As a girl from Alaska, I'm always hesitant to order cod fish and chips. The fish was a little tough in my opinion, but the chips were fantastic and easily the best part of the meal. I also ordered a side of coleslaw, which was good but could have used a bit more seasoning. My two dining partners ordered the shrimp basket and the oyster basket. The shrimp basket looked terrific, and it's definitely what I would order on a future visit. Both of them raved about their meals. I will say the portions are very generous Overall, this feels like a bit of a hidden gem. It may not be fancy, but the service was excellent and there are some solid menu items worth coming back for. The shrimp were straight up gross. They were mostly mushy in texture, and had HUGE poop lines that just squished into the shrimp. Gross. I threw half of them away. My son even admonished they've gone downhill and that's saying a lot seeing he used to love them. For $160, it was beyond disappointing. We will not be back.

My brother and his now spouse had spent their first date at Noble Wave, eating this dessert, and it was a phenomenal time at our wedding rehearsal dinner to have them re-tell the story of their first date, and then share with all the rehearsal dinner guests such a delicious and excellently presented dinner, fresh tasting and presented 8 hours after pickup. The Pickle Gambit - super thinly lengthwise sliced pickles in a light batter. Comes with chipotle aioli and ranch. Good portion size. One of the best fried pickles I've ever had. Ned's 5-Alarm Chicken - really good crust and very flavorful. One regret is we didn't go waffles with this. Lemon Poppyseed Slaw - tastes like a classic slaw. A little sweet and creamy. Goes really well with the heavier dishes that we got. The Shrimp Incident - small shrimp and sliced sausage with a Cajun cream sauce and crostini. We thought this was ok Country Mac - my favorite part was the fried chicken as it was very tender and flavorful. The shell shaped pasta was cooked al dente - it was firmer than I would like partly due to the pasta being on the thick side. The Mac is Cajun forward and not very cheesy. Staff was very friendly. The sauce/gravy to rice ratio was WAY off, essentially it was about a 2 inch tall pack of rice, and a drizzle of gravy. The gravy's seasoning was disappointingly spicy just to be spicy instead of having an even blend of flavor and space. Had the flavor punch been balanced with the spice level it would have at least tasted better, and felt better generally speaking. Lastly the crawfish were cut up into even tinier pieces, which made for a lack of protein in this dish. While the decoration outside the cart is fun and enticing, the food, and the personal experience were lacking. There was very little excitement in the truck, and seemingly a lack of passion/engagement that we've experienced at other food trucks that change the overall experience for us. We had fun trying out a food that has deep roots in our family, and may come back to see if we can get a redemption review in the future.
