There was no doubt that we would stop at Blackback Pub for lunch when passing through Waterbury. We were fortunate enough to snag two seats at the bar on a very busy Memorial Day afternoon. Since it was a national holiday, the Waterbury Patriot Burger called out to me. Great choice- nicely spiced, cooked perfectly on a fresh brioche bun. The accompanying kettle chips were yummy. I chose to have a mug of Hill Farmstead Symposia-a delicious Rauchbier poured from a LUKR tap (side-pull). What a treat. Jane chose sliders that quickly disappeared. Her beer choice was Common People from Bluejacket-a micro brewery in Washington, DC. You can always count on the best beer selection anywhere at Blackback Pub. I only wish we were staying in town longer so we could enjoy more of their deliciousness. The bartender was very friendly and attentive despite being slammed. We had a great experience here! Came on a Tuesday evening. We were able to get a parking spot on the street only a short walk away. We walked in and took a seat at the bar. Bartender was nice and attentive. The inside has a nice atmosphere. The menu is very unique and has so many different options from normal bar food. I think it's a very creative menu! I had a hard time deciding what to choose. Started with the patatas bravas and broccolini with peanut sauce. Both were delicious! Sauces were flavorful and potato's and broccolini cooked perfectly. I then ordered the stuff salad with chicken and loved it. Everything on the salad tasted fresh and the chicken was cooked well. Yum! Blackback Pub was awesome! Came here with a group of 4 while skiing in VT. This place has a cozy rustic vibe and I loved all the fly fishing decor. Seating is tight and it definitely gets lively during dinner, but that made the pub feel more welcoming and homey. The menu here for both drinks and food is amazing. Definitely some unique and really tasty options. I ordered the Meatloaf Sandwich and it did not disappoint. We also shared the Pub Nachos and Korean Vegetable Pancake for appetizers, both were excellent. Our server was friendly and we were really happy stopping here to eat. There is a small area by the sidewalk outside where you can take your drink to enjoy the day. No service out there from what I could see. We sat at the bar which had a few seats available. The bartender came right over, asked if we wanted menus and took our drink order. The menu is very nice. We all found something to enjoy. The scallion pancake we shared was a hit with everyone. My buns had a lot of flavors and textures. I very much enjoyed the ginger dressing on the greens. The menu has vegetarian options. The ambiance is very chill. Hands down one of the best sandwiches I've had - my pics do not even do them justice. No pic included but the Korean Vegetable Pancake compares to any NY traditional Korean restaurant I have eaten at! We ate at the bar and the service was excellent. So I went in just wanting something cooked and quick to eat . I was in town to move my son in to college , so I decided on the Mac and cheese with bacon OMG!!!!! This was some of the best Mac and cheese I have ever had in my life. I couldn't finish it all but even warmed up it was amazing . Decided to go back the next day and got the grilled cheese with chips on the side with jam . Wasn't as good as the Mac and cheese but it was good . I asked the guy at the Cabot store where we should go for dinner in Stowe, and he told me I was heading the wrong direction: go to Waterbury. Later, I tried telling people at work how much I loved the meal I had at this pub, and they all said it was already their favorite place to go in Waterbury. So often, I look at a menu and can't find anything that excites me. I didn't get past the first item on the menu and it was really good. This restaurant offers everything once you walk in the door. The atmosphere is welcoming and greeted immediately! My party started off with the Pub Nachos and Sticky Maple Gochujang Shrimp. Wow the pub nachos are a must get!!! The shrimp were also incredible. This followed by BBQ Pork Sandwich which was tasty especially with their ZUCCHINI pickles sliced to perfection. Cesar salad wrap is a must get if your about that life. Chermoula Chicken Sandwich was great I unfortunately did not get this but was raved about with my party. Blackback Pub is a craft beer bar and restaurant that opened in Waterbury, Vermont in 2009. It was founded by restaurateur Rick Binet. The little pub originally opened under the name 'Blackback Pub and Flyshop' in a one-room space that was previously a barbershop. The bar had one set of taps, a limited menu, and fishing decor and paraphernalia. In 2014, Binet was approached by couple Dave Juenker and Lynn Mason to purchase it. The couple both had backgrounds in the hospitality industry. Binet decided to move to Portland (ME) to become the owner of The King's Head (another craft beer bar) and he sold Blackback to Juenker and Mason. Over the years the couple would expand the beer and food menu, purchase the building that houses the pub and expand it so it occupies the entire ground