The sauce is too thickened and more like gravy than sauce; it is one-dimensional with a simple taste profile that is just too sweet. Then there was too much sauce over the thin noodles, which ultimately caused the noodles to clump up. Char Siu Bao (叉燒包) - 3/5. Average Char Siu Bao. This is the baked version. I like the outer layer of the dough, which I believe has a nice coating of egg wash that gives the bao a slightly sweeter, crusty texture. However, the overall dough isn't as fluffy as I would like.
