I wish that I could say that I was the one at our household who discovered Dropout Bakery, but I cannot. Instead it was my wife who, searching for someplace other than a supermarket to purchase a King Cake for our Mardi Gras celebration, found this fine bakery. Now, as I have never actually been to its location in downtown Mobile, it should be understood that this review is based solely on my experience with consuming their product. My wife learned that this bakery has an online ordering system, and that the product ordered through their website should be picked up the following morning. She further learned that, because of high demand, their in store product usually sales out within minutes of their opening each day. So as a first try she ordered a 6 inch King Cake, a small spinach quiche, and two petit-fours. The next morning she drove downtown and found, as she had learned it would be from online reviews, a long line to the bakery of customers waiting for the business to open. After going the long queue and finally upon reaching the interior, she found her online order waiting for her, separated from the other produce which was being quickly bought up by the customers in shop. This small business simply does not yet have the manpower or equipment to produce enough product to last beyond one day. Which is a good thing for customers who insist on same day freshness. The quiche and petit-fours did not survive long enough for me a get a photograph of each, but I did manage to get a photo of the King Cake, which I have included in this review. Finally, we found each item to be superbly delicious and very much worth the effort. We will be back again soon in order to sample more of their product, especially their larger King Cake when Mardi Gras season rolls around again next year.

This bakery is truly a diamond in a rough and a hidden gem. I did not even know it existed until two days ago, but it absolutely did not disappoint. I ordered the triple chocolate cake from my wife's birthday. She is beautiful, loving and very picky so the cake had to be special. And it was. The cake was moist, rich and perfectly balanced. The chocolate was not too sweet and every bite felt like the stars and the planets had a line. It was simply perfect. After placing my order, I read some of the reviews and decided to call the bakery. Lucky for me. I spoke with one of the owners who assured me that everything would be exquisite. She made me feel valued and appreciate it and I'm sure they go out of their way to make every customer feel the same way. They have earned a customer for every cake occasion going forward, I definitely recommend them.

This is not the Pollmans you may remember from the bygone days with delicious fresh cakes, pastries and other baked goods with friendly, helpful staff. The quality now is horrible and customer service is even worse, a tone set by the new owners with a "take it or leave it" attitude. Imagine a custom order cake that wasn't ready on time, is defective in appearance, tastes like stale, dry cornbread with greasy icing being handed to you by grimacing counter staff who look as if they want to be somewhere else far away. This was my last experience buying a custom cakes there. Other experiences were just as dismal, but not going back now after finding out about the roaches. I was yearning for the Pollmans from my past and tolerating subpar goods and treatment. No more! At this point, it wouldn't feel like a Mobile trip without it. This visit was just as good as the previous ones. My wife and I shared one of their warm cinnamon rolls, and it continues to be one of the best things they make. It's served warm with a rich cream cheese icing that melts into every bite. Soft, flavorful, and indulgent without being overly sweet, it's become our tradition to split one before the drive home. We also picked up a few Red Velvet Whoopie Pies, which remain another favorite. The cake is incredibly moist, the cream filling is rich without being heavy, and it's hard to believe they're gluten free. Another item we always look forward to is their Oatmeal Cream Whoopie Pie. Unfortunately, they were sold out during this visit, but based on previous trips, it's one of our favorites and well worth trying if it's available. One of the things that impresses me most about Guncles is that the food doesn't feel like it's trying to compensate for being gluten free.
