The cook was extremely thoughtful, and gave it to us with oven warming instructions, and not yet with icing or sprinkles -- and gave those to us in large containers to apply right before serving, for best results. You walk in and seat yourself. It's a small place that's very lofty but trying to add a little pizzazz of NOLA. We were greeted fairly quickly. The server got our drinks and our order and all came out fairly quickly. After that tho there was ZERO service. No refills. No did you need anything else. No check (we had to hunt someone down for that) and certainly no to go boxes. Let me also add that it wasn't so busy that all the tables were full either. This really is a shame because the food is incredibly good. Very large portions. We split the chicken and waffles and our friends split the ladder. Would I come back? Unlikely. Being from down the bayou I had to take a chance at having authentic gumbo that I didn't have to make, there is only one place in Portland that used to make a good one but stopped. I want to preface this review by saying I have never been to New Orleans, but if this food is a marker for how good it can be there, then I'd love to add it to my list of places I need to visit ASAP. The vibe and menu of Nobel wave is a slice of Louisiana transplanted in Salem. We got the Catfish poboy with a side of gumbo and the hot chicken sandwich. The poboy, of which they only offer in house, was exactly what I was looking for. They ship the bread directly from a bakery in New Orleans and I can tell it truly makes a difference in the end product. The bread was so light and fluffy, the catfish battered to perfection with a solid crunch and packed with flavor. The side of gumbo was a pleasant surprise and a hearty, rich dish that gave me comfort on a surprisingly chilly summer day. The hot chicken sandwich was reminiscent of buffalo sauce but I'm assuming a swap for crystal hot sauce instead of Franks. The only negative we have for the experience was that the fries that came with the hot chicken sandwich were clearly hours old and had a regrettable texture and lacked flavor. The atmosphere was inviting and definitely a place I could see myself getting lunch regularly. Havent been back here in a few years and at least for our groups experience it was a disappointment. The catfish fillet on the poboy was 4/5 breading with some areas the actual meat was nonexistence. The breakfast poutine and the fries that came with the poboy looks like they were the leftover pieces from the bottom of a fry bag. The gater and drinks were really good. This is an amazing place, it's been recommended many times by my sister-in-law and her boyfriend and we were finally in the area. If you like Louisiana cooking, this is a must stop. Who would have known there was a small piece of swamp in downtown Salem. We stopped in for Sunday Brunch and the biscuits were giant, fluffy pillows of tastiness. I don't think you will find a better chicken sandwich, it was super moist, flavorful with just the right amount of heat and crunch. Our son and daughter-in-law have visited several times and invited us to join them while we were in town. They told us that Noble Wave featured southern comfort food. My in laws had joined them on a previous visit and enjoyed the food as well so we were anxious to try. We arrived about 5:45pm on a Friday evening in December. Our daughter-in-law called to inquire earlier in the day if reservations were necessary. She was told they took reservations only for parties of 5 or more and a group our size should be okay. Parking in downtown Salem can be a bit tricky, especially during peak times. We ended up parking in the free, public overpark located approximately two-three blocks from Noble Wave. The multi level parking garage offered plenty of available spots and kept us from circling several city blocks searching for street parking. We walked in and were impressed with the overall feel and cleanliness of the space. A sign stated customers could seat themselves, so we chose a four person table near the front of the restaurant. When we arrived, approximately one-third to one-half of the dining room seating was available. They also had a small bar, but we do not recall the number of seats. Our server came by shortly afterwards and provided us menus and took our drink orders. She was relatively friendly, but at the same time we noticed she wasn't extremely helpful when asked questions about the menu. We opted to order the Bin-Yay Fried Chicken Sliders and Fried Cheese Curds as appetizers. We were busy talking and catching up and took a bit longer to decide on our entree selections. Ultimately, our table of four chose the Louisiana Poutine, the Hot Bird Sandwich, Shrimp & Grits with a side of the kale salad, and the Louisiana Chicken & Sausage Gumbo. The cheese curds arrived first and looked absolutely delicious. We were all very impressed with just how yummy they were, probably the best cheese curds we've ever had! The chicken sliders arrived a short time later. We opted to order the coleslaw on the side which worked well since not everyone at the table is a coleslaw fan. They were also yummy and completely shareable. We noticed between our server and one other server, they would occasionally stop in and refill drinks. In general, we felt relatively taken care of, but also neither server went above and beyond the absolute basics or made us feel extremely welcome. It did take our orders longer than usual to arrive, and our son and daughter-in-law told us that had also been their experience in the past. They feel the food is really good but the length of time it takes for items to arrive from the kitchen can be a bit long. Our entrees began to arrive one by one and while they all looked yummy, it is a bit frustrating that a table of four cannot be served meals at the same time. We really enjoyed our food, it was very good. The service could have been better, and the overall length of time it took for items to come from the kitchen should be improved. My wife used the restroom during our visit and said it was spotless and well equipped, which is always a good sign. We would absolutely return in the future, and recommend to others. It would be nice if they could improve their kitchen wait times, but perhaps they were short staffed that night, we are unsure. Overall, a great addition to downtown Salem. Southern cooking in the PNW! Yup. Noble Wave is a pleasant surprise that I discovered on a bookstore visit to Salem. It's nestled in downtown with a cozy and fun vibe. Lots of booths and spots for date night or fun with friends. The staff were friendly and service was fast. I lived many years in Wisconsin so fried cheese curds dipped in ranch is a staple appetizer in my book. I was delighted to try theirs. Homemade ranch was top notch and so were the other sauces they make. They pulled off the breaded cheese quite nicely. The star of the show was being able to order a po'boy sandwich as a vegetarian. They use cauliflower and it was such a well prepared specimen. They