When we walked in, it smelled delicious. Someone came around from the back fairly quickly. The lady that helped us was friendly and even gave us a sample to try one of the chocolates while we tried to decide what to put in our 4-piece box. They give you the option of a ribbon on the box and to choose the color. It makes it look super adorable. What a beautiful shop in downtown Olympia. Two academics and pastry chef instructors from SPSCC making bon bons and bars using French couverture chocolate. Well organized, bright, airy, and gorgeous upscale space. The bon bons and bars (with one exception) here are made with chocolate by Switzerland's Felchlin, one of the best and most ethical makers of fine couverture chocolate, and are primarily of Venezuelan cacao origin and often organic. It's always a delight to find a chocolatier using Felchlin or Valrhona couverture. I will ALWAYS support those chocolatiers over those who use chocolate made by the other large, industrial makers with sketchy supply chain ethics. Felchlin is top-notch. Thank you, Bittersweet Chocolates, for making a superb ethical and flavor choice! The delicious bon bons all have perfectly thin and crunchy shells, including the cap/base. The shop owners have some real chops as chocolatiers, and the shop deserves your patronage if you are in the area (they also ship some items). timing always off when I'm down at the waterfront but here plenty early & not busy, front door bell tingled as I entered but no one stepped out from the back area while I spent a significant amount of time looking over the delicious looking assortment of chocolates & deciding how much to get & spend, finally gave up & left, rather bittersweet experience. Don't know what was going on near the Olympia waterfront, 1st of 2 places where service counter blew me off, did not walk in with an attitude or expectation of instant response or reception, and thought I looked presentable enough, but perhaps not good enough, have noticed in the past some of the better known businesses in the Olympia area carry an air about their reputation & clientele but did not know it still goes on, & especially post-covid I try promoting local business support including the waterfront & downtown but maybe they are selective or profile who they want to serve... read more

I had the most BEAUTIFUL, ARTISTIC and DELIGHTFUL chocolates the other day. Relatively inexpensive for good chocolate ($2.75/ea). I prefer dark chocolate and got a set of 4 if different flavors all of which have a gently hardened shell with a melt in your mouth center. In the pic you'll see what I call the "Blue Moon" which is your typical dark chocolate truffle. The triangle piece is an allspice and cayenne pepper mix (the allspice is like a soft and gentle glow of a warm fire and then the hint of cayenne tickles the back of my tongue at the end), the orange one is an alcohol-free Grand Marnier (subtle orange with the slightest hint of bitters) and finally the heart shaped item is a plum and port flavor (again subtle flavor profile but I pictured myself on a European beach snacking on fruit, cheese and wine). Beautiful little shop and beautiful looking chocolates. I have tried Thai Coffee, Lavender and I forget the other two. I did not like them. Too bitter to my taste and overall I didn't care for the filling in any of them. Whatever is there in those chocolates gave me tongue sores immediately after eating them. This place is cool. I dont know how long its been here, but I am glad we made a quick stop by the other day. I grabbed a small 4 pack, a hazelnut crunch thing, and a peppermint patty. Everything we have had so far is absolutely amazing. Plus its all so beautiful. I would highly recommend that hazelnut thing. It was so delicious. They greeted me and was eager to help us get the perfect gift for my friend. Every thing looked delicious and smelled yummy. All the chocolates also looked too good to eat, work of art! I bought The hazelnut latte with layers of dark coffee ganache and white chocolate hazelnut Parlene ganache. I also got the Maple bourbon pecan and caramel with layers of caramel toasted pecans and milk chocolate bourbon ganache. They were the best I've ever had! A great example of the quality shops in the downtown area! I wouldn't expect to find something this delicious in a town/state/country not really known for its chocolate. The space is stunning with the contemporary design and display cases. There is a selection of maybe 20 different flavors and sweets that they offer. I ended up with the lemon, margarita and salted caramel flavors which didn't disappoint. The prices were also wildly reasonable for the delicious candies. Very recommended!! read more

This brand new shop makes on-site gourmet chocolates that are works of art! The shop is in a soft opening but offers tons of potential. Their chocolates are rich and full of complex flavour. To the eye, each are mini works of art. Even more so to the palate. (See my photos) The owners, Debbie and Cindy are both professionally trained master chefs. Debbie used to teach culinary arts at South Puget Sound CC. They also serve a limited range of espresso drinks and have a small lounge area to enjoy a chocolate and a cuppa. I will echo what the first reviewer said: each piece of chocolate is a work of modern art. The chocolates are perfectly tempered and have a beautiful shine. The yelp pictures don't do them justice. It doesn't hurt that they taste good, too, with very creative flavors. You can customize a box in any rainbow of flavors and colors. They are my new gift idea. I'm afraid for their business. Rent in downtown Olympia is notoriously high, a total ripoff for the amount foot traffic they actually get. My only hope is that they get enough support to stay afloat or find an affordable location. This place is a great new addition to downtown Olympia. I read reviews on Yelp and made a trip to the store, and am so glad I did. I tried a few different chocolates and they were all so delicious. They are pieces of art, not just delicious chocolate. I loved all the different choices and variety. My favorite was the lemon curd. The chocolates are not cheap, they are 2.00 a piece but dang they are good! I plan on stopping by here when I need nice little gifts. They box them very nicely. The lady working was very nice. These are beautiful chocolates, however I just ate a coconut chocolate and bit into an almond. As someone with a severe nut allergy, this didn't say there was almond in it like some of the other chocolates state.
