    As I started to cut my first slice of Babette's olive oil, Maldon salt & herbs de provence encrusted boule, I was reminded of 1976 when I was a boy, waiting in line at the new Space Mountain ride. The head-exploding excitement was so thick I could cut it with... well, the bread knife I had in my hand yesterday. As I slice into the perfectly thick crust, the herbaceous toppings (including subtle pops of salt) stick to your fingers enriched with the wonderful fragrance of luscious olive oil. The anticipation and excitement pays off instantly as you continue to slice through, revealing the soft inner dough textured with a myriad of various-sized air pockets. I'm transported back to my childhood again where neighborhood German, Jewish, Italian & French bakeries were everywhere bringing their centuries-old baking techniques & traditions to New York. After slathering on a thin layer of soft butter, my first bite illuminates the true magic of this artisan bread. The soft inner body has perfect elasticity-- it is somehow light & airy, yet has a depth & gravity to the dough. Each bite is a textural masterclass for lesser bakers. The foundational sour dough mix of white, wheat, rye, spelt and other grains is nothing short of amazing. This is not just truly great bread for Colorado, this is a work of art that belongs in the world bakery hall of fame (if there was one ;-) And honestly, all their bread is like this, from the long baguettes to their square Pullman loaves. It is clear to me and their throngs of fervent customers that this baking is executed with the skill, passion & dedication of the GOAT.

    We were staying in Longmont, CO on our way to RMNP, but of course before we head out we need try one of local bakeries, there were a few good ones that popped up but Babettes Bakery caught our eye, highly rated and close by, so you know we had to go try it out. The line was short but we still had time to survey the assortment of treats. These are the treats we decided on: 1. Regular Croissant / spot on delicious - bigger than most other establishments. 2. Chocolate chip salted cookie / A+ moist and a little gooey just the way I like it 3. Croque Monsieur - (ham and cheese filled croissant) - this was the first thing we devoured before even trying anything else - so you know it was good 4. Almond filled morning bun - ok so this was a little dry - but the filling was great - I usually like to heat my morning bun up just a tad - but forgot to ask this time 5. Raspberry Tart - a little too sweet for us but it could appeal to a real sweet tooth person. Overall everything was good, but the first three items stood out for us. The latte and coffee were good as well. If you are in the Longmont, CO area and are looking for a nice morning treat and beverage this place will not let you down.

    You get what you get when they have it ready. And everything is very delicious! The bakery has a small store front situated next door to a coffee hang out. There is some street parking, not a lot but this is not a very busy neighborhood so I have never had trouble getting a parking spot.

    My friend has been suggesting we meet at Babette's for a while now. But it's too far for lunch on a workday. We were in Longmont today and we made it happen. We got two pizza slices, acorn squash with fennel and a sausage pizza. I regretted asking for a middle slice instead of a corner slice. The bread is so so so so SO GOOD! The airy huge croissant was perfectly laminated. And the hazelnut ho-ho was not too sweet and superbly chocolate-y. Mmm. Once we got back home, I remembered that my friend had espoused their mortadella sandwiches as the best she's ever had. I don't think I have a choice. I need to go back. And, when I'm there pick up some pizza dough, too!

    Amazing pastries and excellent French bread. Indoor space is limited but if you can find a seat definitely stay for the quiche.

I was impressed with the work that was presented online and wanted to patronize her business. The communication between us was fairly good with the exception of a blip when there was a family emergency. Kellie was pretty nice throughout the entire process but I did feel a little like I was bothering her with questions. I figured since I paid her $115 for a 8 inch round cake, that it was okay to make sure it was being made the way I envisioned. At some point, I went to the baking section at Michael's and looked at an 8 inch pan and thought it was super tiny. I inquired about how much it would be to make it 12 inches. I've read that she charges by the slice but I was hoping that she could cut me a deal but it didn't happen. She just said that it added 'x' amount of slices and will be an additional $55. No worries, it's a business and I completely understand. My total tab on this cake was $170. We threw a few ideas around but I gave her complete freedom to do as she wished. I'm usually hands on with everything but thought it would be nice to just let an expert do their jig. When my babies big day came, the cake was nice. It was detailed and a lot of work was definitely put into it. It was just not my personal cup of tea. Nonetheless, it was a good center piece. I ordered a bubblegum cake and I wish I didn't. When I first discusses flavors I asked about bubblegum and Kellie said that kids like it. I wanted something different so I thought it was a good choice. I only cut 20% of the cake and not one person ate a complete slice. I threw a majority of the thing away the next day. I was a little disappointed. One kid asked me what flavor it was & I said, "bubblegum." In which he replied, "Oh yeah, it tastes like bubblegum...with puke in it." I'm not blaming Kellie for my flavor choice but I would have appreciated some honesty. I suggest sticking to a normal flavor. Besides the taste, the cake wasn't very moist. I believe she started to bake on Thursday for my Saturday night party since she emailed me on a Wednesday stating that she was going to get started the next day. I know the giant (Jack the Giant Slayer theme) on top of the cake was made later because the color was more vibrant and the texture was a lot better than the main cake. This is a "cottage food" business and I really wanted to love it with all my heart. I just feel that it was a little pricey for the overall experience I had. Given the type of home based business it is, I wish she could have worked out a deal with me for a bigger sized cake. I guess I just have a chip on my shoulder because I could have ordered an amazing half sheet of scrumptious Haupia or Hawaiian Paradise cake from the notorious Kings Hawaiian bakery for under $50 if I were still in California. Tasty Cakes Cakery is a great local choice if you have the money to drop on a custom cake. Kellie does great work. If I were to do it differently, I would choose a better flavor, draw out exactly how I wanted the cake to look & ask if she could bake the cake the day before. I would have loved to meet her in person but we did everything through email, postal service to send payment, and text. She also asked if it were possible to change my drop off time because her husband was playing a game someplace and wanted to watch it, which was okay with me. I was just in school at that time, so my husband was there to receive the cake without me. Anyway, sorry for the novel. I just wanted to share my experience with my yelp community. Check her out and decide for yourself :) Solid 2.5 Stars rounded up to 3 for an A-OK experience.

    Amazing cakes made by one woman! She is self taught and you would have thought she went to years…read moreand years of school. She made my graduation cake for massage school, my son's birthday cake this year, and I have eaten her delicious cupcakes. EVERYTHING was fantastic. She puts a lot of time and detail in to her pieces of art. I can tell she really enjoys what she does. Her prices are reasonable, especially for what you get. I will never order a cake from anyone else again.

The shop is gorgeous, and the buyers are fantastic, stocking it with so many beautiful items that you will not easily find in other shops or online. The staff is friendly and informative. The prices are very high, and I don't recommend buying items you can find in your local grocery store or gift shop, but if you find interesting, unique, and beautiful items that you love, then it is worth spending the money, in my opinion. This is a great place to find exceptional gifts, especially for someone who likes to entertain. Must take home a fresh French baguette and some caramels! There is a parking lot in the rear of the building.

But the market feel, the variety, the customer service, patio, cute atmosphere, selection, and warm baguettes made it quite the experience. We were impressed and I would drive all the way from Littleton to experience it again. We basically built ourselves a little picnic and sat outside on the patio to enjoy it all. Bring your own plates, utensils if you plan on doing what we did. We made do with the plastic knives and napkins from the bakery, but it would have been better if we came more prepared. Lovely.
