I hope the owner doesn't mind that I placed him on the Yelp map. We bought his truffles at Issaquah Salmon Days. I don't think he has a real store front.
I had to give kudos for his amazing chocolates. I have had amazing chocolates before and these rank right up there along with the best of them. They aren't the prettiest chocolates in the world, but they may the tastiest. All of them full of flavor and luscious textures. We only bought four. I wish we had bought double that because I have no idea when I'll be seeing this guy again (if ever). I'll certainly be making a point of attending Salmon Days next year if only in the hopes that he will again be one of the vendors.
Brother Bliss as he is called does an equal assortment of dairy-based and vegan truffles. We bought a sea salt chocolate covered caramel, a vegan Chai truffle, a blackberry wine truffle, and a cabernet sauvignon truffle. The chocolates are larger than your average high-end chocolates and come pre-wrapped. A couple of them when opened up had chocolate bloom, which usually indicates an error in tempering. Do not let that deter you. The texture and flavor were amazing. The chocolate shells were thick, again making them seem home-made (well yes they are) but all the better to taste that chocolate. The truffle insides were perfect. Luscious and smooth. One center seemed almost fluffy but still dark. The vegan Chai chocolate had a smoother, denser texture. Definitely different from the non-vegan but I wouldn't have been able to tell it was vegan unless told (made with coconut oil). The caramel was the best of the bunch. Thick, chewy caramel with a perfect, thick chocolate coating. As good as the textures are, the flavors are even better. The Chai hit you over the head with spice. The blackberry wine was tart and the cabernet sauvignon was beautifully boozy. None of the chocolates were overly sweet.
