By a stroke of serendipity, I found myself on State Street in Orem when I caught the word carnitas emblazoned on the side of an otherwise unremarkable little eatery. I made it a point to check it out after watching a ballet performance at the SCERA theater. As you can already surmise, I was not disappointed. Walking inside I was met by a friendly taquero and tables filled with native Spanish speakers. All signs said thus was going to be good. I chose a combo plate with two massive, stuffed carnitas tacos and a carne asada street-sized taco. Although it was quite tasty, the asada was just an afterthought for me. After pouring on some spicy salsa roja and a guacamole sauce with a topping of onions and cilantro I tucked into the best or at least top-3 carnitas tacos I've ever had. This is from someone who searches out this porcine delicacy wherever I travel. (See my other review of a surprising contender in the Lava Hot Springs KOA-Taqueria Pelayo-I'm not kidding.) The rest of the best are in California. You can get your carnitas "mixtos" or "solo carne." If you're not into skin, fat and offal, stick with the straight carne, The taquero knows that the best carnitas is given a crispy finish and coarsely chopped.
