Billy Sims BBQ is disappointing in several different ways. It is counter service versus a seated meal. The rest of the ambience reflects that fact. Smallish, close, no masks. The behind the counter staff though are very cordial and accommodating. It's fast, though that's not necessarily a redeeming quality. The food was bland. The brisket was dry and had neither a fat cap nor a smoke ring, which means it was oven roasted, not smoked. That is reflected in the flavor -- bland and completely undistinguished. It was reasonably tender but it demands sauce. Good brisket never has to be sauced. The portions are fairly large, but I tired of mine fairly quickly and dumped half of it. The green beans were decent for canned green beans. At least they cooked them in bacon to give them some umph. The loaded potato salad was acceptable, if a little heavy on the sour cream. Billy Sims does not have beer. What a travesty. A BBQ joint without beer. I'd recommend you look elsewhere. If I'd read the reviews more closely, I would have. read more

The meat eaters in our family and extended family loved the pork and beef barbecue! Tender and well flavored and they thought it was really good! It was a big hit. We also ordered mac and cheese, green beans, bbq baked beans, and corn. The vegetarians were not able to eat anything other than the corn and mac and cheese since everything else had meat mixed in as a seasoning. Chicken was great. They actually had white meat chicken breast. I picked green beans as my side. The bad thing is, you go to a BBQ restaurant and expect BBQ sauce. They forgot to give it to me. I called the restaurant to tell the mgr, Connor, and he did NOT offer to do anything till I suggested an incentive to come back and try it again, with sauce this time. So he eventually offered me 2 free sides. I shouldn't have had to ask. He blamed it on the fact that they were a little busy which I had one person in front of me, a couple behind me and another man waiting. Is that busy? Ok, I'm going to be that guy that averages out the 5-star ratings... You have to know that I'm particular about my brisket, and to some degree ribs too. But the brisket I enjoy, the kind that has lots of flavor and doesn't wind up as shoe leather, is the "moist" brisket (also called the "point" brisket, or sometimes fatty brisket -- although it's really more just marbled -- and that's where I started to get into trouble, I think). My wife and I found the place while cruising up I-35 returning from a road trip. Ratings were good enough. We walked in, and wanted a combo plate to share. I asked the guy behind the counter if they had the fatty brisket, marbled brisket, the other half besides the lean brisket (and I explain it with my hands as well as my words). He seemed to not understand. We went round and 'round about this for about two minutes, or eternity, judging by the look on his face. I wasn't understanding him too well either, and it wasn't the accent. He said there was more fat on one end of the brisket, but when he sliced a piece off and showed me, it wasn't what I was looking for. It was the lean part. I don't know where the rest of the brisket had gone, and I guess I wasn't able to pose that question in a way that got me the answer... So I just said to give me the fattiest brisket he had. Sure enough, it was very dry, with no marbling to make it less dry. The taste was good, just not the texture. In case you want to understand it, I'll explain quickly: A brisket is actually two muscles on the cow, and from the butcher they are layered one on top of the other. One is lean and one is marbled. The marbled cut comes to a point, and so is called the point brisket. They are separated and cooked separately, usually. The point brisket is not often offered sliced as an entree, except in Texas, in my experience. I think it usually becomes chopped brisket sandwiches, or (as I found out later that day at Joe's KC BBQ), "burnt ends". Note that "burnt ends" aren't really burnt, at least not at Joe's KC; in fact the waitress laughed at me when I asked that question! So back at Billy Sims, the ribs were actually pretty good, the sausage was mediocre, and the brisket unsatisfying. The waitress there did her best to make it right for us, but it just could have been better. My recommendation is to get the ribs. They were quite good. Or if you like really lean, dry brisket (some do), get that. read more

To be honest, the only meat I've ever tried is the ribs, which is the primary reason I come to Billy Sims. I like to order the Half Back combo, which comes with six ribs and two sides, and a kid's rib dinner, which comes with two ribs, and the option of a fruit cup or chips, and a drink. Both meals come with toast, but they will offer onions, pickles, and pepperoncini peppers with the adult meal. I will split the ribs with my child, so he will have more, and give him one of my sides, too. On this occasion, I ordered the baked potato salad and green beans, but they gave me baked beans; neither one of us likes baked beans, so my child had to do without his side, since he hates baked potato salad. The total cost of the two meals combined was $20.69, including tax. Normally, the staff is friendly, but not on this visit. I guess it must have been a long day. read more