floor and basement floor. In late 2023, the couple sold the pub to general manager Ehren Hill and chef Cory Swafford. Even though they retired from running the pub, Juenker and Mason still retain ownership of the building. I recently visited Blackback Pub while I was on a Vermont craft beer road trip. I was actually spending the night at the historic Old Stagecoach Inn and Blackback Pub (and many other popular craft beer establishments) is just a 3-minute walk from the inn. I've heard nothing but excellent things about the pub for years. After enjoying a pint and a small food plate at The Reservoir (another excellent craft beer bar right across the street), I headed to Blackback to see what they had to offer. The pub had such a chill vibe. I pulled up a seat at the bar and looked over the draught beer list. With about 30 offerings on tap, I was so impressed! There were beers from Burlington Beer, Prison City, The Alchemist, Foam Brewers, Frost Beer Works, Zero Gravity, and a whole lot from Hill Farmstead. I decided to order the latter's "Edward" (Pale Ale). Brewed with a variety of hops, dry-hopped, and then unfiltered, it was an exceptionally delicious beer. After looking over the food menu, I ordered the "Roasted Brussel Sprouts" (Brussels, maple za'atar dressing, toasted walnuts, dried cranberries, chopped dates, cilantro). It was an excellent small plate to accompany my beer. I had an excellent experience at Blackback Pub and I give them my seal of approval! read more

I was very pleased and impressed. The GF scallops were perfectly pan seared and so flavorful! GF taco salad was loaded and the brisket was so good!! Broccolini was a great side dish, perfectly cooked! I had the mussels and they were the best I've ever had! The sauce is made with a beer, so not GF. The bread that was served was perfectly toasted! My first dining experience in Waterbury VT was a good one. All reviews led me to Blackback Pub for the evening. I realized we made a good choice when we were warmly greeted immediately by one of the bartenders wearing a Notorious B.I.G tee. Walked into a cool space with a crowded bar and busy dining area. We lucked out with corner seats at the bar. The bar was busy but not rowdy or loud. The bar has a low lighting, chill vibe with many conversations going simultaneously. The bar decor just hollered fun time. The menu was not large but it was diverse. I was surprised to see patatas bravas, salmón tacos, and meatloaf sandwich on the page. Many vegetarian options. The beer list was dominated by local IPAs with few main stream beer options. Full bar offerings available. Street parking only so you might have to hunt a little for a spot. I have always loved having dinner here and introducing friends and family to one of my favorite establishments. Coming in on my birthday with my parents was no exception. Being as it was also a holiday weekend, I knew it'd be busy and it was already pretty busy when we arrived at 5:30. The bartender greeted us at the door and took our names, offered us some menus to look at while we sat at the bar. I got them two DownEast Ciders while I tried one of the many amazing microbrews on tap. We decided to order the Brussel sprouts as a quick app while at the bar. The combination of sweet, sticky fruit and savory veggies was addicting. My mom remarked that she loves Brussel sprouts, but had never had them this tasty before. We had decided prior to seating to order dinner tapas-style and save room for dessert. We selected the ahi tuna bao from the main dish categories, the Lebanese fattoush salad and Mussels of the Day (Thai curry) with grilled ciabatta. Everything was bursting with flavor and I'd asked for a soup for the mussel broth, it was so good. They even brought us more ciabatta to soak up its goodness. We ordered all three desserts: a flourless chocolate ganache, lemon bars, and a deconstructed key lime pie. All were exceptional. My mom told the server (who was amazing the entire meal) that it was my birthday and the young woman who was running food had casually asked me what my name was. Next thing I know, the bartender, our server and the young woman were singing "happy birthday" to me, along with other patrons, with a candle in the cake. Wow! It couldn't have been a better birthday experience. Blackback has always had exceptional food and service, but the new chef Corey and pastry chef (I forgot to ask for a name) are proving they know what a gastropub should be: phenomenal food and drink in a pub atmosphere. What an unexpected gem. Our neighbor raved about Buttermilk Bakery's hot sauce, so we made the drive and popped in here for lunch. I'm glad I decided to check reviews because we almost went to the Irish place across the street. I'm sure that place is fine, but this was excellent. The interior is rustic in a way I can only describe as a very Northeast vibe. The menu is elevated, the food will satisfy you, but also differ from what you might find elsewhere. I ordered the falafel gyro and my husband the ahi bao as well as a few drinks. We were both very pleased with our meals and gobbled every bite.
