    BBQ Sauce Lineup
    Heath S.

[[HIGHLIGHT]]Place was empty on a Thursday evening.[[ENDHIGHLIGHT]] They were out of burnt ends so I tried the ribs and brisket with a couple sides and it includes a drink. I added in the Sugar fire pie because I've never heard of it. Sugarfire Pie is actually old-fashioned Chess Pie made with butter, sugar, cream, eggs and yellow cornmeal. Yumm. [[HIGHLIGHT]]There's smoke room at the picnic tables inside and out so bring as large of a party as you desire![[ENDHIGHLIGHT]] After filling up my sweet tea I got a pickle and put a little of each bbq sauce in the trays they have available. I tried every sauce with the brisket and again every sauce with the ribs. The standout sauces were the coffee barbecue, Carolina mustard, and Texas hot in that order. The other sauces were good but not unique for me. Crazy corn was a little too saucy but had good flavors Crispy Brussel spirits were amazing and actually crispy The brisket was fantastic The ribs were pretty good. Pretty good barbecue for sure, would have liked to have gotten more brisket but it was my favorite. The sauces were standout and the pie was on Wi-Fi the best pies I've ever had. WOW it's sweet but amazing flavor and textures.

Great baked beans and tasty ribs. Nice smoke ring and tender. Only recommend that they would come out of the warmer to me with a little steam off. Not really warm feeling room temp. But tasted great

The service was great and friendly but the food wasn't great, unfortunately. My partner and I both got brisket that had no flavor and was over-tenderized in a bad way. I don't even know how to explain how bad the brisket was though. It was just mush. The scalloped potatoes had been sitting for a while I guess by the time we got there (6:30pm on a Friday) because they fell apart trying to eat them with a fork and we ended up making mashed potatoes out of them in the end and ate them with spoons. The fries were basic. The mac and cheese was also nothing special. I really dislike giving low reviews at places, but $50 for the meal we got just wasn't it. The people were nice and that is where I'm giving the stars more than anything.

    Combo Plate (with two sides)

I was in Illinois for work visiting from DC, and heard the barbecue was good. This place came highly recommended. I walked in and you're sent to a wall where the menu is. Following the menu decision you go to where the food is to order. It's similar to chipotle except the menu and food are separate. Silly idea to me as I almost forgot what the meal came with. I ended up ordering the 2 meat combo.Ribs and Briskett were the choice of meat along with the devil egged potatoe salad and the collard greens were good. As I watched them slice the meat off from the bigger portion and place it on my tray, i began to feel disappointed. An enormous size tray with toddler sized portions is how I looked at it. I was disappointed. The devil egg potatoe salad was iffy. The skin from the potatoes are still in the salad which was odd with devil eggs mixed it. Odd combo but it wasn't bad. Takes some getting used to. The ribs were "OKAY" but nowhere near mind blowing. The brisket was decent but I've had better. Overall i was a little disappointed as I expected so much more but the food isn't bad, just nothing great. One and done for me.

I haven't been to Sugarfire since they first opened! I was craving bbq and my husband and I headed to sugarfire. I loved the ample parking in this location. The set up is nice you can view the menu and then walk around to the counter to order and they slice the brisket right in front of you! They had so many sides, it was so hard to choose! We ended up getting the pulled pork sandwich, brisket sandwich, cheesy potatoes, fries, a key lime pie slice and some 4 hands beers. Everything was SO good! We are looking forward to trying more things they offer in the future.

This was a difficult review somewhere between a 3.5 and 4. I will go with the 4 as the service put it there. Dropped in out of town, was staying at the TownePlace suites. The service was super fast and friendly. Ordered the big muddy sandwich with the hash brown casserole. The sandwich was a brisket, jalapeño sausage sandwich with lettuce and tomato. Tasty sandwich overall, minor critique is that brisket was not quite a juicy as it could have been. It was not dry and sliced correctly though. The sausage was not very spicy and could have used a little kick. I really enjoyed the hashbrown casserole. Good flavors and great texture. Good place to drop in for a quick lunch.

Burger was good, but a little over cooked. Au gratin potatoes were under seasoned; as in no salt or nothing. Customer service was cordial. They took the order with a smile. The place itself was clean. Seemed to have a friendly vibe.

Simply the best BBQ I've ever had. I ithnk nearly all BBQ places brag about their brisket, most do it poorly. Over cooked or over smoked, dried out so they try and hide it with lots of sauce and chopping it up so you can eat it. Not here, the brisket needed no sauce, not chopping, no dipping into au ju to make it edible. They show you the meat like a nice carving station, I suppose it gets you to order more than you intended when you can see how good it all looks. Ordering is sort of like a cafeteria, you get in line, grab a tray, wait your turn while reading giant menu boards, Its decorated a lot like many BBQ joints, casual and country themes. The meats are behind a glass panel and you order what you want and watch them carve it. All the typical sides. My wife got the brisket, I had the burger which was really good too. On the drinks station they have old fashioned flavors from gooney years. They have good looking deserts and floats but its really all about the meat. And these guys know how to do it right. We were glad to learn they are a chain with multiple locations and one only an hour from where we live. Anxious to go try some other things from their menu.

