That told me enough to at least visit TAP and check things out. Definitely the vibe I was hoping for, with a variety of draft beers available for a multitude of palates. I love how there's a food menu here too so you can snack while drinking! We tried a few beers, but the ones that stood out were the Honey Longan Lager and a sour Lingonberry Soursop Ale! The flavor combinations were great, and also unique finds you couldn't get at other shops! We ordered some food to eat as well - the garlic fries were VERY garlic-y, and we also got the lap cheung spread on bread. Think of pate but made with lap cheung! Super unique find as well. If you're into craft beers, then absolutely stop in The Ale Project if you're in the area!

I learned only of this place thanks to Yelp and was fortunate enough to attend an event or two at their location in Central. It all starts with education. They've got the documentation, training, and high quality inventory to help make any homebrewer's dream a reality. They've brought in actual brewery masters before to help train folks on their palate (which I could always use work on) and get them started with their home brew kits. The staff is knowledgeable and above all, passionate. They are also homebrewers as well, with some of them happily leading on sessions on their methods of homebrewing. From novices to seasoned home brewmasters, they've got the right tools in place to help people achieve the results they're looking for in duplicating certain craft beer profiles. And they've somehow managed to make it all work, even with a small interior and tough to notice location. A great team goes a long way and I can't wait to see what they have in store next. When I bit into it I was surprised by how so tender and juicy they were! The fried catfish was also silky smooth, the pieces fell apart when picking it up with the fork, delish ! The meat is smoked well and is tender and the sauces are pretty good, although the spicy kind is probably my favorite. I really like the brisket which is really flavorful and the smoke rings on it show it's been cooked low and slow. The beer selection is pretty decent-especially compared to some of the other places that say they 'serve craft beer.' What impresses me most is they pay attention to how its served and the staff definitely knows their stuff when it comes to beer, a few of the staff having their cicerone certificate, it's like being a sommelier but for beer. If I have visitors I usually take them here after all the tourist- stuff.

Other great Hong Kong beers we tried were the Hunk Sir Milffee Porter (made with coffee and lactose) from Heroes Beer, and Meringue-utang strawberry/vanilla milkshake Double IPA by Carbon Brews. Visiting here and learn about the history and seeing the actually steel barrels that hold the beers I drink are pretty surreal. I wouldn't imagine that a little room in Ap Lei Chau was sufficient to brew all the beers to The Globe / Craft Beer & Co. HK Brewcraft, Roundhouse Taproom, The Ale Project, etc. EVERYDAY, plus all the individual restaurants and customers. Crazy. For $150, you could have a quick tour of the place, plus 5 different beers at tasting size. The Classic pale ale is the all time best sellers (and available all year long). The Fussy peach pumpkin ale is a response to the infamous Budweiser Super Bowel Ad that tried to (unsuccessfully) make fun of the craft beer community (https://www.youtube.com/watch?v=siHU_9ec94c) (along the lines of "we make beers not to be fussed about; let them drink their peach pumpkin ale". I liked that little story behind, and if I ever see a peach pumpkin ale again at a bar, I'm totally ordering it and tell this badass story. Inside a small tasting room, I first tried a beer cocktail made with his rye beer mixed with rye whiskey orange and grapefruit peel-- what a hit! I really like his IPA, which isn't overly hopped, and has a rounded sweetness that appeals to the masses. My favourite however was the rye... maybe because the first beer I ever brewed was a Roggenbier. Growlers are on offer, he also has a bar in Mong Kok which I really need to get to. Fun afternoon, with a beautiful view of the water right outside his window.