even have the authentic bun. Of course I had the beignets for dessert. Once you've been to Cafe Du Monde in NOLA it's hard to compare, but Noble Wave put their hat in the ring. I was disappointed that they weren't the square bigger sized ones I'm used to. They were small and more like donut holes. It satisfied the craving though. A delicious mess waiting to happen. If you're in the mood for Southern cooking I definitely recommend stopping by. It's hard to go here and try something new. But the classic fried chicken sandwich is amazing. It's fried perfectly, every single time. The size, the slaw and the fries are perfect. One of the best fried chicken sandwiches ever. And the batter has a little kick too, so it has a little heat. Not crazy about the hot chicken sandwich cuz it's just too much hot sauce, but the classic is unbelievable. My wife always gets the Caesar with grilled chicken and it's so good. Love the eclectic atmosphere and style -- fit right into the downtown vibe with an artsy, funky flair. There was a Cajun theme underlying it all, but it still felt very Oregonian. Service was very friendly and prompt. The menu was ambitious in its soulfulness but did not deliver on its promise. The shrimp and grits were bland and served as a relatively small portion. My husband ordered a variation on chicken and waffles that was topped by an egg and some kind of bacon. The decadent tower of hearty layers was under seasoned and dry. We recently ate at their anniversary crawfish boil and had a wonderful time - definitely worth the wait for the great food, drinks, and ambiance! This place has a lot of heart, and it's evident the staff really care about the restaurant, the food, and the service. This time around we ordered gumbo and 5 pounds of crawfish plus sides (crawfish is not a regular menu item, so sorry for the tease if that's what you're looking for!) and it was delectable. The spice was ON and I certainly appreciated that! We ate at the bar, and our bartenders were fantastic at making sure our drinks were made asap. We love that Noble Wave gets us our fix of Cajun food when we're craving it. Although many dishes are made with chicken and/or beef (andouille and gator are options here, too!), this is a great restaurant to bring folks who are vegetarians and pescatarians. So the place seems slow for a weekday maybe its the time we came in but theres one waitress and one cook. The waitress was very kind and timely with taking care of us. Lets start with the drinks OMG so good, here I was saying i wished they were bigger BUT they hit! And i mean Hit good. Taste amazing too! The food was delicious but not to die for. To start, we drove down to make a to-go order because we figured it would be busy on a Sunday. The restaurant is beautiful. Since it was self-seating, we sat at the bar to keep real tables clear. We immediately received waters, but then for 15 minutes - no one spoke to us, even the bartender. But every time a server came by, the bartender would complain about the special request drinks she was receiving. Finally, the bartender asked a server with short brown hair to take our order. As soon as we asked for chicken and waffles to go, the servers demeanor changed and her tone was inherently negative when she told us we'd have to wait 30-40 minutes. We waited a minute and asked if they were just really busy and the server said "sundays are just like this" -- half the restaurant was empty, but even if they were very busy, it felt like she just didn't want to give us any of her time because we were ordering to go. We apologized if we seemed rude by asking that question at all, but before we could even get out the apology, she interrupted us to say "our kitchen is really tiny so" - ignoring anything we were trying to say. I've heard great things about this place and hope that I'll get to try it again one day, but that server single handedly sent us away with her attitude. Topped that with the southern poutine that had one of the most flavorful gumbos on top with amazing cheese curds... then the drinks! For $24, this was average. Asked her if she would order it again and she said, "no, for $24 there are far better burgers and fries out there." I ordered the gumbo $19. The rue was burned and bitter. Glad to have found this place. We ordered oysters, a catfish poboy, kale salad, beignets, and special cocktails. Everything was great! I had to come back and order 2 more orders of beignets to go. Trust me, they are addicting. My only suggestion would be to work on the interior decorating and have a theme. We saw a few Mardi Gras beads and feather boas, however, a mural, painting, string lights, just a little something to give a more Mardi Gras feel would be awesome. The food was pretty good, definitely more of a lunch spot than a brunch spot. The drinks were extremely good! I had a gimlet for the first time and it changed my life it was so good. We ordered the chicken sandwich and gumbo. The portions were HUGE. We tried gumbo for the first time and weren't fans. It was a little too spicy to eat a lot of and very heavily seasoned. It was good for the most part but would not be able to eat a full meal of it because of how overpowering it was. Well, let's just start this review by saying: don't eat here unless you're hungry. My wife and I split two meals. We ordered the gumbo (chicken, shrimp, and sausage), and a Hot Bird sandwich. They served the gumbo in two cups, at our request, and cut the sandwich in half for us. The gumbo was deliciously spicy. We ate every bite and loved it. The sandwich was huge (see my picture) and very tasty. I barely finished my half, and my wife was not able to finish hers. Food was delicious. The staff were attentive and friendly. Prices were decent. We'll come back again, but next time we won't eat breakfast that morning so we have room in our stomachs for our entire meal. If I could change anything, I'd make it so you pay and tip after your meal instead of paying and tipping beforehand. I really don't like to tip before I eat. read more

Staff was lacking and not particularly friendly, aside from the tall man in the LSU hat (I think the owner ?). I ordered spicy fried pickles to start , shrimp and grits and the beignet chicken sliders with fries. We asked for no slaw on the sliders and when they were getting brought out, guess what was on them? Slaw. They took them back and brought the fries back out and the fries were already lukewarm. The fried pickles were AWFUL, if by spicy you mean salt, then yes, they're spicy. The saltiness of the food here is astonishing . The chicken sliders batter was also too heavily salted. My kid only ate them cuz she felt bad that I paid for them. The shrimp and grits were pretty good. And at no point for staff come by to refill our water to flush down their salty food. As someone with deep roots in New Orleans (and a phone number to match) I was thrilled to learn Salem had a taste of home! We ordered takeout and were nothing less than amazed by the authenticity, value, and presentation of the food was!
