Such a unique and totally delicious option for lunch. We find ourselves craving it often, and it's sure to become a staple for us. We wish it was open longer! This is my "go to" food truck/cart in Eugene. It measures up to the best in Portland, where I indulged for 30 years. You can customize your order. There are almost as many possible combinations as there are Oregon football uniforms. I mainly gravitate to the #2 savory, with youtiao, spice level 2-3, with pork belly. It's now about $16, but it's filling enough to contemplate an after-lunch nap during which you may dream of returning. Finally made it here and I wasn't disappointed. I didn't know where to start so I told them and they walked me through my order. Super helpful. I went with the nanjing jianbing, which they said was their most popular. It starts with a crepe-type outside and egg cooked on that. Then they add lettuce, seaweed, cilantro, green onions, and potato strings. I went with wontons over the fried bread/donut and the savory sauce at a level two spice (since I wanted a little spice). I added pork belly and pickled mustard greens. It was a very good combo. The pork belly was a great addition but I really wanted more pickled mustard greens. Maybe I'll get double next time. I love that it has so many textures and flavors all wrapped in one package. Now I want to go again and try different combinations. They said the latiao is a a vegan protein option that is similar to seitan, which sounds like something I'd like to try. This is one of six trucks parked at 8th and Olive. Five were open for lunch on a Wednesday. Lots of good options and nice picnic tables with umbrellas in the middle. My husband and I really enjoyed the friendly service and jianbing we received at Bing King. We tried the sweeter sauce with wonton and added pork floss as well as the savory sauce with youtiao and added pork belly. While both were very tasty, I would recommend the first if you're looking for a lighter feeling lunch. We also got the sichuan fries, which were an oversized shareable portion and were quite tasty if you're into the numbing spices. I would probably save this for when you have a group to share with, unless you're very hungry. We went with level 3 spice on these. For me this was the perfect amount of flavor and heat, but if you're not typically into spicy foods then I'd definitely go lower than 3. Was in the neighborhood getting Ethiopian next door and decided to pick up an original Jianbing. Didn't really know what it was to be honest. The guy in front of me suggested it. I got it with crispy wontons, pickled greens, and pork belly added. Basically it's a wrap with veggies and crunchy wontons inside. There's is an egg cooked around the wrap. First of all, great service. These guys were closing up and they still made sure to take care of me through my decision making and they made great suggestions. I will 100% be back for more. The Kris Oy wontons and the sweet pork belly really just hit that special spot. There is some heat involved. I ordered a 3 on the scale of 1-5 and it was pretty spicy. I'm a fan of spice though so that's a positive for me! This is definitely light but filling. Not a gut bomb like a "burrito" Customer service 5 stars. Food 5 stars. A little bummer they close at 3. Bing King is located in a small parking lot with several other food trucks. Major props to them for staying open during this difficult COVID period. I arrived on a weekday as soon as they opened at 11am and they were still getting set up. I was the second person to order and the food took about 20 minutes to be ready. The Food I've wanted to try jianbing (basically a Chinese street food breakfast crepe) for SO long. Bing King definitely set the bar high with their tasty creation. I ordered the Original ($8) with savory bean paste, all the mix-ins, youtiao (Chinese fried dough), and added pork floss (+$1) with a spice level of 3/5. Everything went together very well. The crepe was thin and crisp, but still retained a nice chew. The greens provided freshness that prevented the jianbing from feeling too oily from the youtiao. Perfect heat level. I have no idea what they used to add spice, but whatever it was, it was fire. I would highly suggest trying this very underrated street food beauty if you ever get the chance. Many years ago we tried Bing King at the Food Truck Festival at the fair grounds and LOVED them. But since then they were hard to find for a couple years, and then not open when we did. So I was ecstatic to see them at the Asian Celebration this year (2022), even with a limited menu for the occasion. We ordered the Juanbing one with chicken, one with pork, and the Sichuan potato fries. Everything was delicious - not how we remembered it from 5-6 years ago (different menu item though). The potato fries were kinda mushy, not crispy but so flavorful that I didn't mind. I definitely preferred the crispy chicken but the pork was really flavorful. It is something unique, I am not exactly sure if it's fusion Asian or Asian food from northern China as I have been to Southeast China before. I am never disappointed when I eat here. First visit was at their small grey trailer outfitted into a kitchen with a white-frame house-like window for order. To the right was a black glossy map of China with a few select areas highlighted. Dotted lines lead to items on the menu: Szechuan chicken fries and a few types of jianbing. For those that don't know what a jianbing is - to put it very crudely - is like a Chinese burrito/wrap/crepe. Now, to my massive mistake, I had no idea what it was and passed it up on the first run; opting for the chicken fries instead. The fries were quite good after a bit of a wait. Tender, crispy chicken fries covered in a variety of spices including the famous Szechuan pepper - which produces a fascinating numbing sensation instead of intense heat. It was plentiful, it was spicy, it was numbing, it was tasty. But boy, did I miss out on their main attraction, but luckily I remedied that situation. The second visit was at their bright red shipping container converted into a mobile food monolith. I ordered the Tianjin Jianbing: "Tianjin style jianbing with extra layers of crispy fried wonton. Your choice of sweet or savory sauce, house sweet bean paste, one egg cilantro and green onions." What came was a wonderful, plentiful, crispy, slightly sweet, slightly savory, spicy, bright, refreshing wrap. Oh and I specifically got the fried wonton, sweet sauce, and added chicken. Every bright was simply delicious. Oh and the service is friendly. I saw this place had a unique item that I have never tried but have seen many videos online of bing. My wife and I wanted to give it a try. We both shared a savory mung crepe bing with a crispy wonton and asked for medium heat. The staff was great explaining what a bing was and options. The price was to me a bit high for what you get. $7+ for not so big portion. They cut it in half and my wife and I each took a half. The medium spice was a bit difficult for me, but the wife had no problems. I have been wanting to try this cart for quite some time. My guy beat me to it. He had been raving about this cart that I need to try, he described it as a Chinese burrito, that was so bomb he was eating it a few days in a row. His office also orders in for the whole office once in a while. He took me here for lunch a few weeks ago, I can see what the hype is all about. Real Chinese street food. From what I hear the owner spent some time in China, so he really knows his stuff about the Chinese street food culture. I am not sure which one my guy ordered for me, I can tell you it was delicious. They are made up with an outside of what seems an egg crepe. The insides were pork belly I think. So crispy, and delicious. The bean sauce reminded me of what you get when you order Mu Shu pork or something. The egg crepe also reminded me of my families home cooking. They used to make something similar to put on top of the food. "Indonesian" that is. Not saying that is what this is. Just reminded me of it. Now we also decided to order some of the chicken fries. Wow! Just wow! A whole flavor explosion in your mouth. Salty, sweet, spicy. Epic! The chicken fries come with a aïoli sauce that they specially make for the fries. I highly recommend stopping by this cart if you have not already done so. Sorry I didn't take any pictures of my food this time. I was too hungry, and just started eating.
