Service is extremely fast. As soon as you walk in, you can place your order, the soup is brought out quickly, and once you're done, you pay at the exit. Very efficient. Just remember that you will be sharing tables with strangers as this is part of the culture! Land is gold in HK! The soup itself was quite tasty, though a bit salty for my preference. Even though I feel like their heydey was years ago, they have still managed to stay steady as a local favorite. It's as cramped as any eatery in HK, with a few stools along the wall and tiny tables for the occasional group slurp session. The staff is usually pretty on it and they're under the assumption that most folks walking in there know exactly what to order. As a result, all the menus are in Chinese, it's cash only, and the dishes run from $30-55 HKD at this point. Cart noodles (車仔麵) are a unique staple in these parts. It is a literal mixed bag of noodles (flat, thick, skinny, etc.), toppings (seafood, meats, organs, etc.) and broth. There are as many as 20 ingredients to choose from, but most get around 3 selections (三餸車仔麵) and I usually opt for beef brisket, a helping of radish, and some of their extra salty fried fish skins. I think everyone should just get a large mixed bowl of thick noodles (大雜粗麵) and shoot for pork neck and tripe. Locals love it, trust me. Don't be intimidated by the lines. People eat and go, so the waits are usually in the 5-15 min range. If you don't speak Cantonese, be prepared to show pics on your phone and expect to pay around $45-50 per person. There are other Wing Kee locations throughout the island, but this one on Sugar street will forever be their most popular one.

But, like the mustard greens that came along with this meal, I wish both of these were actually temperature hot when they served it to us. No big tables for 5+ but quite a few small'ish round tables that are good for solo eats or the invaluable food companion. The aroma coming from the semi-open kitchen should be enough inspiration for folks to know what they want upon arrival, but just in case they have the menus outlined along the wall. An easy way to start? Try a wonton and beef brisket with your choice of noodles. The wontons are somewhat pillowy in texture and full of flavor while the beef brisket is braised well while maintaining a perfectly chewy bite. The noodle variety is good, with egg / rice noodles winning over the crowd though I feel the e-fu noodles take the cake. Lastly, do not sleep on the beef tendon. It's practically butter when done right. Chui Hing does fancy itself as a HK style cafe, so other dishes like congee, fried fish skin, fried rice, may appear on the menu, focus on what to stack in your bowl instead.
