    This is a local food truck and it's worth hunting down. They have wonderfully creative 'grilled…read morecheese' sandwiches and they don't skimp on the fixings! We recently tried them at the Iris Festival and I was so glad we did. My son had tried their food at the Old Oak Festival and had told us how much he liked his sandwich. I've seen them around town but usually it's when I'm not hungry. This time I was hungry! I tried The Principal, a Philly cheese steak sandwich with onions, green peppers and provolone. To say these are grilled cheese sandwiches is misleading. They are technically grilled cheese, but if you're expecting the thin, slightly greasy, white bread and American cheese sandwiches we all make at home, think again. This sandwich was on a beautiful grilled sourdough bread with melted provolone and stuffed with steak, onions and green peppers. And it was huge. It was a great sandwich and very tasty, although I would say that even with the loads of grilled onions it was still a bit dry. A little mayo or sandwich spread and it would have been perfect. My hubs tried the Fire Drill, a buffalo chicken flavored deli sliced chicken with jalapenos and pepper jack cheese. He liked it (and I thought it was pretty good) but he said the buffalo flavor was only on the edges and didn't carry through to the middle of the sandwich. He also got an order of the tater tots with cheese sauce. I tried some of these and they were hot, crispy and fresh. The cheese was the nice, melt-y cheese sauce you see on nachos but it didn't have the weird, plastic-y taste that some cheese sauces have. Our son got The Substitute, a pepperoni, marinara, Parmesan and mozzarella sandwich. I didn't try it but he wolfed it down and said it was delicious. I wish I had tried the tomato soup because I've read good things about it, but I guess it's an excuse to go and track them down one day soon.
