The full name of the establishment is "Beast Craft BBQ" and it lives up to the name. Based on a work colleague's recommendation, I ventured from downtown St Louis to Belleville, IL, to the Beast for some great BBQ and beer. As soon as you park your vehicle, you realize that you are in a place that BBQs - a smoker in the rear of the restaurant and as you walk in to order your meal, the sweet smoke of BBQ lingers. Lots of choices to select and again, based on my colleague's recommendation, I ordered the pork steak + burnt end tips plate (brussel sprouts and mac&cheese with bacon) accompanied by a great local IPA. Never had the pork steak, and it's a treat. So tasty and tender that you simply use fork (knife not needed) and the rib tips were so tender and tasty...sprouts singed creating a flavorful texture and the mac&cheese - oh so good made better with bacon! Much in the same manner that the BBQ menu is extensive with many items not available elsewhere (such as snoot which I will try the next time I visit), the selection of beer is extensive too to pair with the BBQ. The food is always amazing here. Their pulled pork is the pulled pork against which I judge everyone else's pulled pork because theirs is perfect. Their brussel sprouts are exceptional. Their mac and cheese - mouthwateringly good. I have never had anything bad from here. Now, I normally don't eat much bread - today, however, I decided to get a sandwich (I usually get a plate) and thought about having them hold the bun. I am so glad I didn't have them hold the bun...that bun was probably the best bun I have ever had on any sandwich - ever. Although I had my order delivered, I am going to say that the service was really good, as my food arrived hot and quickly, as well. Heard rave reviews about this place. Was busy when I stopped by but fortunately I was doing to go. Got the well fed beast for 1. Sides of fries and candied bacon. Sides were both tasty, esp the candied bacon. The pulled pork is alright but goes well with the sauce. Rib tips have sauce on them and have good flavor and texture - although I kind of wish the well fed beast came with regular ribs instead. Brisket is only fair - giant pieces of fat that I don't seem to get at places back in TX. A tad bit ovecooked but still fine. The kielbasa is nice! Comes with tortilla (first time I've seen that). The turkey was good, the candied bacon and fries were also very good. The brisket was smoked days before or it may have been frozen at some point....miserable failure. Beast Round 2: Brisket, candied bacon & pork belly sprouts. Basically, I changed 1 component from the last visit, the meat. I meant to try all new things, I really did... then I saw bacon and I was done for. I ordered my brisket lean and instantly regretted it- I expected to end up with jerky on my plate. I was pleasantly surprised by the fabulously tender lean beef. Moving on to the candied bacon. It's candied bacon. That's an automatic 5 stars. Crisp and still chewy - phenomenal. Brussel sprouts- fried crisp outside, tender inside and mixed with crisped pork belly... I repeat, crisped pork belly- adding a saltiness as well as ramping up the texture. Went to Beast for a quick Friday dinner. Things have really changed since COVID. We were seated at the bar/counter. We came in a little later in the evening and to no surprise they were out of a few items. No big deal we expected that. One of the servers said they were out of kielbasa and other said there was some left. We then ordered our food and was told that the kielbasa was gone just as the table next to us was told differently several minutes later. Overall the lack of service was sad. While we waited for our food we heard other servers sharing about other specials not on the menu that wasn't even offered to us. Food came out and it was not great at the least to say. My normal favorite Mac n cheese was awful. No flavor at all. The Turkey was super salty. Only thing on my plate that was worth anything was the fries and bbq sauce. We also ordered the pork plate and the pork was flavorless and dry. Overall the lack of service, friendliness and flavor was sad! We use to love coming to Beast on a regular basis and won't be rushing back yet even ever again. read more

