They were packed to the brim with tasty meat and plenty of cheese! Super flavorful and satisfying. Solid portion for the price. The consomme was also quite good and came in a solid portion; not the most flavorful, but still quite good. 2 spicy sauces provided on the side, as well as option for lime and radishes. Definitely a good bang for your buck. Quesabirria Special ($17.40): The quesabirria were generously stuffed with meat and cheese. They are good on their own but even better when dipped in the red or green sauce. Unfortunately, the consomé was underwhelming. I actually preferred drinking it like a soup rather than using it as a dip, as it lacked a strong umami flavor. With every part of my being, I absolutely recommend this spot! Okay, I ordered once on uber eats before and it was good, so I obviously had to go visit this place in-person! I have to say, I been in Austin 2 years, and I been on the hunt for the perfect Mexican food here. No place has done it for me, until I found Birrieria Mama Rosa. As a Mexican I certify this place, authentic and the best I have had in Austin. Their prices are also great, but before I get ahead of myself let's actually talk about what I ordered. Not pictured: Quesabirria special. The consome, was amazing. I don't know who's working magic back there, but they know what they are doing in the kitchen! Quesabirria burrito: Can we talk about what they have going in here with their verde and Roja salsa paired.they loaded and filled this burrito and I was loving every bite. Quesabirria fries: These were a game changer for me. Look as a Mexican, I love nothing more than some bomb asada fries, but let's just say these have changed my taste buds because they got taken to a new level. The fries perfectly crisp, also loaded with birria, and that sriracha mayo is delicious. Also, to mention again, I do not know what salsa/sauces they are giving but they are soooo goood. Overall, this is my new spot for me and I hope this small truck lives on. If you're ever looking for it, it's kind of hidden, but don't let that stop you. I need more of you to be trying this place. I was trying to figure out what I wanted for dinner last night and saw Birria ramen and knew I had to go. My bf and I went around 9:00 pm and waited about 15 minutes for our order. I would like to get a cup of the birria with meat. The meat was so tender and had good pieces (no large pieces of fat or gristle). Nothing was too oily but everything was soft and very flavorful. Atmosphere: Food truck service. Can't miss it, it's pink. So atmosphere may vary depending on where they are parked for the day. Food: The birria here is spectacular and their choices of what kind are exactly what any taco and cheese lover wants. I've been hearing many a good review of Birrieria Mama Rosa, so I decided to stop in. I had the birria tacos at few places, and every place has their own way to cook. Everyone does have added at no charge, cilantro, onions, consume of some type, and sauces available. Some consumes are a little more greasy than others and some have more meat than others. The ones here were stuffed with more meat than at other places I've been too. The flavor of each place is different, but that makes each of the unique. I'll be sure to be back for another round. Today I stopped by this pink food truck in Pflugerville on my way home from work. It's parked at a gas station a little ways down the street from Windermere Elementary. I ordered 2 Quesabirria Specials for $13.99 each. Came out to $30 and some change. I sat in my car while my order was made. They brought it to me within ten minutes and I was on my way. The consommé is fantastic! The best I've had thus far. Better than my own I must sadly admit. I don't usually care for consommé with my birria tacos. But this consommé? Oh I drank the whole cup after finishing my food. There was a good amount of meat and cheese in these tacos. They were very well sized. I will say I wouldn't care for them without the consommé. The meat was tender but not super seasoned. My guess is they meant to do that by how seasoned the consommé was. The green salsa it came with packed a hell of a punch. GUYSSSSS--- this place is SO SO SO SO good. The employees/owner(?) are sooooo nice, they were so worried because we ordered but we ended up waiting more than they anticipated bc they had a bit of a gas shortage. They were SO apologetic and even wanted to comp our meals just because we had to wait like max 5 min more than what they told us originally. Ofc we said NO, we want to pay for the food!! And we were so glad we did because the food was STELLAR and they deserved proper compensation for it!!! We ordered 3 plates of birria special, pizza birria, a birria burito (not pictured), and a birria ramen (also not pictured). The pizza was so f*n deliciousssss and the birria specials were so good and filling. Delicious food, AMAZINGGG service! Although this place is about 2 miles from my house, but I haven't been to it because they deliver it directly to my door which is amazing and fast. I get to enjoy these amazing tacos on the comfort of my own couch. The service is always quick and easy although the hours posted on the website don't exactly match reality. These are the best Birria tacos I've ever had. I get the queso Birria and the flavors of the meat and the consommé are so unique and complex and satisfying that my eyes roll back in my head when I eat these things. I would appreciate it if the cheese was a little bit more burnt, but the flavor makes up for that. They're not overly greasy like a lot of other birria. The radish is a nice touch on the side.
