I've only been here for Banh Mi, but this place seems pretty authentic. So many choices from the get-go! Even just looking at the pre packaged stuff on the counter and shelves! My favorite is the grilled pork Banh Mi. Perfect flavor, sweet and fatty, and copious amounts of veggies! It's really filling and in my opinion perfect with their viet coffee. The last few times I came back to Bistro B, the service and food were better. Recently, my wife and I came for breakfast and we were very impressed with the food quality. We ordered com tam (10.99$) and Banh cuon (10.79$) dish and was very happy with the portion size and flavor. I could always count on this Bistro B to be good but now... it's alright. My go to order was always the combination stir fried flat noodles. My dad would pick some up when ever he was in the area but the last couple of times were not good since one was the wrong type of noodles where they gave us egg noodles. The flavors also started being inconsistent. This recent visit we ordered togo at the counter, two combination rice orders and one combination banh mi. The wait was a bit long and the seating area to wait was also a bit small, but they have tv's built into the counter so you can sit and watch while you wait. The rice was good since you can't go wrong with rice. The banh mi was... hard and lacking. There wasn't a lot of meat to be considered a combination and the bread itself was extremely hard, so much so that I had trouble biting into it. The salmon had no seasoning whatsoever and was on a bed of rotten lettuce. Yeah... no. I don't like giving bad reviews. But when you find a long strand of human hair in your pork summer roll which you asked for veggie in the 1st place... you have to know when to say no. When I noticed folks handling food without hairnets, that's when I knew something was up. Yes, it's cheap: their summer rolls are only 4 for $1.20 and banh mi is only $3 a sandwich if you buy 3 (via their Buy 2, get 1 free deal) but you can't mess up my order AND add an extra unwanted ingredient. Yes, the food comes out quick whether it's sit-down or take-out. But their food quality is just not up to par. Bistro B isn't known for delicious food or any specific plate, it's just cheap and quick. But your order might be inaccurate. Or even worse, unsanitary. There are accurate pictures of their dishes to help you choose. They have a large staff that makes sure you're always taken care of. The food is always fresh and I have never had a bad meal. However, the desert is very average. The Rolls is too hard for the rice wrap maybe had been laid there for long time(mean not fresh), the special Banh mi is so simple and sloppy filling. To be honest a decade ago, this place was pretty good. I'm not sure what happened, maybe it franchised or expanded too fast or the quality checks just got sloppy but it's not that good of a restraint anymore. 10 years ago this place was one of the few big Vietnamese restaurants that would be comparable to Houston Vietnamese food. But now it's just meh. There's like 700 dishes on the menu or something like that but only like 20-30 unique dishes. The menu counts each protein choice for an entree as a separate dish. Chicken fried rice and beef fried rice is counted as two dishes. Whereas most restaurants would count it as one dish and your pick the protein. I'm not a fan of the inconsistency of their food. Sometimes I'll come and it would be good, 4 stars and sometimes the same dish would be terrible. 1 star (I.e. sometimes the fried calamari would be crispy and sometimes it would be soggy like it's been sitting out under a heating lamp all day.) But. It is cheap. It is so cheap. If you're on a budget then this is the place to eat! The portions are generous and will fill you up. The egg rolls are still some of the best egg rolls you can get especially at a quarter a piece. 4 star pricing 2/3 star taste and quality. read more

I came here a little over a month ago and it was good but today I ordered the pho that I got last time, but it had completely different noodles and not the original pho noodles. I waited about 25 minutes for someone to bring me a menu just so I could make sure nothing has changed or to even make sure I for sure ordered the correct thing. Which I had and then a waiter came again and I showed him my untouched bowl and told him I didn't want that die to it not being the same since these noodles were thicker and sticky so a bad texture for me to eat and all he said was "yea we switched the noodles" and then walked off. He came back with our check and still made me pay for the noodles that they gave no notice for saying they changed the original pho noodles. I even went over to the door to look for a sign. I have to update my review. Last time was a 5 star review, not it's down to average 3 stars. You can always tell the authenticity of an establishment by the clientele. Used to see all sorts of asians, now...well, let's just say they have tacos, enchiladas and mangos dipped in tajin. The only thing missing is the name change to El Bistro B. We live in the Frisco area so this was always a treat to drive out there for the excellent generous portions, authentic viet dishes that your mother in law would eat without complaining she could cook it better because they have authentic viet mother in laws back there cooking. Now, the food is really salty, portions are smaller, prices higher and dishes that your viet mother in law would spit on. Tacos, seriously?! I mean, even the signs are in Spanish, is this the same Bistro B I gave glowing reviews and 5 stars 2 years ago? If I wanted Mexican food I would go to the hundreds of other places that serve authentic mexican food, afterall, we are only a border away from Mexico.
