What is going on with these steaks?…read more As the 1 star reviews indicate there are significant challenges with the steaks. First attempt Jan 3 2026. I ordered NY strip (Wagyu) and specified medium. What came out was a steak that was half rare and other half barely medium. Like the steak was half on the stove and other half just hanging around. The rare part was so rare it was still attached to the cow. 2nd attempt March 17th 2026. Learning from previous experience I ordered same steak, Wagyu NY strip, as a medium well. I was thinking some 'Kentucky windage' on the steak cooking might get me a better result. Nope. Now the steak was well done and the ends were just...carbon. It was over salted as well. These are $100+ dollar steaks. I eat at Delmonico, The Cut, Prime, restaurants in Vegas 2-4 times a year. The steaks at these premium establishments are $20-$30 less and never disappointing. If Cowboy Prime could come close to this level of performance, I'd be down there 2-3 times per month. The good Caesar salad is off the charts good. Crab cakes good Rock shrimp good All American burger good Whipped potatoes are fantastic. Drinks are good. Dessert menu is slim but very good offerings This place has alot of potential. If they can get over the hump on the steaks this would be amazing. I would also try to enforce a dress code. The worst I saw was a guy in a tattered, ripped, and dirty hoodie with a green beanie, and quite frankly looked "unhoused".

This part of Texas has no business having sushi that good either. Used to always get the wagyu ribeye, then th Akaushi, then I tried the lamb chops and got stuck on those. They've got a desert that I can never remember the name of that looks kind of like a cheesecake. It's phenomenal. Wait staff is always terrific. Easy to spend over $1,000 here, but also not hard to leave for less than $100/person and have everyone waddling out with a loose button. Fantastic restaurant.

Visiting my girlfriend in Lubbock for an extended weekend brought us down to Midland for another…read morestamp and more barbecue. Half Acre is off 349, just slightly north of the Midland epicenter. The parking lot is huge, and as we pulled in just around noon, we were shocked at how packed it was. Obviously, good barbecue is worth going to, especially on a Friday, and Half Acre is no exception. The entire space at Half Acre is pretty expansive, with a regular-sized dining room where all the ordering and preparation takes place, plus a large outdoor seating area and another overflow room, which is needed for a lunch rush like today. The first thing that took me aback was the prices at Half Acre. So far on this stamp book journey, Half Acre is the cheapest joint I have been to by a significant degree. I feel like the median cost of a three-meat plate in my experience is about $33. Try $25 with a side. $1.50 for a regular drink as well. It is unreal. I did a double take. I felt like I was stealing from a local business. My theory is that since Half Acre is owned by Midland Meat Company, the vertical integration makes it significantly cheaper than other pitmasters and joints importing meats on a daily basis. I do not know if it is true, but whatever can help make barbecue affordable in big 2026 is a plus. They run two lines during the lunch rush, and after waiting about five minutes in line, it took about 10 minutes to get our food out. For the price, I was shocked to get four pork ribs, all meaty and flavorful. The brisket slabs were large as well, with two big cuts of meat. The brisket seasoning was savory and sweet. The standard sausage was juicy and had a good little kick to it. I was impressed by the green chile mac, and the fried okra my girlfriend got was perfectly seasoned. I do not think this is all-star barbecue by any means, but you cannot scoff at that price tag. Any brisket for that price is a blessing, and I am glad to see them get so much foot traffic on the Friday we went. As we walked out, there was a line out the door and not an open table in sight.
