Bibibop is usually a family favorite for is, but recently they have made a few unfortunate changes to the menu and selection. The food tasted completely different than usual and they have gotten rid of their small bowl option. The chicken got was dry, the egg I got was hard as a rock. The salmon was delicious tho!! My mom and I have been waiting for this place to open, and they did not disappoint. Everything is fresh and you can definitely come here and eat healthy. The people that work there were very nice and knowledgeable of the menu. The only thing that I expected was a more expensive menu, the menu was very basic and didn't really offer a ton of options, and not that I needed a ton of options but when a new place opens I like to come and get different things every time I come but here it just didn't allow for that. Can I get an amen for more diversity in Lee's Summit?! Anyways, back to the review. This place is SO SO SO CLEAN! Maybe because it's brand spanking new, but we were blown away at how clean this place was. The line quickly formed behind us but they were super efficient and the line moved pretty quickly. It's the Korean version of Chipotle. Choose a base (japchae or rice - cauliflower, white or purple) and choose your toppings, choose your protein and then choose your sauce. Some toppings are extra (kimchi, mushrooms, etc) but you have so many free options, you could probably skip over the paid options. Their sauces included yum yum sauce, gochujang, sesame oil, ginger, etc - feel free to mix and match as well! They also offer free miso soup at the end of the line. I was pleased with my dish - I had the "Bibi Fan Favorite". It came with cubes of chicken, potatoes, purple rice, sweet potato noodles, broccoli (which looks like it was grilled), corn, cheese, and yum yum sauce. It was very good! It was plenty of food for me. And I feel like it's a meal I'll feel good about eating. I recently discovered the Bibibop chain near the Oak Park Mall in Overland Park. I was so impressed that the next day, I drove to this Lee's Summit location closer to my home. I believe it has only been open about 5 months. The customer service was sub par. The first employee didn't understand that a side can include 1-3 items as listed on the App/website. After much confusion, I said I would just order it online. So there was a language or training issue. When I would say I would like plenty of one veggie (because I only ordered a veggie bowl), she said you can only have 2 scoops. So, do I ask for 2 scoops for most things instead of saying plenty? Idk, but my bowl wasn't full & I was still hungry, unlike my experience at another location. The next employee checked to see if the seeded cookie counted as a side. Then she rang up a whole package instead of one. She realized it and then fixed it, but what was visibly priced as $1.50 rang up as $1.75. I didn't care because it was free, but it was concerning. I got my food to go and was ready to get out of there. It wasn't a pleasant customer service experience, and I was still hungry, but the food was consistent/quality thus a 4 star rating. Maybe with further training or more hands on management this location will improve. For those who left reviews not as impressed, try another location and/or give them time to improve. The restaurant has enough room for 20-30 people to sit and enjoy their meal but I see a lot of folks order and leave so it's almost an express because they move quickly when orders pile in.