This place is amazing. They serve Compart Duroc pork and Snake River Farms Wagyu brisket. Both are excellent quality. I had the beer cheese steak sandwich. The bread, beef and cheese were awesome. It had a bit too many cilantro flakes on top, but they were easily removed. From the family, I also sampled the Duroc back ribs, which were terrific. The fries come with a good dipping sauce too. Lastly, the soda machine has all Excel Bottling products. It's a local business and their stuff is good. I took my family here. They were a tad confused by the menu. (The use of the pig breed Duroc was confusing.) Plus, I think they were a tad skeptical. Once the food came, the skepticism was gone. They loved everything! Even the Brussel sprouts and belly! Disclaimer: this was the food truck version of the same restaurant at an Air Force base sponsored event. Food was extremely lackluster. With no pictures or examples of what I was getting, my son and I were going in blind, but we decided to give it a shot hearing good things about the sit down place associated with the truck. 15$ sandwich plate included a small hamburger bun, a tiny amount of meat (barely enough to cover the bun), 3 pickle slices, 2oz coleslaw (predominately lettuce instead of cabbage), and a bag of chips... 2 types of BBQ sauce were also available. The best things about this meal... 1. The BBQ sauce (original and Texas chainsaw). 2. The bag of chips 3. Did not make us sick The worst things about this meal 1. The immediate regret/feel of being taken advantage of when opening the takeout box 2. The meat we did get was sooo dry (it really needed the sauce) 3. They didn't give me, and I forgot my 2$ water 4. Asked if the 2oz "coleslaw" could be changed to 2oz potato salad (which was also offered as a side) and was told they can't do that. Maybe the sit-down place is good and worth the money. In my opinion, the truck is very much not worth it. Everything was seemingly cooked far in advance and apparently portioned out so specifically (and small)... This is the best BBQ I have had in Illinois. The brisket is to die for. I was able to do a video with the Chef, I got a chance to see the smokers, kitchen and everything BBQ related. The Chef and Pit Master, is a sweet heart. You will not have any complaints about this food, I learned where he buys the meats and woods used to smoke them. Everything is USA products no foreign meats. He learned with the likes of Pappy and Sugarfire..This pit master can hold his own against St. Louis best BBQ. There is ample parking, they have their own lot. I will tell you if you wait to late they may run out of meat, not because they don't cook enough. But like me I driven from Spanish Lake, MO to their restaurant for huge to go orders. I can't say enough about the brisket so good. The restaurant is clean from the front lot to the back dumpster, very sanitary Pit Master. That's crazy! Why would they sell out? Just make more. Am I right? Well, once you have experienced their barbecue you understand why it is made in such small quantities. Simply put, they believe in quality over quantity. This philosophy comes through loud and clear in their food. When you eat here, you are not going to find 12 different barbecue sauces, hoping to cover up whatever gnarly meat a restaurant claims is brisket or ribs or pulled pork. You will find three types of sauce. Each one is phenomenal. They have a sweet. They have a Spicy. And they have a standard. You can't go wrong with any of them. Sauce is great but if the meat is it any good it doesn't much matter. I can tell you that this is hands-down the best brisket, ribs, and pulled pork, I have ever had. We're new to the area and this is our first time here, after being recommended by like 4 friends. We ordered for a family of 6. Ordered a Beast to try a little bit of everything. And some pork steaks. And pretty much one of every side. The pork steak is my favorite. It's amazing. Literally ate it with just a fork! Tried all four sauces too. Favorite side: bacon Mac. Of course the sprouts and belly side was also pretty awesome. Beans were just ok. My wife's fav is the pork steak as well. My brother's loves the kielbasa. Fries were great too. All up, the food was incredible. On top of how amazing the food was, we ordered in person at the restaurant and really enjoyed the service and staff. Pretty solid BBQ. The spare ribs had plenty of smoky delicious flavor, tender but with a little fight left in them. The pulled pork sandwich was quite zingy and flavorful, especially after adding the spicy Texas Chainsaw sauce at the table. As for the sides, the slaw was nice and vinegary (as I prefer, not the creamy style) and the Brussels sprouts were maybe a little dry, but they were OK. It was about $100 for a family of 6 out the door, not cheap but not bad. I am not thrilled with their "stand in line to order, then you can find a table" policy, but at least they are clear about it. Also, be prepared for them to run out of things if you arrive late in the day which is about par for many BBQ joints. Overall, very good and worth a return visit for sure.
