from 3 to 8 inches to Cecilio for sharpening. I chose him to do it because he understood my bad experiences with people using belt sanders to sharpen expensive knives! So he explained that he uses sharpening stones when possible, which I am more comfortable with. In the end, he sharpened approx. two-thirds of my knives using sharpening stones (charging $3/inch) and the rest on the belt sander ($1/inch). Because of the their shape, some knives--e.g., boning knives--can only be sharpened on the belt sander. Highly reccommend Cecilio! read more