Do you love good BBQ? This is the place for you! I love the Turkey! It's so tender and flavorful! The BBQ sauces here are fantastic too! You get your food on a sheet tray, which my hubby doesn't like, but I think it's fun! French fries are also very good! Hubby loved the brisket! You can't go wrong with Sugarfire!

    Pork belly Hushpuppies

When near St Louis, we get to craving good barbecue. I wouldn't say we necessarily found it. Trying something new is always a risk. The Yelposphere had much lower ratings than other sites. Why, oh why, didn't I trust you? The good: pork belly hushpuppies - yum, crispy outside, tender inside, fresh & hot. A win. Salmon - delish, a dish we waited on. Pulled pork was decent but not great. We also liked the shake. The bad: sides - Every. Single. Side. Side dishes were not to temp, all followed the same basic flavor profile (there's life beyong red pepper and cheese) - they were overcooked & ended up mushy. They were extremely large tho, so if you are feeling up to buffet quality & quantity, maybe it will work for you. Basically, if it wasn't something that they had to make fresh, it wasn't edible. Also, parties who got ready made food were done eating by the time the made-to-order food came up. I do not recommend and, as for myself, I'll stick with Beast or trek over to Salt + Smoke

    Mac n cheese and beans

I visited the O'Fallon location. It was around 2 pm. It's a walk up order then find you a seat. The staff was friendly and very helpful. [[HIGHLIGHT]]The dining area was very clean.[[ENDHIGHLIGHT]] [[HIGHLIGHT]]Drink Fountain machine was clean with no debris.[[ENDHIGHLIGHT]] I ordered the 2 meat combo that comes with 2 sides. I picked the pulled pork and ribs with baked beans, Mac n cheese. For a drink it was a black cherry soda. The beans were very good. I did have a few hard beans but the flavor profile was on time ! The Mac n cheese was Mac n cheese. The pulled pork had good smoke and was very tender. They gave me just enough bark which I like. The portion size was probably weighed. If I were to put this on a bun it may have been just enough. The baby back ribs. Definitely a star. Good smoke and juicy. Tender. The meat released nicely from the bone. An excellent bite. 4 bones came with the order. Sugarfire has sauce on the side. I tasted 3. Which was a molasses? Brown sugar? type. All had separate profiles and were very tasty. Complimented the pork exceptionally well. Price point was about $20. I bought a bottle of sauce for $8.

Even though they were still getting ready, someone immediately greeted me and offered me a menu so I could decide what I wanted while I waited. I thought that was a very thoughtful gesture and appreciated the excellent customer service. Once they opened, I received my food very quickly. At first I was excited because I needed to get back to work and had a fairly long drive ahead of me. I had skipped breakfast that morning, so I was very hungry. Before leaving, I took a bite of the snoot and immediately noticed that it wasn't even warm. It was covered in sauce, which initially disguised the fact that it was cold. As I drove, I started eating the Brussels sprouts since they were easy to eat with one hand. Unfortunately, they were also completely cold, not even slightly warm. As I reached the bottom of the Brussels sprouts container, I felt something hard and extra chewy in my mouth. I pulled it out and It turned out to be a piece of plastic. I have no idea how it ended up in my food, but I took a picture of it and have included it with this review. When I went back to the snoot, I realized that most of the pieces were still covered in very hard whiskers. My understanding is that those whiskers are supposed to be removed during preparation. At that point, I couldn't help but feel like I had been served food that had been sitting from the previous day. Because my order was to go, it felt like there was very little attention paid to whether the food was fresh, hot, or even properly prepared. The entire experience was disappointing on several levels. I really couldn't afford to eat out that day, but I wanted to try a restaurant that was highly recommended while I was working in the area. I expected that food served right after opening would be fresh, hot, and delicious. Instead, it was cold, poorly prepared, and contained a foreign object. The piece of plastic was the most concerning part of the experience. Thankfully, I always chew my food carefully. Had I swallowed it or choked while eating during my drive back to work, it could have resulted in a very serious accident. Based on my experience, I would recommend eating your meal inside the restaurant if you decide to give this place a try. If there's an issue with the temperature or quality of your food, you'll have the opportunity to bring it to the staff's attention immediately. Unfortunately, taking my meal to go meant I didn't discover the problems until I was already on the road, and by then there was nothing that could be done.

I have eaten both in restaurant numerous times, as well as DoorDashed numerous times, and I have yet to be disappointed in my food! The restaurant is always clean, and has a very welcoming atmosphere. In no way is it a southern barbecue establishment, but it kind of gives the feel of one with the charm, if that makes sense? I love that they don't put the sauce on the meat, because a lot of barbecue places over sauce (I know most people would consider that a blessing, or still say there's not enough sauce when their meat is literally in a soup of barbecue, but I like to tailor my sauce to meat ratio and appreciate they give me that option). They have multiple barbecue sauces to choose from, and I've tried them all and love them all, but.... And this might be a hot take and an unpopular opinion in Collinsville, but hands-down my favorite thing is their baked beans, lol! Oh my goodness, they're baked beans on their garlic bread.... It compares to nothing I have ever tasted!!' Don't get me wrong, I really do love the meat, sauce selection, and many of the other sides (my second favorite being the fried okra), but oh my goodness the baked beans, it's like the nectar of gods!!!
